Carrot Kati Roll / Carrot Frankie

Carrot Frankie Recipe
  Kati Roll/Kathi Roll are famous street foods of Kolkata.Traditionally kati roll are made with one side cooked with beaten eggs and filled with kati kababs.But there are so many interesting way to make these yummy kati roll.Any yummy stuffing filled with spicy chutneys n spiced onions rolled up in paratha are very common  kati roll recipes. I tried kati roll with carrot as a main stuffing, this is also specially made for the event, Healthy Lunch box Idea - Carrot theme.Who will say no, if carrots are cooked and served in this way right??? Seriously this is so yummy and delicious to the core..I used less green chutney as these were made for my kids. You can use any kind of stuffing but this carrot masala stuffing so healthy n yummy...Try this!!

Seven Links Tag Game, Awards N Giveaway Winner

              Seven links tag game,whats that?? This is recently getting popular in blogosphere,very interesting n fun  game.And also its an opportunity to recollect all our posts n categorize them accordingly.Neha and Sobha tagged me to play this wonderful game.Thank you gals for the tag.
Here are my seven links from my blog's post under the following categories

1.The Most Beautiful Post- to me these two are the most beautiful post from my 252 posts.These two pictures were more attracted and the recipe was so yummy than they look.
  Gulab Jamun and Mushroom n Potato Stuffed Paniyaram.

2.The Most Popular Posts - Veg Paneer chapathi Roll and Aloo Gobi Masala(restaurant style) are the top most popular posts from my space.The former was my first tried recipe with mixed veg n paneer as a stuffing for chapathi roll and later recipe was  learnt from my neighbor who was a catering student.Both were hit at my home n my in space too..most of my friends have tried these recipes n shared their result thru emails n i never got any great comments for these recipes.

3.The Most Controversial Post - So far i don't think i have no post in that category.I tired something interesting n innovative like Bitter gourd Fried Rice ,but its not controversial right??

4.The Most Helpful Posts - Baked Bitter gourd Masala and White Pumpkin Paratha. Even kids can eat this baked bitter gourd masala,zero bitterness n very delicious curry to go with rice n chapathi.I think these two recipes will be very useful for diet,diabetic people who wants to eat tastee n healthy options.In my experience white pumpkin paratha helps me in my diet plan n to shed pounds and my friends accepted this.

5.The posts that was surprisingly successful - Both my pudding recipes.. Semolina Chocolate Pudding and Almonds oats Bread Pudding.the later one was most successful n got more number of comments n dragged some visitors for the first time to my space :) I didn't expect such lovely comments from my blogger friends and also i though these were old style pudding with less attraction.Semolina chocolate pudding also i thought very simple like rava kesari n nothing special than adding cocoa powder to it.and also i thought of omitting this recipe becoz of my fair picture n presentation...But my friends really loved the idea n recipe and didn't bother about the picture and kindly share their thoughts..thank you so much buddies for your love n support :)

6. The Posts that did not get the attention that it deserves - I can say that almost 50% of my blog's post doesn't get any great comments ,in the beginning there were no friends to visit n support me :( Yep for long time there were no blogger friends to visit my space n none will share their thoughts reg my recipes..even many of my near n dear friends also use to comment while chatting or email but they won't leave comments at my space :( even for some interesting,easy ,good looking n innovative recipes also.thank god now i got some handful of friends who really share their lovely thoughts and encourages me to do more.
Broccoli Paratha and Vazhaipoo Adai ,these two recipes were unique to me.For the first time i tried paratha with broccoli n Adai with Vazhaipoo.Even my mom was stunned when i told her about my vazhaipoo adai..she said very innovative post it ,definitely u will get good comments n reach but all her words were not proven n not even one comment for it :(
7.A post that i am Proud of - Spinach Garlic Snack rolls..this is full n full my creation and a very yummy way to use spinach .so delicious n flavorful snack.

Tomato Rice Vermicelli Pulao


                Long back i saw in "Anithavin Samayal" vermicelli rice pulao ,in that recipe she simply pressure cooked roasted vermicelli n rice together n made one sauce to go along with.But i am not impressed with the entire recipe so i took the idea of cooking rice n vermicelli together n made tomato pulao with it.The result was so yummy,tangy mild spicy rice vermicelli pulao tastes great.This time i used tomato paste instead of chopped tomatoes.My "H" who doesn't like vermicelli just loved this tomato pulav.I served with Raitha n Egg plant curry.The recipe as follows :

Chikoo Watermelon Juice


                Chikoo/Sapota, Custard apple n Guava( seedless)  are the three fruits which i love more n had more n more number of times in my life :) but these three are the fruits which i didn't had or had once or twice for the past 4.5 years :( Chikoo/ Sapota are not available here,in NJ i am able to get very rarely that too those fruits wont taste sweet n good as much like what we get in India.Though those chikoos are not good in quality i use to buy them due to my strong love on it..there are some sweet memories related with this chikoo fruit :p As the chikoos available here are not much tastier,so i use to make them juice n milk shakes.I love chikoo chocolate milk shake..Mmmm....
                  This time i brought some frozen chikoos and i would like to make juices n milkshakes.For a change this time tried chikoo n watermelon combo....was so delicious n refreshing drink ..The watermelons which we bough this time was so sweet n juicy and when combined with frozen chikoos in juice form turned out as a heavenly drink to me....Here u go..

Ingredients
  1. Chikoo   2 no.s
  2. Water melon    1 cup(cut in to chunks)
  3. Honey    1 tsp or to taste                                                             
  4. Cold milk    1 and 1/4 cup ( i used low fat milk)
  5. ice cubes   as needed
Method
  • In a blender , add peeled n cut pieces  of  chikoos(without seeds) and watermelon chunks n honey.
  • Blend well to a smooth juice n add milk run again for few seconds.
  • the pour the juice to the serving glass ,add some ice cubes n enjoy....
Notes:
Instead of honey sugar can also be used.
If interested add some cardamom powder to the  juice.
Can also try with a scoop of  vanilla ice cream to a rich chikoo watermelon milk shake..

Carrot Peas Khichdi


                 This is one of my favorite comfort n soothing dish.Very light n healthy.Mostly i  would like to make this rice n yellow moongdal, but this time i added yellow moong n tuvar dal..which was also so tasty .I always add carrots to my khichdi this time added some peas also.I make it little mushy whick me n kids like more than the normal separate grains.Only thing this time i add less water so i felt little dry but that doesn't alter the taste,I enjoyed this light khichdi with tomato thokku n gongura pickle..yum..yum..

Ingredients
  1. Rice    1 cup(i used sona masoori)
  2. Moong dal    1/4 cup
  3. Tuvar dal       1/4 cup
  4. Onion    1 small (finely chopped)
  5. Peas    1/4 cup
  6. Carrots   2 medium(sliced)
  7. Tomato    1 small(chopped)
  8. Turmeric powder    1/4 tsp
  9. Salt   to taste
  10. Cilantro    1 handful (finely chopped)
To Temper
  1. Ghee/Oil    2 tbsp
  2. mustard seeds   1/2 tsp
  3. chana dal    1 tbsp
  4. Urad dal    1 tbsp
  5. Hing    1/4 tsp
  6. Ginger    2" piece(finely chopped)
  7. Green chillies    2no.s(finely chopped)
  8. Curry leaves    few
  9. Dry red chillies   2 no.s(broken)
Method
  • Wash n soak rice n dal together for at least 15-20 minutes.
  • Then in a pressure cooker , add soaked rice n dal along with onion,tomato,carrots,peas n turmeric powder.
  • Add enough salt n water, pressure cook for 2 whistles.
  • Once done,allow the pressure to cool down ,open the lid n give a gentle mix.
  • Then heat ghee/oil in a pan , and the tempering ingredients one by one fry lightly and add it to the khichdi .
  • Lastly add some cilantro n mix everything well.
  • that's all yummy n healthy Carrot Peas Khichdi is ready to serve.
  • Serve it with any pickle or any veg fry.

Kadai Mushroom


                 Before going in to today's recipe , I just want to thank all friends who gave comment to my yesterday's post.While reading all your comments i was so touched n got tears on my eyes(due to joy) ...that i got some special wishes on a great day from you all.Most of ur words:  "God Bless u"...at least if one of your words  gets power ,we will live a happy long life :) "Nallathe sonnal Nallathe Nadakkum" Always hope for the positive result ,even if u got negative don't worry He will give u right things at right time..I am so glad that my story have brought some good hopes on some of ur life...May the almighty shower all his blessings to You all.
                Now to the recipe,Kadai Mushroom this is one of my bookmarked recipe.I bookmarked this Kadai Mushroom  from Lavanya's blog on the day i saw it.The recipe n Her picture tempts me a lot to try out this yummy dish.I just added two steps extra from her recipe.One is i added tempering with cumin seeds and the other, In the end i added 1/4 cup pan roasted diced capsicum to the curry.Please click on the recipe name link for the detailed recipe.
I added less butter than she mentioned,you can add the same amount of butter mentioned in the original recipe to get silky n glossy texture and also a very flavorful n yummy kadai mushroom.

Spinach Pulao/Palak Pulao (With Whole Moong)


            I am here with very interesting, healthy n yummy Spinach Pulav recipe for Blog HopWednesday  by Radhika.This week I am paired with Rajani of My Kitchen Trials. She has a very lovely blog,very neatly organised with all delightful recipes.I came to know about her space only thru blog hop wednesday event.I loved all her stuffed paratha recipes but bcoz of my wrist pain i am not able to make chapathis.So today i tried her very recent recipe-Spinach Pulao.I tried with little changes, this is my first try pulav with palak..really the rice came out very well,so flavorful n delicious pulav.My kids also liked it .I served with simple raitha n baked chips.Here we go..

Ingredients
  1. Rice   1 cup(i used Basmati Rice)
  2. Whole moong    1/2 cup
  3. Onion  1 medium(sliced)
  4. Spinach/Palak     1/2 bunch(roughly chopped)
  5. Turmeric powder   1/4 tsp
To Temper
  1. Oil   1 and 1/2 tbsp
  2. Butter    1/2-1 tbsp
  3. Black Cumin seeds/Shahi Jeera    1/2 tsp
  4. Green Cardamom   2 no.s(whole)
  5. Bay leaf   2 small leaves
To Grind
  1. Coriander leaves     1/2 bunch
  2. Mint leaves    1 handful
  3. Green chillies    5 no.s
  4. Coconut    2 tbsp(shredded)
  5. Fennel seeds    1/2 tsp
  6. Cumin seeds    1/2 tsp
  7. Onion   1/2 (chopped)
  8. Ginger    2" piece
  9. Tamarind    pea size piece
  10. clove    2 no.s
  11. Cinnamon    1" stick

Method
  • Soak Whole moong for 1 -2 hours and cook till tender ,drain n keep aside.
  • Wash n soak rice for at least 30 minutes n keep aside.
  • Grind all the ingredients under"to gind" with very little water to a fine paste n keep aside.
  • Heat oil + Butter in a pressure cooker/heavy bottom vessel, add the tempering ingredients and allow to sputter n then add sliced onions and saute for 1-2 minutes .
  • then add the ground paste and saute till raw smell leaves (for 3-4 minutes) and add turmeric powder and stir fry for another minute.
  • After that add chopped spinach and stir fry for a minute and add soaked n drained rice fry for a minute.
  • Lastly add cooked whole moong and mix eveything well add enough salt and water.
  • Cook till rice is done..That's it very flavorful n delicious Spinach pulao with whole moong is ready to serve.
  • Serve hot with any Raitha or Curry.

Notes:
Adjust green chillies to your taste n spice level...the above mentioned qty will yield a mild spicy pulav.
Can also try with any lentils or legume like chana,beans,peas or vegs like baby potato etc.

Chicken Korma

   
              After a long time i am posting a non-veg recipe.I am not much familiar of non-veg recipes n also we eat only chicken that too monthly once or twice.very rarely i cook fish fry for kids.So every time i cook chicken i use to refer all my bookmarked chicken recipes from all your blogs.This recipe also i saw it in You tube video n changed bit to my taste ,cashew n poppy seeds based gravy.This is so rich n creamy kurma,so flavorful n yummy with biryani, idly/dosa n chapathi/parotta also.

Ingredients
  1. Chicken    1 lb or 1/2 kg
  2. Onion   1 large(finely chopped)
  3. tomato  1 large or 2 medium(finely chopped)
  4. Ginger Garlic paste    2 tbsp
  5. cilantro    1 handful (finely chopped)
  6. Chilli powder     1 and 1/2 tsp
  7. Coriander powder    1 tsp
  8. Turmeric powder    1/4 tsp
  9. Salt    to taste
To temper
  1. Oil    2 tbsp
  2. Cumin  seeds   1/4 tsp
  3. Mustard seeds  1/2 tsp
  4. Fennel seeds   1/4 tsp
  5. Curry leaves    2 sprigs
To roast n grind
  1. Poppy seeds/Khas Khas    1/2  tbsp
  2. Fennel seeds    1 tbsp
  3. Clove    5 no.s
  4. Cinnamon    2"stick  2 no.s
  5. Green chillies    3-4 no.s
To wet grind
  1. Coconut   1/2 cup(shredded)
  2. Cashew nut     7-8 no.s(whole)
  3. Poppy seeds   1/2 tsp
Method
  • Wash n clean chicken pieces n keep aside.
  • Heat a pan n dry roast all the ingredients under"to roast n grind" lightly and grind it to fine powder or paste  n keep aside.
  • Grind coconut,poppy n cashew nut to a fine paste n keep aside.
  • Heat oil in a pressure cooker,add the tempering ingredients and allow to splutter then add onions and saute for a minute and add ginger garlic paste.
  • Saute onion-ginger garlic paste well or till raw smell leaves.
  • Then add chopped tomatoes and saute till turns soft n mushy.
  • Now add chicken pieces n turmeric powder stir fry for 1-2 minute then add ground masala powder,chilli n coriander powder stir fry the chicken pieces with all the masala for 4-5 minutes.
  • Then add 1/2- 1 cup water handful of coriander leaves, enough salt and pressure cook for 1 whislte and allow the pressure to cool down.
  • Once it done open the cooker and add the coconut paste and cook in medium heat till coconut masala get blended n oil shows on top.
  • That's it...very yummy n rich chicken korma is ready to serve.
