Today's recipe is a simple version of Brinjal Gravy which served for as a side dish for Biryani/Pulao. This is not the authentic version with dal & meat broth but a quick version with peanut-sesame seeds addition. I also added some roasted potato chunks as we love potato in curry/gravy. I planned to serve this with Tomato Biryani & Frozen Rotis for our lunch.

Aloo Baingan Recipe / Punjabi Aloo Baingan / Potato Eggplant Curry
Today's recipe is a simple, flavorful and delicious side dish, Aloo Baingan / Potato Eggplant Curry. Again this is another recipe shared by my neighbor Aunt from whom i learnt making Punjabi Kadi Pakora and Punjabi Garam Masala Recipes. But this time, this Aloo Baingan is prepared by me, where as the Kadhi & Garam Masala are prepared by Auntie and I took pictures alone.
One fine day on a casual talk with her, she said the gonna prepare Aloo Baingan and Rotis for dinner. At first on hearing Aloo Baingan, i Thought that it as Baingan Bharta with some mashed potato and was curious to know the exact method of Aloo Baingan. But than she told me that Baingan Bharta is different and Aloo Baingan is different and also the recipe for the later one. I was impressed with the recipe and the very next day i prepared it at home and shared with her. After tasting it, she said that it is little spicy than her version and perfectly cooked masala and yummy too. Whatelse i want, she never fails to appreciate me after tasting my recipes, Aunt and the whole family loves my cooking and Bhaiya always suggest me to open an Indian Restaurant ;) Yeah, that's my dream too and hope it happens one day !! Now off to the recipe...

Baigan Masala Dosa
Today's recipe is an interesting recipe with a left over dish. I have tried Broccoli Potato Masala Dosa,Cauliflower Masal Dosa,Tomato Masala Dosa,Mushroom masal Dosa and here comes Baigan Masala Dosa with left over Baigan Bharta. This time Eggplant which i bought was too big and i made Baigan Bharta in huge portion. After using it for lunch and dinner and i had some left over. Not willing to eat them again in same way, so wanna tried some masala dosa with Red Chutney. Really it was different and so yummy with Red chutney combo. But on that day my kids were not feeling well, so i couldn't concentrate more on the presentation n picture, Simply i clicked few shots and finished the session. Trust me,Its really worth to give a try. Now to the recipe..

Baingan Bharta / Bhaigan Ka Bharta Recipe
Today's recipes is Punjabi Baigan bhartha which means Mashed Brinjal / Baigan means Brinjal and Bhartha means Mashed. The traditional way of this Punjabi recipe includes roasting the eggplant/brinjal in clay oven or directly roast them on fire but i used Microwave. I love this recipe a lot. I came to know about this recipe from Manjula's Kitchen. Later i started experimenting myself. I like to add peas to my baigan bharta it looks and tastes so good. The recipe as follows..

Brinjal Roast With Garlic N Fennel Seeds
Recently 2-3 years back only i started eating Brinjal and now its became my fav veg. During my childhood days i am allergic to Brinjal then i stopped eating them completely. My mom's Brinjal Fry and Ennai Kathirikkai Kuzhambu is my fav and never got that taste when i tried. Garlic and Brinjal combination is really good for feeding mothers. Today's recipe one such recipe which my mom makes specially for my after my delivery. I made this roast with one full pod of garlic if u doesn't like more garlic you can reduce it too 4-5 cloves or to taste. But don't comprise with adding fennel seeds , really fennel seeds gives nice flavor n some unique taste to this Brinjal roast. This roast goes well with Sambar/Curd/Lemon rices. I loved it a lot. Stuffed Brinjal Curry / Spices Stuffed Brinjal in Tamarind Curry
Brinjal,favorite veg of my family.We all love it in any form. Last week i tried brinjal curry with spice powders stuffing which i already used for stuffed okra fry. This is entirely different from my Enaai Kathrikkai Kuzhambu. I added little tamarind juice to the curry and it was mild tangy and full flavor with the spices and was excellent with hot white rice n pappad.
And also it suits well as a side dish for Rotis/Stuffed Paratha/Parathas. Try this !!!

Brinjal Poriyal/Kathirikkai poriyal
Theres no south Indian lunch without Poriyal.I like all poriyals n fry very much...I love to add more chana dal and coconut to my poriyals... before marriage i wont eat any poriyal without chana dal n coconut(fresh shredded coconut)..i use to scold my mom a lot if she make without these two...But after marriage everything has changed,now i wont add coconut to any of my poriyal..i substitute with cooked tuvar dal,moong dal and some jeera powders(healthy choice,i am happy with that)...My hubby wont eat if i add coconut ..changed lot in each n every aspect after marriage ,i think this happens to many of u too right?? ok no more stories...heres the recipe:
Nutritional Benefits of Brinjal:Eating brinjal is an effective way of maintaining blood cholesterol levels. Avoid eating brinjal if you have acidity problem.Avoid eating brinjal during pregnancy.Brinjal is an anti-diabetic.
Ingredients
- Brinjal 1 lb
- Onion 1 medium(finely chopped)
- Chilli powder 1 tsp
- Curry leaves 1 sprig
- Chana dal 1 tbsp
- Mustard seeds 1/2 tsp
- oil 3 tsp
- Sesame seeds(white) 2 tsp
- Dalia 1 tbsp
- Jeera/Cumin seeds 1tsp
- Curry leaves few
- Cut brinjal to your desired shape n size..keep it in water until use.
- heat a small pan,add the dry roast ingredients and roast for 1-2 minutes,cool and grind it to a fine powder and keep aside.
- Heat oil in a wok,add mustard seeds and wait till it pop and add chana dal and fry till golden brown.
- then add curry leaves n chopped onions,and fry for 1-2 minutes and add cut brinjal(drained),turmeric powder and fry for 4-5 minutes...(this gives nice aroma n taste).
- Then add chilli powder and enough salt,mix well,sprinkle some salt and cook briefly.
- Lastly add 2-3 tsp of roasted n grounded jeera powder, mix well and turn off the stove.
- Excellent and tastee brinjal/kathirikkai poriyal is ready now.
- Serve with any variety rice..i like to have with plain hot rice n sesame oil on top...mmm.yum...

Easy N Simple Vaangi bhath (brinjal rice)
I love Brinjal/Eggplant/Aubergine in all forms and particularly when sauteed n mixed with rice is my favorite. As the traditional Vaangi bhat recipe involves more time and also a lengthy preparation I always prefer this Brinjal rice. To me, this is very simple and quick Brinjal rice/Vaangi Bhat. And is one of my H's favorite lunch box recipe. This rice recipe requires very simple/common ingredients with few Indian spices. This Brinjal rice doesn't require any special side dishes, simple potato chips/papad or pickle is enough. The recipe as follows...
