Vegetable Kurma


       This is excellent combination for chapathi,puri,Parotta...I made this for chapathi  with adding less water n i thicker consistency.Really it taste gud and more flavorful. This kurma goes well with South Indian Style Parotta. make it very thinner, really it taste like hotel parotta kurma. I made it little spicy, please adjust green chilli n other spices to your taste...the mentioned below will yield you a spicy kurma. I used 1/2 medium broccoli,1/4 potato,3/4 cup chopped carrot n beans,1/4 cup peas...you can use any available vegetable.


Ingredients
  1. mixed vegetable   2 cups
  2. onion    1 medium (chopped)
  3. Tomato   1 (diced)
  4. Green chilli   3-4 no.
  5. ginger garlic paste    2 tsp
To temper
  1. Oil    2-3 tsp
  2. mustard seeds    1/2 tsp
  3. Fennel seeds     1/2 tsp
  4. Bay leaf    1 no.
  5. Cardamom   2no.
  6. Curry leaves    few
To gind
  1. Coconut   1/2 cup(shredded)
  2. Clove   3no,
  3. Cinnamon     1" stick
  4. turmeric powder    a pinch
  5. Curry masala powder     1 and 1/2 tsp
  6. Chilli powder    1 tsp
  7. Coriander powder   2 tsp
  8. Dalia   1tbsp(optional)
Method

  • Heat oil in wok/kadai,add all the tempering ingredients under"to temper" one by one and fry well.
  • Then add onion,curry leaves,green chillies and ginger garlic paste...fry till ginger garlic paste leaves raw smell.
  • And add tomatoes and saute till it get soft.
  • then add the ground masala  and stir fry for 2-3 minutes.
  • Now add the vegetables and mix well,fry for a minute.
  • After that add 1 and 1/2 cup water(or to ur desired consistency) ,enough salt,some chopped coriander leaves and mix well and allow to boil till vegetable get cooked.(cook covered)
  • When the vegetables are get cooked,simmer for another 2 minutes and turn off the stove.
  • Lastly add some chopped coriander leaves ...now the vegetable kurma is ready to serve.
you can have this kurma for idly/dosa also..but make it little thinner .try this..very tasty and flavorful curry.
