Potato Spinach Stuffed Sweet Peppers


        Few days back my H bought this mini sweet bell peppers from grocery shop n asked me to do some snack with it. These peppers little sweet in taste. I tried stuffed peppers with potato spinach n garlic. I made the filling little spicy so the outer sweet pepper with inner spicy potato spinach filling paired very well and tasted so delicious. We just loved it with some hot sauce but this can even be served as a side dish for rotis. The recipe as follows...


Ingredients

  1. Sweet peppers    8no.(small size)
  2. Potato   3 no.(medium-boiled n mashed)
  3. Spinach  2 cups(finely chopped)
  4. Garlic  4-5 flakes(finely chopped)
  5. Onion   1/2 finely chopped
  6. Cumin seeds   1/2 tsp
  7. Chilli powder   1/ tsp
  8. Cumin powder   1/2 tsp
  9. Turmeric powder  a pinch
  10. Pepper  powder   to taste
  11. salt   to taste
  12. Oil    2 tsp + few drops to drizzle over peppers.

Method
For Stuffing
  • Heat oil in s pan,sputter cumin seeds and add finely chopped garlic n onions saute till onion turns light golden brown.
  • Then add the mashed potato and turmeric powder ans fry for a minute,then add chilli powder n cumin powder mix well and add finely chopped spinach n enough salt mix everything well.
  • saute for a minute and turn off the stove and allow the potato spinach garlic stuffing to cool completely .
  • After that,wash the mini peppers and cut the top and remove seeds and fill it with 2 spoons of potato spinach stuffing.Do for all the remaining stuffing.
  • Take a oven safe pan,grease it well with few drops of oil and arrange peppers and sprinkle some pepper powder n few drops oil n keep ready.
  • Preheat oven at 350 degree Fahrenheit.
  • Bake the stuffed mini sweet peppers for 15-20 minutes ot the outer skin turns light crisp n shrink.
  • Enjoy this Stuffed Sweet Peppers as a starter or serve with rotis.
