Quinoa Adai / Quinoa Brown Rice Adai is the first Quinoa recipe in my blog. I wanted to try this healthy grain recipes for long time. After moving to Aurora, The Whole Foods Market is only few miles from my house where i can get all Organic Produce from fresh fruits, veggies, all grains, flours, millets and everything organic for an affordable price. I bought Organic Quinoa, Millets, Oats and few other stuffs there and have been using it in my daily cooking.

Quinoa Adai, South Indian Adai is one of the healthiest protein rich meal which is best for breakfast or dinner.

Barley Adai / Barley Lentils Crepes / Barley Paruppu Dosa

This is another Healthy Breakfast / Dinner recipe with more nutritional value, rich in protein, fiber, low calorie and filling recipe perfect to kick start anyone's day. Its good for diet and diabetic people too. This is one of my recent experiment with Pearl Barley and Mixed lentils combo. Though Pearl Barley is low in protein content compared to the whole grain barley but low in calorie and the addition of lentils like Green gram, Orange lentils/Masoor dal, Tuvar Dal, Channa dal, Urad dal makes it a protein packed meal. The Barley Adai / Dosa is a Instant version it doesn't require fermentation and can be cooked soon after grinding. The dosa turned so crispy and tasty and i served with Kadamba Chutney, which i posted last week. The combo was so good and my kids loved this Barley Adai so much. For a change from regular Dosa & Adai, try this healthy and tasty Barley Adai. And also Pearl Barley are very cheap, healthy and easy to use and also available in all supermarket & Departmental stores. Great nutrition in an less or cheap price.

Oats Brown Rice Adai / Oats Brown Rice Lentils Crepes

Today's recipe is a South Indian Special, Adai. Adai is nothing but a thick dosa/crepes made of mixed lentils and rice. For a healthier option i tried with oats and brown rice. I am trying to include more Whole grains & fiber rich meals in our diet. I regulary take oats, cracked wheat, whole wheat, finger millets, brown rice in any form but my kids & H not comfortable so to feed them i need to txperiment, then thought to mix this whole grains with their favorite Dosa/Idly/Adai/Pulao etc. And one such experiment turned out to this crispy, yummy & healthy Adai.
Here i used Brown Basmati rice but u can use regular brown rice also but the long grain ones gives nice crispy n tasty adais. You will not find any much difference in taste to that of regular Adai. its more filling and perfect for breakfast to kick start your day. But u can very well serve for dinner. Now to the recipe...

Mixed Bean N Brown Rice Adai / 15 Bean Brown Rice Adai

I used to make Adai once in a week since its rich in protein and taste and of course my favorite too. Especially Adai with Drumstick leaves. Recently i saw adai recipe in Nalini's blog with Mixed bean n dhal which is even more healthy with the combo of more legumes n lentils. I loved that idea and made it using 15 bean mix and Brown rice. The Adai turned out so tasty, crispy n inner soft and delicious. As i used brown basmati rice, the adai/dosa turned crisp. Its nice to add more legumes n lentils to our diet in a super easy n delicious way. My H n kids loved this protein n fiber rich Adai. Even its good for diabetic & dieting people since its low carb and high protein. Good for breakfast n dinner too. Now to the recipe...

Whole Wheat Corn Roti / Adai N Carrot Raitha

        Day 2 of Blogging Marathon Under the theme "Whole Grain Dishes" and today's healthy and fiber rich recipe, Whole Wheat Corn Adai. More than Adai dosa i like this Wheat Adai and Ragi Adai more. My grandmom makes this wheat/godhumai adai often and give us for evening tiffin/Dinner. These adai are very tasty n wholesome perfect for light Dinner. To make it more healthy, i added sweet corn to my regular wheat adai that turned out so soft and flavorful adai. I made Carrot Raitha to go with this adai, on the whole it was so satifying and yummy dinner. Ragi Adai / Finger Millet Crepes - Diabetic Friendly Recipe!

  
This is Instant Adai, no need for fermentation. my grandma used to make this Ragi Adai for evening tiffin and my favorite too. It can be served with coconut or tomato chutney...i like to eat as such since this adai is made with more onions, chilli, cilantro. So i do not prefer any side dish or a simple pickle is enough for me. This is a very useful and apt recipe for Diabetic Patients, and even good for diet people and pregnant women.

Valaipoo Adai/Paruppu Dosa with Valaipoo


  This is my first try..valaipoo adai.Its special like keerai adai instead of keerai i used Vazhaipoo.It tastes so gud and really a very different n yummy way to eat valaipoo.My "H" also liked it very much and appreciated for my new try.Heres the recipe:

Ingredients
  1. Rice(sona masoori or long grain)  1 cup
  2. Toor dal(thuvaram paruppu)      1/2 cup
  3. Chana dal     1/2 cup
  4. Urad dal      2 tbsp
  5. Moongdal     1 tbsp
  6. Fenugreek seeds    1/2 tsp
  7. Dry red chillies      5-7 no.s(add or less to ur spice level)
  8. Hing    1/2 tsp
  9. Cumin seeds/Jeera     1 tbsp
  10. Fennel seeds      1/2 tbsp
  11. Garlic   1 clove
To temper
  1. Oil    2 tsp
  2. Mustard seeds    1/2 tsp
  3. Chana dal   2tsp
  4. Curry leaves   few
  5. Coriander leaves     few
  6. Valaipoo   1/2 cup(too finely chopped)
  7. Onion       1/2 (finely chopped)
Method
     
  • Soak rice ,toor,channa,urad,moongdal and fenugreek seeds together for atleast 3-4 hrs.
  • Soak dry red chillies separately in warm water for 30minutes.
  • first in a blender or grinder put dry red chillies,cumin seeds,fennel seeds ,garlic and hing.
  • Run for few minutes and add soaked rice and dal ,grind it to a coarse paste with little water.
  • This batter should be little thicker than the idly batter consistency.
  • no need to ferment the batter ,grind it by evening for dinner.
  • Transfer the batter to a vessel ,add salt and mix well.
  • Now heat oil in a pan,add mustard seeds allow to pop,then add chana dal and fry till golden brown
  • Add curry leaves ,coriander leaves onions and fry for few seconds then add finely chopped valaipoo.
  • Fry for 2-3 minutes,valaipoo get light change in color.
  • then add the tempered items to the batter and mix well.
  • Heat a tawa,pour a ladleful of batter to the tawa and spread lightly in circular motion.
  • This will be a thicker dosa.Drizzle some oil around the dosa and cook in medium flame.
  • After 2-3 minutes turn other side and cook till it become little crispy and well cooked.
  • It will take time to cook completely.
  • Then remove from the tawa and serve hot with chutney or sambar or it can be taken as such.
