Carrot Lime Soup|Vegan Carrot Soup Recipe with step by step pictures. Carrot and Tomato soup are my favorite soups and these are the soups that my Mom prepares at home once in a while. As I do not like adding cream or milk to my soups so I mostly prefer vegan or simple clear soups with any veggies. This Carrot soup is one such recipe with great taste and flavor.  Any crispy bread pairs well with this soup and also makes a perfect weeknight dinner.

I followed the same Vegan Broccoli Soup recipe but instead of roasted broccoli I added carrots. And have seen in many carrot soup recipes with lemon and ginger, here I used lime juice and it paired well. I have made it couple of times and this our family's favorite soup now.

Carrot Kheer Recipe with step by step photos. Spicy Treats completed 5 years of blogging and celebrate the occasion I am sharing this rich and delicious Carrot Kheer. Five successful year completed by last week but I was sick and couldn't able to cook and post any recipe. More than my sickness, Browsing about the symptoms made me more upset and depressed. Thankfully, my test results were normal but still some issues there and hoping to recover soon.

It is better to late than never, So I don't want to skip a celebration post and made this simple and easy to make Carrot Kheer. Usually I prepare a week or 10 days before Blog Anniversary Date and decide the recipe and sometimes buy props too. This year I couldn't plan anything. Somehow managed to cook something simple for the occasion.

As I do not like adding cream or milk based soups I prefer mostly vegan or simple soups with any veggies. This Carrot soup is one such recipe with great taste and flavor.  Any crispy bread pairs well with this soup and makes a perfect meal.

Aloo Methi Paratha / Aloo Methi Stuffed Paratha Recipe

Today the tamil Month Aadi started, Aadi Month is specially celebrated in My Home town, Salem, Tamil Nadu. The first day of Aadi is celebrated as Thengai Suduthal Pandigai in our home town. The local schools will be closed early mainly for this occasion and i still remember those days where we rush to home to clean coconut, fill it with stuffing and to do fire roasting. Me, my sister, cousins and neighbor friends wil have a competition like who is filling the coconut first and whose coconut has the more quantity of stuffing and tasty one. Mom buys a whole fresh coconut from the market and we ourself remove the outer fibre and rub it in sand to get the smooth shell. Then we wash the coconuts and put a hole on one of the 3 eyes on the coconut and start stuffing the coconut with sweet stuffing like - Jaggery, poha, rice, moongdal, dalia, sesame seeds. To know how the coconut is filled and roasted checkout my friend Chitra's space where she explained everything with detailed pictures. Chitra is my school mate and we are from same town, same area. Today Morning after seeing her post, i was excited & tempted to taste that delicious roasted coconut and at the same time felt sad missing my home town. I too wanted to try it but so far in all my apartments we have electric stove only. And more over here the coconuts will not be fresh, tender and good like we get in India. Not only the first day of the month, the whole month is considered auspicious and we worship the Goddess Amman, salem Kottai Mariamman Festival is very popular lots of people visits the temple this month from in and around the districts.

Now coming to the recipe, this Aloo Methi Paratha /Potato Methi Stuffed Paratha goes to the Shh Cooking Secretly Challenge started by Priya. In which every month the group members were paired each other and each pair exchange ingredients between them and cook a recipe with the given ingredients by their partner.

Savory Semolina Cake / Savory Semolina Carrot Cake

And today Monday am here with a Savory Bake for Love2Bake event, Savory Semolina Cake. I bookmarked this cake from Neha's blog long back and finally baked it today. This is a spicy flavorful soft savory cake loaded with carrot & peas. Delicious filling cake that can be served as snack or a meal for Breakfast along with some fruits & milk. The cake tasted so good and we had it with Chaat Chutneys. A must try for all who love savory bakes. This is an egg free, butter free cake.

Carrot Poriyal / Carrot Stir Fry

This is one of the simple & quickest stir fry or poriyal. I love carrots and this poriyal is my favorite, i even like to eat this with plain rice or sometimes i used to add some rice to the poriyal saute it and enjoy as Carrot Fried rice :)
You can make this carrot poriyal in jiffy just it takes only 5 minutes or less to make this yummy stir fry. Here i have made this recipe with carrots alone but you can very well combine with beans and make as Carrot Beans Poriyal. Recently i posted the recipe for Beans Poriyal, this is also a similar recipe but here i used green chilli instead chilli powder. The recipe as follows..

Ingredients
  1. Carrot     1/4 kg or 2 cups(finely chopped)
  2. Onion   1 medium (chopped)
  3. Curry leaves      1 sprig
  4. Green chilli     2 no.s(chopped)
  5. Turmeric powder       1/4 tsp or less
  6. Coconut(shredded)     1-2 tbsp or more
  7. Cilantro      1-2 tbsp(finely chopped)
  8. Salt    to taste
To Temper
  1. Oil      2 tsp
  2. Mustard seeds      1/2 tsp
  3. Chana dal/Yellow split peas    2 tsp
  4. Urad dal /White lentils        2-3 tsp


Method
  • Heat oil in a kadai, add mustard seeds when it popup, add chana dal, urad dal and fry till golden brown.
  • Then add the finely chopped onions and curry leaves saute for 1-2 minutes.
  • After that finely chopped carrot, turmeric powder and enough salt and stir well.
  • Now sprinkle 1-2 tbsp water and cook covered for 2 minutes.
  • After that open the lid and stir fry for few seconds and add shredded coconut mix well.
  • Lastly add some finely chopped cilantro and stir fry in medium high heat for few seconds.
  • That's it..Yummy Carrot Poriyal / Stir Fry Ready.



Notes:
After adding water cook covered not more than for 2-3 minutes. otherwise the carrot gets over cooked n turn mushy.
Adding coconut is optional.
Instead of green chilli u can use 1/2 -1 tsp chilli powder.
This stir fry can be served with chapathi, dosa or even as sandwich filling.

Carrot Payasam / Carrot Kheer

We love payasam and i used to make it without fail in all our happy moments n special occasions. But this time on my elder one's birthday couldn't able to make his favorite payasam bcoz of party n other things. So last week again he requested me to make payasam for him. But this time i wanted to try new payasam from my regular Vermicelli payasam & moongdal payasam, then remember about this Carrot Payasam from Divya's Culinary Journey. Her payasam color, look, texture n recipe attracted me more, and also she added vermicelli to carrot payasam which sounds even more interesting n delicious and wanted to try it for long time. finally, last week made this delicious Carrot Payasam and we enjoyed it. Mix Veg Paratha / Mixed Vegetable Paneer Paratha / Mixed Veg Stuffed Paratha - Kids Lunch Box Recipe!

During my Knee treatment i was not able to walk, cook or do any work by own, that time H managed to cook and took care of me n my kids. But sometimes he wasn't able to cook due to his work pressure and  that time we have managed with some bread, fruits & with some ready stuffs like frozen parathas n store bought idli/dosa batter etc. Once He bought two packets of Haldiram's Frozen parathas - Gobi Paratha & Mix Vef Paratha. Both Parathas tasted so good and i liked the mixed Veg Paratha. Its a combo of mixed vegetables - aloo,gobi,peas,carrots and with Paneer. I had already posted a similar recipe but without potato/aloo and cauliflower but with capsicum and cabbage. That;s also one of my kids' fav recipe, check out the link for Veg Paneer Chapathi Roll.

Mashed Potato Fritters ~ Vegan N Gluten Free !!


Today's recipe is simple and easy tea time snack, Mashed Potato Fritters or Potato Pakoras. I just made these fritters, clicked in hurry and now started with this post and I am busy with munching these crispy and yummy fritters. Mmmmm, so yummy!!
Yesterday made Potato Spinach Stuffed Peppers for our evening snack and used the left over filling for dinner along with some bread. But still have some plain mashed potato and thought of making Masal Bonda. As I don't have any recipes in hand/drafts, today wanted to post something Here at the same time have to make one easy and quick recipe...Then blindly tried this deep fritters which is more or less similar to onion pakora but with mashed potato and i also added few shredded carrots. It was so yummy n we liked it a lot. Once in a while can have these deep fried snacks and also the chill weather makes me craving for some spicy crispy snack n this Potato fritters are perfect. Now to the recipe....


Ingredients
  1. Mashed Potato     1 and 1/2 cup (4 or 5 medium potatoes boiled n mashed)
  2. Onion     1 medium(finely chopped)
  3. Carrot    1 small(shredded)
  4. Cilantro      5-6 sprigs(finely chopped)
  5. Ginger     2 tsp(finely chopped)
  6. Besan Flour/Gram Flour/Kadalai Maavu       1 cup
  7. Rice Flour      2 tbsp
  8. Chili Powder      1/2 tsp or to taste
  9. Hing     a pinch
  10. Fennel seeds      1/2 tsp
  11. Salt       to taste
  12. Water       1 tbsp

Method
  • Boil potatoes, then peel the skin and mash it well using potato masher or spoon n keep aside.
  • In a bowl, add mashed potato, finely chopped onions, cilantro, ginger, n shredded carrots and mix everything well.
  • And in another bowl add all dry ingredients, gram flour, rice flour,salt,chili powder and hing mix well then add the dry ingredients to the potato mixture and combine well.
  • Sprinkle water and mix well to a tight dough(will be bit sticky, thats ok but not too much of moisture).
  • Now heat oil in a wok/kadai, when its get really hot, pinch a small amount of dough slightly flatten it using finger tips and drop it hot oil.
  • Fry in medium high heat, after 1 or 2 minutes turn other side and fry till it turns light golden brown and crisp.
  • Once done remove from the oil using slotted ladle and drain the excess oil in paper towel.
  • Do repeat the same for all remaining dough.
  • That's it...yummy n crispy Potato Fritters ready. Serve With any desired sauce or simply enjoy with ketchup and a cup of Masala Chai or Espresso Coffee.

Notes:
Instead of chili powder, u can use finely chopped green chilies.
U can also add any desired chopped or grated vegetable to this fritters, like broccoli,cabbage,cauliflower,spinach,beets,etc.
After frying a batch of fritter, wait for a minute to get oil hot again n then start dropping the second batch and fry in medium high heat.
Do not add water than the mentioned amount to the dough mixture, moisture from the potato, onion n carrots itself enough to bind.
If u add more, your fritters won't turn crisp n also it absorbs more oil n turn soggy.
I tried baking these fritters but it doesn't come out well...besan inside the fritters didn't get cooked well, wasted 6 patties :(
Didn't tried toasting it in tawa/griddle as i don't want to waste the stuff again.

Minty Roasted Carrots Cauliflower

If you are looking for some easy, healthy and yummy roast, this is one of the best delicious recipe which which is loaded with more taste and flavor. We love roasted vegetables and i have already posted few roasted Broccoli,Beets and Masala Broccoli recipes. This is little different from the previous recipes and this time i made with Mint flavor and less spices. And also i added few teaspoons of corn flour for extra crispy and crunchy taste to the carrots and cauliflower. I combined carrots n cauliflower but if you want you can combine any desired vegs like cauliflower potato or mushroom or bell pepper or simply with mixed vegetables. The recipe as follows...

Carrot Mug Cake / Microwave Carrot Cake ~ Eggless!!

I am in love with this quick and easy mug cakes. These mug cakes are very simple, instant preparation with so satisfying taste and above all its Eggless microwave recipe. Actually i wanted to bake some carrot loaf cake for my Show Me Your HITS~Carrots & Beets event and also started ready with the stuffs, then suddenly a thought came why don't i try it as a mug cake?! then searched for an Eggless carrot mug cake recipe and glad to have tried this recipe. With very very little alterations i did my carrot mug cake and the result was awesome, We 4 finished the mug in no minutes and again  i made another one for me. Yes, more than my kids i loved this carrot cake a lot. So soft and delicious. This time i used Vanilla imitation, and the flavor dominated more and on the whole cake was Superb!!! I could say that this is A Must Try recipe!!! Now to the recipe...

Carrot Salad With Orange Honey Dressing

For the Day 2 of Blogging Marathon # 17  under the theme "Summer Salads" I am going to share you another refreshing and healthy salad - Carrot Salad with Orange Honey Dressing. First time i tried this orange-honey combo for my salad as dressing and it turned out awesome. It was superb! n i have no words to explain the taste...Friends do give it a try, sure you will love it to the core, even if u don't like salad i am sure you will love to eat this healthy n colorful salad. You won't believe, my 3yr old loved this salad very much but he didn't like raw ginger pieces. Other than that he loved it :)
This recipe was slightly adapted from allrecipes.com In the original recipe they used lemon juice n sugar for dressing but i replaced lemon with Fresh Navel Orange n sugar with honey. To make it even more healthy n tasty i added a handful of cooked black eye peas, finely chopped raw mango,red onion n tomato and few ginger stripes. I also tried the same with fresh lime juice that was also so refreshing and yummy. This salad can be served along with your meal too, so that u will consume more salad n less food ! Whole Wheat Corn Roti / Adai N Carrot Raitha

        Day 2 of Blogging Marathon Under the theme "Whole Grain Dishes" and today's healthy and fiber rich recipe, Whole Wheat Corn Adai. More than Adai dosa i like this Wheat Adai and Ragi Adai more. My grandmom makes this wheat/godhumai adai often and give us for evening tiffin/Dinner. These adai are very tasty n wholesome perfect for light Dinner. To make it more healthy, i added sweet corn to my regular wheat adai that turned out so soft and flavorful adai. I made Carrot Raitha to go with this adai, on the whole it was so satifying and yummy dinner. Carrot Lemon Rice


        Day 4 of Blogging Marathon under the theme " Easy Kids Lunch box recipe - Rice" and today's easy lunch box recipe is Carrot Lemon Rice. For a change i added shredded carrots to the usual lemon rice. My kids don't like carrots so i always have to do some experiment with carrots. One such experiment was this Carrot Lemon rice. They love to eat lemon rice with more peanuts n cashew nuts so i added more carrots to it and feed simple lemon rice with loaded nutrition. Cumin Flavored Peas Rice ~ Lunch Box Special !

            Today's recipe is quick lunch box special recipe. I used the same spice masala which i used for my Aloo Paratha. To make this rice more healthy and tasty i added some finely chopped carrots and green capsicum. The end product was so yummy and flavorful, simple potato chips or papad goes best with this rice. Adjust spices to your taste and for kids serve this rice along with raitha/plain yogurt. I made this recipe for CWS- Peas event but because of my illness and holidays i couldn't able to post it in time. Any way i have some more event to share this recipe :) I think this is one of the best way to use Left Over Rice.Now to this simple and healthy recipe...

Spring onion and carrot makes an excellent combo and this paratha turned out super soft and tasty. These parathas are perfect for lunch box and also a great travel time recipe too.   Kati Roll/Kathi Roll are famous street foods of Kolkata.Traditionally kati roll are made with one side cooked with beaten eggs and filled with kati kababs.But there are so many interesting way to make these yummy kati roll.Any yummy stuffing filled with spicy chutneys n spiced onions rolled up in paratha are very common  kati roll recipes. I tried kati roll with carrot as a main stuffing, this is also specially made for the event, Healthy Lunch box Idea - Carrot theme.Who will say no, if carrots are cooked and served in this way right??? Seriously this is so yummy and delicious to the core..I used less green chutney as these were made for my kids. You can use any kind of stuffing but this carrot masala stuffing so healthy n yummy...Try this!!

Carrot Peas Khichdi


                 This is one of my favorite comfort n soothing dish.Very light n healthy.Mostly i  would like to make this rice n yellow moongdal, but this time i added yellow moong n tuvar dal..which was also so tasty .I always add carrots to my khichdi this time added some peas also.I make it little mushy whick me n kids like more than the normal separate grains.Only thing this time i add less water so i felt little dry but that doesn't alter the taste,I enjoyed this light khichdi with tomato thokku n gongura pickle..yum..yum..

Ingredients
  1. Rice    1 cup(i used sona masoori)
  2. Moong dal    1/4 cup
  3. Tuvar dal       1/4 cup
  4. Onion    1 small (finely chopped)
  5. Peas    1/4 cup
  6. Carrots   2 medium(sliced)
  7. Tomato    1 small(chopped)
  8. Turmeric powder    1/4 tsp
  9. Salt   to taste
  10. Cilantro    1 handful (finely chopped)
To Temper
  1. Ghee/Oil    2 tbsp
  2. mustard seeds   1/2 tsp
  3. chana dal    1 tbsp
  4. Urad dal    1 tbsp
  5. Hing    1/4 tsp
  6. Ginger    2" piece(finely chopped)
  7. Green chillies    2no.s(finely chopped)
  8. Curry leaves    few
  9. Dry red chillies   2 no.s(broken)
Method
  • Wash n soak rice n dal together for at least 15-20 minutes.
  • Then in a pressure cooker , add soaked rice n dal along with onion,tomato,carrots,peas n turmeric powder.
  • Add enough salt n water, pressure cook for 2 whistles.
  • Once done,allow the pressure to cool down ,open the lid n give a gentle mix.
  • Then heat ghee/oil in a pan , and the tempering ingredients one by one fry lightly and add it to the khichdi .
  • Lastly add some cilantro n mix everything well.
  • that's all yummy n healthy Carrot Peas Khichdi is ready to serve.
  • Serve it with any pickle or any veg fry.

ABC Bonda - Aloo Brown Beans Carrot Bonda


      I made this healthy n filling snack long back for Sobha's protein icious event.But can't post n link to that event in time...All my recent posts were made long back n because of my break all my recipes were in draft with uploaded pictures alone.Recently i didn't cook any new or interesting recipe as am advised not to give much strain to my hands.But the new events n themes again pushing me to try some new recipes n alsogot some ideas...so plz stay connected for more interesting n yummy delights.. :-)
Coming to this ABC Bonda i.e. A for Aloo , B for Brown Beans and C for Carrot...h is it?? healthy stuffing ingredients and also i didnt deep fried them istead fried them in Paniyaram pan.After seeing Vardhini's low calorie broccoli tofu bonda i too wanted to try some bondas in paniyaram pan n adopted her method.Thanx Vardhini for sharing ..Low fat version was too good n guilt free munch...My H also liked this kind of fried snack n we all enjoyed with Hot n Sweet chilli sauce....

Ingredients
For ABC masala stuffing
  • Aloo   1 medium (boiled n mashed)
  • Brown beans   1/2 cup
  • Carrot       2 medium size(shredded)
  • Onion   1 medium(finely chopped)
  • Cumin seeds    1/2 tsp
  • Chilli powder    1 tsp
  • Turmeric powder   a pinch
  • Garam masala    1/2-1 tsp
  • Coriander leaves    2 tbsp(finely chopped)
  • Salt   to taste
  • Oil   2 tsp
Method
  • Soak brown beans for 6-8 hours ,then pressure cook it for 2-3 whistles n drain n mash it n keep aside.
  • Cook potato,peel the skin and mash it and keep aside.
  • Heat oil in pan,add cumin seeds let it splutter then add finely chopped onions and saute for 1 minute.
  •  Then add mashed potato n brown beans n mix well n stir fry for a minute.
  • After that add chilli,turmericn amchur powder n enough salt mix everything well and cook till raw smell leaves.
  • then add the garam masala powder and stir fry for a minute.
  • Lastly add shredded carrots n coriander leaves stir fry for a minute and turn off the stove.
  • Thats it aloo beans carrot masal stuffing is ready now..allow to cool for sometime n divide them in to lemon size balls.
  • This stuffing can be  used for dosa,chapathi n bread rollls also.
Ingredients 
For Bonda batter
  1. Besan flour    1/2 cup
  2. Rice flour   1/4 cup
  3. Chilli powder  1/2 tsp
  4. Hing powder   1/4 tsp
  5. Salt   to taste
  6. Cumin seeds    1/2 tsp
  7. Ajwain/omam   a pinch (crushed)
Method
  • Add all the ingredients to a mixing bowl and using water make it to a little thick batter and keep aside.
  • To make Bondas
  • Heat a paniyaram pan,add few drops of oil on each groove and wait till it gets hot.
  • Then take one ABC masala shaped balls and dip it in the batter and place gently in to the groove
  •  ook in low-medium heat and wait till the bottom side turns brown n crisp and using spoon or skewer turn other side and cook till all sides turn golden brown n crisp.
  • Once done transfer the low fat ABC bonda to serving plate and serve hot with any chutney or sauces.
