Potato and broccoli are my family's most favorite vegetable and we love it any form. I often make dishes with these two veggies atleast a simple stir fry or a oven roasted Broccoli. Today's recipe is also one such simple and easy to make stir fry that i made for lunch on a lazy day. Some days i make an elaborate south indian lunch with sambar, rasam, poriyal, varuval, papad or chapathi, any veg curry, raita for lunch. But some days either simple rasam or curd rice with this potato stir fry.
This time have few florets left in the fridge, so thought of adding it to the potato fry and sure its an awesome and flavorful combo. The fry tasted yumm with rasam and rice. We just loved it..This Broccoli Potato Fry does not involve much spices and mildly flavored with garlic. Very simple and easy to make side dish that pairs well with any Indian Meal.

Vazhakkai Varuval / Vazhakkai Fry / Spicy Raw Banana Fry
This is one of the simple & quickest stir fry that pairs well with any kind of south Indian meal - with sambar, rasam & curd/Yogurt or with one pot meal like Arisi Paruppu Sadham, Sambar Sadham, Bisi Bela Batha and even with Variety rice like Lemon Rice, Tomato Rice, Curd rice. Mr.V even like this fry to eat like appetizer, he finish this whole bowl in one go. He loves this kind of fry a lot and Potato Fry is his most favorite. Mostly i cook Vegetarian on all special occasions and if i ask him for the menu his choice will be Sambar, Rasam, Potato Fry, Medhu Vada & Vermicelli Payasam. I love to talk about his favorites and liking a lot but will stop here and move on to the recipe. I have already posted a simple Vazhakkai Stir Fry but this is little different from it which involves tempering and also the addition of onions which took this simple fry to next level with lovely flavor and caramelized onions with the spices smells and tastes so good that cannot be explained you have to feel it, so next time when u get Raw Banana or Vazhakkai try this simple and easy to make fry without fail and please feel free to share your lovely feedback. Callaloo Stir Fry / Amaranth Stir Fry / Mulai Keerai Poriyal
After a way long time i find this Amaranth Leaves / Mulai Keerai in the local Grocery store, like Indian here we do not get varieties of Greens only spinach. And in Indian Grocery store can get Methi leaves and rarely Drumstick leaves & Sorrel Leaves. During our this month's visit to Chicago's Devon street shopping i am happy to saw this Amaranth leaves in one shop in the name of Callaloo. I have no idea on the name but the leaves look like that of Amaranth leaves/Mulai Keerai. So i searched on web for Callaloo and finally happy to know that its same Amaranth leaves with different name. Soon i picked a bunch of it since i love Mulai keerai poriyal and masiyal a lot. After coming home next day made this poriyal and loved it so much. Wanted to try Keerai Masiyal with it soon.
Callaloo Stir fry is one such quick and healthy stir fry which can be served with plain rice or as a side dish with variety rice, sambar sadham, rasam n rice. I served with Rice & Tomattilo Dal, that was a delicious & filling combo.

Potato Capsicum Stir Fry / Potato Fry / Varuval
After 10 days of sickness now getting better n hope to recover completely soon. Thanks a ton friends for all your Prayers n Wishes. As per my schedule i will be posting my Blogging Marathon posts this week. Last week for I am not able to do BM - Indian Basic theme,as i didn't prepare rough draft n also it requires more writing n a elaborate recipe since i was struggling lot with my headache n dizziness. So i quit that week from Blogging Marathon. But This week I will be posting under the "Theme - Dry Vegetable Saute". Potato is my Family Favorite vegetable n i often do this Sliced Potato Fry. But for a change this time added 1/2 cup of chopped capsicum n masala powder to my fry. It was so flavorful n yummy, we had this potato capsicum fry with Mixed Beans Dhal Bhat. Very Simple Recipe, even kids will love this stir fry if it made less spicy. So please adjust spices to your taste. For this fry i used Yukon Gold Potatoes n Red Potatoes. Both tastes good for stir fry/curry/roasting. Now to the recipe...

Brinjal Roast With Garlic N Fennel Seeds
Recently 2-3 years back only i started eating Brinjal and now its became my fav veg. During my childhood days i am allergic to Brinjal then i stopped eating them completely. My mom's Brinjal Fry and Ennai Kathirikkai Kuzhambu is my fav and never got that taste when i tried. Garlic and Brinjal combination is really good for feeding mothers. Today's recipe one such recipe which my mom makes specially for my after my delivery. I made this roast with one full pod of garlic if u doesn't like more garlic you can reduce it too 4-5 cloves or to taste. But don't comprise with adding fennel seeds , really fennel seeds gives nice flavor n some unique taste to this Brinjal roast. This roast goes well with Sambar/Curd/Lemon rices. I loved it a lot. Sliced Potato Fry / Urulai kizhangu Varuval / Easy Potato Fry
I know most of us love this simple yet very tasty n spicy potato fry.Which goes very well with sambar/rasam/curd n any variety rice.Perfect combo potato fry n curd rice isn't it?? I made this very long back n completely forget about this tasty recipe.Few days back when i was viewing my kid's old photos i happen to see some pictures of potato fry,egg fried rice,chettinad chicken curry etc. and thought y i left these recipes n its not late to include them in my blog.This potato fry is my H's favorite and he like to have it as an appetizer :) I made the fry with chilli n turmeric powder ,you can also try with freshly ground pepper n turmeric that also will taste good with rasam & rice..so spicy n flavorful fry.Now will see the chilli potato fry here as follows...

Vazhakkai Varuval - Chettinad Style
Hello dear buddies, wishing y'all a happy friendship day. Its better to late than never..so here's my belated wishes to you all. Hope you had a very great weekend with your friends & family.
Coming to today's recipe -Vazhakkai varuval chettinad style, actually this is a chettinad chicken varuval recipe. I changed this to a vegetarian varuval with Vazhakkai. So spicy n flavorful varuval. Adjust the spices to your taste..All I can say that this is a must try recipe :) So good with any variety rice or Rice with just sambar/Rasam.

Broccoli Chapathi Stir Fry
This is a yummy stir fry with chapathi pieces...a kids loving recipe which perfectly suits for their lunch box..I packed this stir fry for my H's lunch box n he said it was so good to eat for lunch also,remains soft n fresh n tastee too.So you also try this delicious stir fry your Kids.Hope you all like this recipe.You can also try this recipe with Idly n Parotta also. Assorted Veggie Fry
For the first time i am posting the recipe which was not cooked by me...thn who?? its my dear "H" who made this mixed veg fry and also named it as "Assorted Veggie Fry" :) very interesting right??? I love to cook only on week days...on weekends its a tough task for me i hate to enter kitchen...in case of chicken i love to try some new recipes from other blogs..other than that i hate to cook on weekends :( So sometimes my H rocks in the kitchen with his cooking talents.Few weeks back one Saturday he prepared this fry along with Rasam n microwave papads...yet simple but was a great tasty lunch for me.As soon as he entered the kitchen,my house was fully filled with spicy aroma and was irresistible so i want this recipe to be in my blog and asked him what else he used for this fry n made a note of it..For this fry He used 2 frozen vegetable packets,...1 cauliflower,broccoli,carrot another one onion all color bell peppers...He didn't ask me for recipe he himself made stir fry with his knowledge and the result was so yummy n the only bad thing was he used more oil :( If you want to taste to eat something aspecial,easy and very tasty try this assorted vegetable fry...
Ingredients
- cauliflower 1/2 cup (cut in to small florets)
- Broccoli 1/2 cup(cut in to small florets)
- Carrots 2 no.(sliced)
- Onion 1no.(sliced)
- Bell Peppers 1/2 cup sliced (red,yellow,green each)
- Garlic 3 no.s(crushed)
- turmeric powder 1/4 tsp
- chilli powder to taste
- curry powder to taste
- Crushed Pepper 1/2tbsp or to taste
- Salt to taste
- Oil 2 tbsp
- mustard seeds 1/2 tsp
- Chana dal 1 tbsp
- Heat oil in a sauce pan,add mustard seeds and allow to pop then add chana dal n fry lightly and add crushed garlic n onions fry for a minute.
- Then add all the vegetables,dry powders n enough salt stir well and cook in medium heat.
- Do not cover n keep stirring ,cook till vegs get cooked n turn little crispy..
- Serve as a side dish for any rice,pulav/biryani or rotis.

Cauliflower Capsicum Masala Stir Fry
I like cauliflower stir fry more than a poriyal n subzi..its so cook n very tasty too.This time i tried baking them.This method reduces time n energy.I made this as a side dish for simple rasam sadham,so i want to make it little spicy i added some freshly gounded spice powder.Its completely your choice to add the masala powder if you don't want avoid it n try in your usual stlye with baked one.really the fry gets ready in few minutes with little crispy n no moisture, a perfect stir fry.
Ingredients
- Cauliflower 1 medium(cut in to small florets)
- Capsicul/Bell Peppers(red,orange,green) thinly sliced
- Onion 1 medium(thinly sliced)
- Chilli powder 1/2 tsp
- Red Chilli flakes 1/2 tsp
- Turmeric powder 1/4 tsp
- Mint leaves very few
- Spring onion greens few (finely chopped)
- Salt as needed
- Oil 1 tsp
- Cinnamon 1/2 " stick
- Clove 2 no.s
- Poppy seeds 1 tsp
- Fennel seeds 1/2 tsp
- Cumin seeds 1/2 tsp
- Pepper corns 5-6 no.s
- Roast the ingredients under "to roast n grind" without oil for a minute and cool it and make a fine powder of it n keep aside.
- Wash n Cut the cauliflower in to small florets n grease the baking tray with oil and spread the florets along with sliced capsicum/bell Peppers,sprinkle salt n chilli powder and bake them at 400 degree F for 25 minutes and left it till start cooking.
- Heat oil in pan,add onions and fry lighty then add the baked cauliflower n bell peppers add the roasted n grounded spice powder,red chilli flakes and mix well and stir fry for 1-2 minutes or till raw smell leaves.
- Then add the spring onion greens n mint leaves and fry for a minute and lastly add some finely chopped cilantro and mix well n turn off the stove.
- Spicy n tasty stir fry ready now...serve as an accompaniment of your choice.

Boiled Potato Fry / Simple Potato Curry
This recipe was taught to me by my neighbor sister. She was a catering student n i learnt more restaurant style recipes from her. This recipe is masala stir fry of hard boiled potatoes.The original recipe was to fry the potatoes in butter but i used oil only. Broccoli Stir Fry Recipe
This is a simple n easy stir fry,ready in few minutes. This is a great side dish with any kind of meal of any cuisine. Good as side dish with rice & Rasam, chapathi and even as a sandwich filling. We love this simple Broccoli Sti Fry recipe to the core...adding garam masala is completely optional and the same stir fry can be done with freshly ground pepper instead of chili powder. I think, broccoli is the only veg looks pretty & colorful even after cooking...here you go..

Stuffed Okra Fry
This is very tasty crispy okra fry with stuffed masala....I like adding more onions to this fry...
the recipe follows:
Ingredients
Okra 1/4 kg
Mustard seeds 1/4 tsp
Jeera/Cumin seeds 1/2 tsp
Curry leaves few
Onion 1no.
Stuffing masala:
turmeric powder a pinch
chilli powder 1/2 tsp
Coriander powder 1/4 tsp
Cumin powder 1/2 tsp
Garam masala powder 1/2 tsp
Amachur powder/Dried mango powder 1/2 tsp
Salt 1/4 tsp
Method
- Take a small bowl and add all the stuffing ingredients and mix well.
- Cut the 2 ends of the okra and make slit vertically.(see picture).
- Take a small amount of prepared masala powder and stuff the okra with the masala.
- Do for all the okra and keep aside.
- Heat oil in pan,add mustard seeds,cumin seeds when it pop add curry leaves and onion.
- Fry the onion for 1 minutes and add the stuffed okra and stir well.
- Now add remaining masala powder and enough salt and mix well.
- Stir fry for a minute and close the pan with lid and cook for 2-3 mniutes.
- Then open the lid and stir well and keep frying open in low heat till the okra are cooked well.
- Once it done turn off the stove and leave the pan in the stove for few minutes..so that the okra get crispy.
- then serve hot ..it goes well with sambar rice,curd rice and other variety rice also.

Cabbage Poriyal / Cabbage Stir Fry
Poriyal is a side dish made using any vegetable and traditionally served along with rice. But it can also be served with chapathi/dosa and sometimes u can this for ur sandwich filling. This Cabbage stir fry or poriyal is a simple & delicious side dish that can be made in a jiffy. Cabbage is rich in fiber content and its good to include it in ur meal daily or often. This is a low calorie stir fry with more nutritional benefits. I like to add turmeric to all my cooking, since turmeric has lots n lots of health benefits, healing properties and much more values.
