Carrot Mug Cake / Microwave Carrot Cake ~ Eggless!!

I am in love with this quick and easy mug cakes. These mug cakes are very simple, instant preparation with so satisfying taste and above all its Eggless microwave recipe. Actually i wanted to bake some carrot loaf cake for my Show Me Your HITS~Carrots & Beets event and also started ready with the stuffs, then suddenly a thought came why don't i try it as a mug cake?! then searched for an Eggless carrot mug cake recipe and glad to have tried this recipe. With very very little alterations i did my carrot mug cake and the result was awesome, We 4 finished the mug in no minutes and again  i made another one for me. Yes, more than my kids i loved this carrot cake a lot. So soft and delicious. This time i used Vanilla imitation, and the flavor dominated more and on the whole cake was Superb!!! I could say that this is A Must Try recipe!!! Now to the recipe...

Ingredients
  1. All Purpose Flour     6 tbsp
  2. Brown Sugar    2 tbsp ( or u can use white sugar also)
  3. Baking Powder     1/4 tsp
  4. Salt     1/4 tsp
  5. Cinnamon    1/8 tsp
  6. Nutmeg Powder     1/8 tsp ( i skipped it)
  7. Buttermilk     6 tbsp (chilled)
  8. Vegetable oil    2 tbsp ( i used olive oil not EV)
  9. Vanilla     1/4 tsp ( i used vanilla imitation)
  10. Carrot    3 tbsp (finely grated)
  11. Almonds    1 tbsp or more (chopped ) or can use any desired nuts
  12. Raisins    1 tbsp (chopped)
Method
  • Take a small bowl, add sifted flour,brown sugar,baking powder, salt, cinnamon and mix well with whisk/fork.
  • Then in another bowl, add buttermilk,oil,vanilla, grated carrot and mix well using spoon.
  • After that add flour mixture to the liquid ingredients and mix well.
  • Lastly stir in chopped almonds n raisins.
  • Then pour the batter to 10oz microwave safe mug and microwave in high power for 2 or 2 1/2 minutes and leave it for another 30 seconds.
  • That's it...Delicious and soft Carrot cake ready. Enjoy warm with some honey or chocolate syrup.

    1. Thanks Anu! Do give it a try, it tasted so delicious n don't omit nuts n raisins they give nice crunchy n yummy taste to the cake...you can store it in the fridge for day or two...I don't know much abt freezing!!

  37. Hi!! This looks amazing plus it can easily be adapted to suit allergic needs ie. soya buttermilk
    I was just wondering, and I would greatly appreciate if anyone could tell me,
    if i put the mix in a small cake tin (that fits in the microwave) and did everything the same, would it just make a small cake?
    I'm having a dinner party soon and this is the easiest carrot cake recipe I've found that suits vegans.
    If not, I suppose I could use mugs but looks a bit unprofessional! I suppose it kind of feels homey if it's in a mug though!

    1. If the tin is microwave -proof, sure.
      You could alternatively make it a bowl and invert it before serving.

  40. My cake turned out kind of sticky moist ....what is the consistence of buttermilk or should i use curd instead.Can you suggest me what must have gone wrong.

    1. take 1/2 cup of yogurt, add 2-3 tsp of water and beat it smooth and from that use 6 tbsp for this recipe. I usually use low fat curd beaten smooth, not a thin and watery buttermilk for cakes/bread. Hope this helps.
