Homemade Curry Masala Powder / Curry Masala Powder Recipe

Curry Masala Powder is nothing but a spice powder similar to Garam Masala Powder or chicken masala powder etc. I love this Curry Masala Powder flavor a lot n i used to add it in most of my fry, varuval, sabzis, masala rice etc. If u are my reader for long time u might noticed that :) Really i love this masala powder in my cooking, this not too strong n spicy like Garam Masala powder but gives lots of flavor n unique taste to your dishes. I mostly use store bought Curry Masala Powder either Shakthi or Aachi Brand. When i googled for the recipe i couldn't find the perfect spice powder mix, there's for only Curry Powder recipe which is different from it. But i got the recipe here n also referred the Ingredients list at the back of Store bought masala packet. I added everything in the list except Jathi Kai but the home made curry masala powder was so flavorful n my Potato Fry Tasted awesome with this Masala. Ingredients
  1. Coriander Seeds      1/2 cup or less
  2. Cumin Seeds         2 tbsp
  3. Fennel seeds     3 tbsp
  4. Pepper Corns       1 tsp
  5. Black Mustard seeds     1 tbsp
  6. Dry Red Chili      5no.
  7. Methi seeds/Fenugreek seeds    1/4 tsp
  8. Curry leaves       15-20 leaves
  9. Ground Turmeric/Turmeric Powder      2 tsp
  10. Ground Ginger/Ginger Powder     1 tsp
  11. Cinnamon      3" stick 2 no.s
  12. Clove      10 no.

Method
  • Heat a pan, dry roast all the ingredients one by one separately for 4-5 minutes or till aroma comes.
  • Coriander seeds,methi seeds,mustard seeds will pop lightly when u roast them, so roast until the popping sound stops.
  • Roast Everything in medium heat, do not stir the spices frequently, just toss them gently.
  • I did not roast turmeric n ginger powder, simply added it while grinding.
  • Allow the mixture to cool for a while n then blend it to a fine powder.
  • If u want, can sieve it and store it in air tight container.

  16. This recipe looks so good and I would love to make it but I am not understanding how to make all the different pastes. Also what are curds? And do you actually need curry leaves? Can you just use curry seasoning?

    1. Adding curry leaves is optional, u can omit that if u don;t have.
