Broccoli Stuffed Mini Pepper Bajji / Broccoli Stuffed Capsicum Bajji

Today's post is a yummy, tempting and all time favorite stuffed bajji - Broccoli Stuffed Mini Pepper Bajji. For May month's Shh secretly Cooking Challenge, an interesting event by Priya in which every month the group members were paired with a partner and the partners exchange 2 ingredients secretly and should try a recipe with those two or at least one ingredient from it. My may month's partner was Viji of Virunthu Unna Vaanga. She gave me Broccoli and Pepper/Capsicum as secret ingredients and in turn i gave her corn starch and Foxtail Millet. Viji tried a wonderful and healthy cake with my ingredients and i tried this yummy Broccoli Stuffed Capsicum Bajji.

Aloo Capsicum Chutney / Potato Red Bell Pepper Chutney - Chutney for Idli/Dosa

I like to try chutneys with fresh Veggies and have already tried Cabbage Chutney, Chayote Squash Chutney, Carrot Chutney, Broccoli Chutney, Ridge gourd Chutney and this time with two interesting veggie combo - Potato & Red Bell Pepper. Actually i started to make Red Bell pepper chutney but while sauteing i saw some left over microwave potato slices in the plate after using it for my Pizza topping. So a sudden thought, why not to add that potato slices and make chutney as its a winning combo Potato-Capsicum. Without any second thought added it and continued sauteing. To my surprise the ingredients combo turned out awesome and chutney tasted so yummy, even my 4 yr old loved it with dosa. First time i did not take any pics since its a trial, so again made it today and took pictures.
Have tried few recipes with this Potato & Capsicum Combo. And this chutney is sure a keeper and excellent side dish for idli, dosa. If you are bored with your regular chutney recipes then this is a good choice to try something interesting and delicious. This is a versatile chutney that pairs with most of the South Indian Breakfast, can be used as a Sandwich Spread or as a dipping for crackers. Even a simple and comfort side dish with plain rice topped with sesame oil. I had the left over chutney with Oats Curd Bhat for lunch. You can surprise your family, guest with this interesting chutney, no one will find out it has potato & capsicum in it. The taste is almost like a Onion Tomato Chutney. Now off to the recipe...

Life without gadgets - laptop, internet, mobile is something different and also bit boring, today we had some internet issue and got the connection after 6 pm. I felt that I was left in an Island without no people around me. I even could not make India call or chat/call with any friends as my Landline also needs wifi. I don't know how to spend the day without my laptop and mobile but you know the day went very well, did some useful work.

Honey Cheese Corn Muffins / Honey & Cheese Corn Muffins



I really missed by space and blogging for the past few days. One or the other things kept me away from blogging and its almost a week i posted any recipe here. Blogging is one of the best stress reliever to me and i felt relaxed after posting a recipe by reading all my fellow bloggers lovely comments  :)
So today i wanted to share a recipe which i made few weeks back, easy and delicious Corn Muffins with the goodness of honey and cheese. This is the first time i tried muffins with corn meal and i loved it. I had some mozzarella cheese left after using it in my Pinwheels Pizza and Onion Cheese Pull Apart bread and wanted to use it and searched for a recipe and i found this recipe interesting. But i halved the recipe and slightly modified it to my taste. Added some chili flakes to it and loved the spicy, sweet n bland flavor of corn meal. Do give it a try!!

Aloo Capsicum Bajji / Potato Bell Pepper Fritters / Potato Bajji


Bhaji, deep fried snack using gram flour with any desired veg like potato, onion,capsicum, brinjal, Banana Pepper and even with paneer n bread slices. It's one of the easy Indian snack which u can make it in jiffy. My favorite is Milagai Bajji and this Potato Bajji. But due to health & calorie conscious not making this fritters often but once in a while would love to have one or two bajjis. That too this chill evenings made me to crave for such hot & spicy fritters. So after a very long time I made this yummy bajji last week and served along with ginger cardamom tea for our evening snack. It was Very refreshing n filling. As i don't have banana pepper in hand i used capsicum and we loved it. Now off to the recipe...

Potato Capsicum Stir Fry / Potato Fry / Varuval

After 10 days of sickness now getting better n hope to recover completely soon. Thanks a ton friends for all your Prayers n Wishes. As per my schedule i will be posting my Blogging Marathon posts this week. Last week for I am not able to do BM - Indian Basic theme,as i didn't prepare rough draft n also it requires more writing n a elaborate recipe since i was struggling lot with my headache n dizziness. So i quit that week from Blogging Marathon. But This week I will be posting under the "Theme - Dry Vegetable Saute". Potato is my Family Favorite vegetable n i often do this Sliced Potato Fry. But for a change this time added 1/2 cup of chopped capsicum n masala powder to my fry. It was so flavorful n yummy, we had this potato capsicum fry with Mixed Beans Dhal Bhat. Very Simple Recipe, even kids will love this stir fry if it made less spicy. So please adjust spices to your taste. For this fry i used Yukon Gold Potatoes n Red Potatoes. Both tastes good for stir fry/curry/roasting. Now to the recipe...

Mung Bean Capsicum Pulao


            Today's recipe is a healthy and yummy pulao with mung bean and capsicum/bell pepper. This is very simple and easy one pot meal which also perfect for lunch box. For this pulao i added a very flavorful n yummy combo of masala ingredients which made this simple recipe to a super hit one. Potato Spinach Stuffed Sweet Peppers


        Few days back my H bought this mini sweet bell peppers from grocery shop n asked me to do some snack with it. These peppers little sweet in taste. I tried stuffed peppers with potato spinach n garlic. I made the filling little spicy so the outer sweet pepper with inner spicy potato spinach filling paired very well and tasted so delicious. We just loved it with some hot sauce but this can even be served as a side dish for rotis. The recipe as follows...

Capsicum Paneer Masala


    This masala recipe is a quick recipe...ready in few minutes...this is one of my experiments which came out very well. Anything with paneer..result will be soo good..we had it with chapathi..My kids loved it a lot,
so try this for your kids too...

Ingredients
  1. Paneer   8 oz pack(cubed)
  2. Capsicum/Bell pepper  1 large (diced)i used green bell pepper
  3. Ginger   2 tsp(finely chopped)
  4. Garlic   3-4 cloves(finely chopped)
  5. Onion   1 large(finely chopped)
  6. Tomato   1 and 1/2 medium (blend well in a mixie)
  7. Green chilli   1 no.(finely chopped)
  8. Turmeric powder   1/4 tsp
  9. Chilli powder   1 tsp
  10. Coriander powder   1 tsp
  11. Garam masala   1/2 tsp
  12. Kasuri methi/Dried methi leaves   2 tbsp
  13. Cilantro   few (finely chopped)
  14. salt   to taste
To temper
  1. Oil    1 Tbsp + 1 tsp
  2. Cumin seeds   1/2 tsp
  3. Fennel seeds   1/2 tsp
  4. Clove   2 no.s
  5. Cinnamon  1" stick
  6. Bay leaf   1 small piece
Method
  • Heat tsp of oil in a pan and stir fry the diced capsicum lightly and keep aside.
  • Cut the paneer to your desired shape & size and soak it in warm water till use.
  • Heat oil a wok/pan, add the tempering ingredients and wait till splutter and fry lightly.
  • Then add finely chopped ginger,garlic stir well and add green chillies,onions and saute till onion turns translucent.
  • Then add the tomato paste and saute till the moisture drains and oil shows on top and throw all the dry powder and stir well.
  • Add enough salt and 3/4 cup of water(or more to your desired consistency) mix well and close it with a lid and wait till it boils...when it starts boiling add the kasuri methi mix well and cook covered for a minute.
  • Then add the fried capsicum and soaked n drained paneer to the gravy and mix everything gently and again cook covered for 1-2 minutes.
  • Lastly add some chopped cilantro and turn of the stove.
  • Yummy and delicious capsicum paneer masala is now ready to serve.

Tips:  You can also add finely chopped tomato or tomato puree...
If you want ,can add some cream at the end to make it even more tastier n rich.
Try this with any veggies of your choice.
You can also use orange, red or yellow colored capsicum also

Cauliflower Capsicum Masala Stir Fry


     I like cauliflower stir fry more than a poriyal n subzi..its so cook n very tasty too.This time i tried baking them.This method reduces time n energy.I made this as a side dish for simple rasam sadham,so i want to make it little spicy i added some freshly gounded spice powder.Its completely your choice to add the masala powder if you don't want avoid it n try in your usual stlye with baked one.really the fry gets ready in few minutes with little crispy n no moisture, a perfect stir fry.

Ingredients
  1. Cauliflower   1 medium(cut in to small florets)
  2. Capsicul/Bell Peppers(red,orange,green)    thinly sliced
  3. Onion   1 medium(thinly sliced)
  4. Chilli powder   1/2 tsp
  5. Red Chilli flakes  1/2 tsp
  6. Turmeric powder  1/4 tsp
  7. Mint leaves   very few
  8. Spring onion greens   few (finely chopped)
  9. Salt   as needed
  10. Oil  1 tsp
To roast N grind
  1. Cinnamon   1/2 " stick
  2. Clove   2 no.s
  3. Poppy seeds    1 tsp
  4. Fennel seeds   1/2 tsp
  5. Cumin seeds   1/2 tsp
  6. Pepper corns   5-6 no.s
Method
  • Roast the ingredients under "to roast n grind" without oil for a minute and cool it and make a fine powder of it n keep aside.
  • Wash n Cut the cauliflower in to small florets n grease the baking tray with oil and spread the florets along with sliced capsicum/bell Peppers,sprinkle salt n chilli powder and bake them at 400 degree F for 25 minutes and left it till start cooking.
  • Heat oil in pan,add onions and fry lighty then add the baked cauliflower n bell peppers add the roasted n grounded spice powder,red chilli flakes and mix well and stir fry for 1-2 minutes or till raw smell leaves.
  • Then add the spring onion greens n mint leaves and fry for a minute and lastly add some finely chopped cilantro and mix well n turn off the stove.
  • Spicy n tasty stir fry ready now...serve as an accompaniment of your choice.

Spinach Capsicum Masala Fried Rice / Indian Style Fried Rice With Spinach & Capsicum


      This is a combination of Indian spices with Chinese sauces. This is really a amazing combination...i use to make this type of fried rices often with any available vegetables..this time i have more capsicum and a bunch of spinach in my fridge, so tried with it. Very quick recipe... helped me a lot to pack my hubby's lunch box during his 6 am-3 pm shift. So quick n i can also stuff as many vegetables as possible. I tried with mixed vegs like carrot,beans,peas,cabbage,mushroom,capsicum or with any 2 available ingredients. U too Try this n enjoy !!!

Paneer Tikka Masala



Ingredients
To marinate
  1. Paneer    1 cup (diced)
  2. Green Bell Pepper    3/4 cup(diced)
  3. Tomato    1/4 cup(diced)
  4. Onion      1/4 cup(diced)
  5. Thick yoghurt/Curd    2 tbsp 
  6. chilli powder    1/2 tsp
  7. kasoori methi   1/2 tsp
  8. oil    1/2 tsp   salt   a pinch

           Take a bowl,add thick fresh curd,chilli powder,kasoori methi,oil mix well and add paneer and other vegs and mix well and marinate for 15-20 minutes.

for masala
  1. Onion      1no. (finely chopped)
  2. Tomato puree   3/4cup(or puree of 2 fresh tomato)
  3. All purpose flour/maida   1 tsp
  4. Ginger Garlic paste   2 tsp
  5. Cumin seeds/Jeera     1/2 tsp
  6. turmeric powder   a small pinch
  7. chilli powder   1/2 tsp
  8. Coriander powder    1tsp
  9. cumin powder   1/2 tsp
  10. Garam masala   1/2 tsp
  11. Salt   as needed
  12. Oil   1 tbsp
Method
  • Heat oil in a non stick kadai,add cumin seeds allow to splutter.
  • Add  chopped onions ,sprinkle some salt and fry till golden brown.
  • then add ginger garlic paste and saute till raw smell leaves.
  • and add maida keep stirring evenly for 2minutes.
  • Now add the tomato puree and allow to boil for 2 minutes and add all the dry powders and keep stirring
  • till it become thick paste.
  • Then add enough water (1 cup or more) and salt , mix well .
  • This should be thin and cook covered.let it boil for sometime.
  • Meanwhile heat a tawa and fry the marinated paneer ,bell pepper,onion and tomato lightly.
  • then add the fried items to the boiling masala.
  • Stir well and simmer for another 2 minutes.
  • Now the panner tikka masala is ready to serve hot .
  • It suits well with Naan,Roti,Pulav,chapathi and dosa also.

Idly Manchurian/Easy Idly Manchurian


       Idly Manchurian,this is an Indo chinese recipe,very delicious and easy, quick recipe.This is not deep fried idlies...oven fried.for Kids this would be a delicious option instead of having it a plain idly.

Ingredients


Idly Fry
  1. Left over idly    4 no.s(cut in to bite size pieces)
  2. corn flour    1and 1/2 tbsp
  3. Salt    a pinch
  4. orange food color   a pinch(optional)
  • Pre heat oven to300 F                 
  • Take a bowl ,add corn flour,orange food color and pinch of salt mix well.
  • using water make it a thin batter..
  • now mix the cut idly pieces well with the batter.
  • Take a oven safe vessel ,spread some oil and add the idly pieces and bake it for about 10-15minutes or till it become crisp and dry.
For Manchurian sauce
  1. Onion   1/2 (diced or chopped)
  2. Green Bell Pepper   1/2 (diced or chopped)
  3. Garlic   2no.(finely chopped)
  4. Soy sauce   1 and 1/2 tbsp
  5. chilli sauce   1/2 tbsp
  6. Ketchup   2 tbsp
  7. Chilli powder    1/2 tsp
  8. corn flour   1/2 tbsp (dissolved in 1/4 cup water or less)
  9. water    1/3 cup
  10. Salt    1/2 tsp
  11. Oil    2 tsp
Method
  • Heat oil in a sauce pan,add finely chopped garlic and add diced onion and bell pepper.
  • Sprinkle some salt and saute till transparent .
  • Then add chilli powder and fry well.then add all the sauces stir well.
  • Then add water and allow to boil .
  • When it starts boiling add corn flour water and stir well.
  • Keep stirring till it get little thick (like sauce), then add the fried idly pieces and mix gently.
  • Lastly add some chopped spring onions and coriander leaves.
  • Its done!!!  Serve Hot..

Veg Paneer Chapathi Roll


Ingredients
  1. Chapthi/Roti/Tortilla      5 no.s
  2. Paneer      1 + 1/4 cups
  3. Carrot    1no.( thin stripes)
  4. Capsicum/Bell Pepper   1 no.(Medium size-finely chopped)
  5. Onion    1 no.(sliced)
  6. Green chili    1 no.(finely chopped)
  7. Ginger-Garlic paste    2 tsp
  8. Tomato   1no.(small size-finely chopped)
  9. Chilli powder    1 tsp
  10. Garam masala     1 tsp
  11. Curry powder      1/2 tsp
  12. Jeera/Cumin seeds    1/2 tsp
  13. Fennel seeds   1/4 tsp
  14. Corinader  leaves    1/4cup(finely chopped)
  15. Salt as needed
  16. Oil   1 tbsp
Method
  • Heat oil in a wide pan,add jeera and fennel seeds when it splutter add onions and green chillies.
  • Fry till onions get half transparent and add the ginger garlic paste.
  • Saute till raw smell og ginger-garlic leaves.
  • Add the finely chopped capsicum,fry for a minute and add the striped carrot pieces.
  • Stir well and keep sauting till carrots get soft , then add chopped tomato and stir well.
  • Now add chilli powder and curry powder,enough salt and mix well.
  • Fry this masala for a minutes and add the shredded Paneer mix everything well.
  • Then sprinkle the garam masala powder evenly and stir well.
  • Add chopped coriander leaves and stir well.
  • Now the veg paneer stuff is ready for the roll.
  • Allow the paneer masala stuff to cool .
  • After that take a chapthi ,keep the filling stuff at the one end of the chapathi and roll tightly.
  • Insert a toothpick to hold the ends .
  • Now the Veg Paneer chapthi Roll is ready to serve.
  • No need for any special side dish ,it can be served as such or with tomato ketchup .

Idly Fry / Podi Idli Fry


This is a very yummy recipe which is made with left over idlis. You can serve this as a tea time snack
for your kids or for Breakfast. Sure they will love it. This Idly Fry is my kids' favorite recipe and I usually make it for their evening snack. I used Curry Masala powder, it gives good taste and nice flavor. It is one my kitchen essentials or my secret ingredient, just use a very little or sprinkle them in all ur curry dishes, potato fry, cauliflower fry, maggi noodles, sandwich masala, etc. Definitely it will add special flavor and taste to your dish. Aloo Capsicum Curry/ Potato Capsicum curry

Potato n Capsicum/Bell Pepper is one of the classic combo loved by many of us right?! Its our favorite too, especially this curry/sabzi. This is another simple and yummy recipe which goes well with any kind of meal. I mostly make this for chapathi for dinner. As the potatoes are cooked covering it turns so soft n the masala were well coated n absorbed by it which in turns spicy n delicious n perfectly matches with phulkas/rotis. In the ingredient picture, its with gold/yellow potatoes but today i used red potatoes/salad potatoes. The spice level mentioned in the recipe will yield u a mild spicy curry. Now to the recipe...
