Today's recipe is an another popular South Indian food, Sambar Idli Recipe. Sambar Idli is nothing but soft mini idlis dunked in ghee flavored Sambar. The Sambar Idlis will be soft and soaked well in hot sambar, full of flavors and taste. My kids doesn't like Idli with Sambar or Chutney poured on top of Idlis. They prefer served in separate dipping bowl. But, recent years they started liking Sambar Idlis with ghee and some finely chopped onions on top. I also prefer to grease mini idli plates with ghee instead of oil for extra flavor and taste. Homemade Ghee gives special flavor and taste. Sambar Idli is one wholesome meal best for growing children to have for their breakfast.

Masoor Dal Sambar / Masoor Dal Sambar Using Pressure Cooker / Pressure Cooker Sambar

Masoor Dal Sambar using Pressure Cooker. You Might think what's new in this? We usually cook dal in pressure cooker then why the title using Pressure cooker, Right? Yes.,this is bit different from our regular sambar in which the entire process is done in pressure cooker and it takes 20-25 minutes. No need to cook dal separately just saute onion, tomato, veggies and dal and cook together for 2 whistle that's it Sambar Ready. Sounds Interesting? As i said early, i always prefer quick fix meal that takes 30 minutes or less to make the complete meal. Like the Pressure Cooker Channa Masala Curry this Masoor Dal Sambar is one such recipe that doesn't require prior cooking process and the entire dish is made in pressure cooker. you can cook sambar and rice, stir fry simultaneously and everything will be ready in 30 minutes. Unlike Tuvar dal, Masoor dal cooks faster and no need to cook it separately. I often make this Masoor dal sambar with any desired veggies. Here, i used Brinjal, Drumstick, Radish. Only thing is you need to chop veggies little big chunks so that it will not turn mushy after pressure cooking.

Instant Tiffin Sambar / Pottukadalai Sambar / Easy Tiffin Sambar

Instant Sambar / Pottukadalai Sambar is a quick and instant sambar that does not need lentils/dal and can be made in a jiffy. This Instant sambar pairs well with all the South indian breakfast items Idli, Dosa, Pongal, Medhu vadaUpma, Paniyaram. Long back saw this recipe from Jeyashri's Kitchen and this is my family favorite sambar and have been cooking this every weekend for Pongal or idli but this time only got time to take pictures.
If i have mood to cook or enough time, will chop some veggies like carrot, yellow pumpking, peas, brinjal to this sambar or else this is my version. Thanks a ton Jeyashri for this quick and instant recipe, this Sambar
comes handy and most of our /Saturday's breakfast will be Ven Pongal and this Instant Sambar. Even On this New year's day i prepared this sambar and clicked picutres.

Vengaya Sambar / Onion Sambar

Onion Sambar / Vengaya Sambar, very tasty, flavorful and quick sambar recipe. If u have cooked dal in  hand then it takes only 10 minutes to make this sambar. This is my version of Vengaya sambar with very simple ingredients. Here i used both small onions/pearl onions n onions but for more taste n flavor use only small onions. This tastes great with rice, dosa, paniyaram, Ven Pongal etc.

Murungai Keerai Sambar


   This is my grandma's recipe.I like murunga keerai in any form,this sambar is so different and much flavor,very authentic south Indian recipe.

Nutritional Benefits of Drumstick Leaves:  drumstick pods and leaves are of great value as sources of acrotene, calcium, phosphorus and vitamin C.The leaves of the drumstick plant have great nutritional value. It contains 38 percent protein with all amino acids, making it a richer source of proteins compared to other vegetables


Ingredients
  1. Drumstick leaves    1 bunch(remove from the stalk n keep aside)
  2. Tuvar dal    3/4 cup
  3. Garlic    3-4 no.s
  4. Onion (pearl onions)     10-12 no.s
  5. Tomato     2 medium(roughly chopped)
  6. Tamarind Paste   1/4 tsp dissolved in 1/4 cup water
  7. Red chilli powder     1 and 1/2 tsp
  8. Coriander powder    1 tsp
  9. Turmeric powder   1/4 tsp
  10. Salt   to taste
To Temper
  1. Oil/ghee     1-2 tsp
  2. mustard  seeds    1/2 tsp
  3. Cumin  seeds    1 tsp
  4. Fenugreek seeds/methi seeds    10 no.s
  5. Hing   1/4 tsp
  6. Chana dal    1 tsp
  7. Dry red Chillies   2-3 broken
  8. Curry leaves     few leaves.
Method
  • Cook tuvar dal with turmeric powder and 4 cups of water,when the dal is 80% done add pearl onions,drumstick leaves,tomatoes,garlic,chilli powder,coriander powder and enough salt, mix well and cook covered for 15 minutes.
  • Stir occasionally.
  • After 15 minutes,open the lid add the tamarind juice stir well and cook for another 5-7 minutes.
  • After that lightly mash the keerai sambar , remove from the stove and keep aside.
  • Now heat oil in a pan for tempering,add mustard seeds and fenugreek seeds and allow to pop then add cumin seeds,chana dal ,hing,broken red chillies and curry leaves fry lightly and add it to the cooked keerai sambar.
  • Mix well and now the murunga keerai sambar is ready..serve with hot plain ricewith ghee/sesame oil on top.

Note:Instead  of chilli n coriander powder you can use sambar powder also.My grandma use to season with the special thalippu vadagam,which gives more flavor.will try to post that recipe also.If u don't have pearl onions,use 1/2 large onion(chopped).Add few drops of castor oil while u cook tuvar dal which helps to cook faster.seasoning with ghee gives more taste n rich flavor to the sambar.

Pasiparuppu Sambar/Moongdal Sambar


      Moongdal sambar , i use more moongdal than tuvar dal...that too next day after eating chicken or spicy foods.this is a simple sambar ..no spicy..no vegetable and it can be prepared in few minutes.moongdal heals mouth and stomach ulcer.Compared to tuvar dal its rich in all nutritional value.

Ingredients
  1. Moongdal    3/4 cup
  2. Onion    1/2 finely chopped
  3. Tomato   1 medium chopped
  4. Kuzhambu milagai powder    1 tsp(not raw chilli powder)
  5. Coriander powder     2 tsp
  6. Sambar powder   1 tsp(optional)
  7. Tamarind     a small piece soaked in water &extracted
  8. Salt    as needed
To temper
  1. Oil   2 tsp
  2. Mustard seeds      1/2 tsp
  3. Cumin seeds/Jeera    1/2 tsp
  4. Fennel seeds        1/4 tsp
  5. Dry red chillie    1 (broken)
  6. Hing      1/4 tsp
  7. Curry leaves     few
Method

  • Pressure cook moongdal with turmeric powder and 3 cups of water to 1-2 whistles.
  • Once done,open the cooker and mash the dal and add milagai thool and coriander powder .
  • Mix it with "maththu" or spatula,then add finely chopped tomatoes and mash the tomatoes with the dal lightly.
  • Then add onions,enough water and add salt ,mix everything well and allow to boil.(the sambar should be little thick than the regular sambar).
  • Now add the tamarind extract or juice and stir well and boil for another 2-3 mniutes.
  • And now the moongdal sambar is ready for seasoning/tempering.
  • Heat oil ina pan and add all tempering ingredients one by one and allow to splutter ,then add it to the sambar and mix well.
  • Finally add some chopped coriander leaves..thats it the moongdal sambar is now ready to serve how with plain rice.
  • It also goes well with dosa.

Tiffin Sambar / Hotel Style Tiffin Sambar


       This sambar is perfect for all tiffin items like idly, dosa, vadai, pongal, uthaappam, rava dosa, upma, masal dosa, sambar vadai n etc. For authentic taste and flavor the sambar should be tempered with ghee. Tempering with ghee gives more & real taste of Hotel sambar. But I used oil, adding ghee is purely optional, ghee will enhance the richness and flavor but anyway with oil also sambar tastes great. A Must Try recipe!!!

Vendakkai Sambar / Okra sambar / Okra Lentils Stew



Ingredients
  1. Thoor dal / Tuvar Dal    3/4 cup
  2. Sambar onions     8-10 no.s(chopped) or medium onion isliced
  3. Tomato    1 no.(chopped)
  4. Vendakkai/okra    1/2 lb(cut in to 1/2" pieces)
  5. Sambar Powder    1 tsp(optional)
  6. Chilli Powder    1 tsp
  7. Coriander Powder   2 tsp
  8. Shredded coconut   1tbsp
  9. Tamarind paste    2 tsp(dissolved in 1/4 cup water)
  10. Curry leaves     few
  11. Coriander leaves    few 
  12. Salt   as needed
To temper 
  1. Oil     2 tsp
  2. Mustard seeds     1/2 tsp
  3. Jeera      1/4 tsp
  4. Fennel seeds       1/4 tsp
  5. Hing       1/4 tsp
  6. Pepper corns   3no.s
  7. Curry leaves    few
Method
  • Pressure cook thoor dal for 2-3 whistles mash and keep aside.
  • Heat a pan add few drops of oil and fry the okra pieces for 3-4 minutes and keep aside.
  • Heat oil in an available vessel and add all the tempering ingredients one by one ,and allow to splutter .
  • Then add onions and saute till onion get transparent.
  • And add the chopped tomatoes and fry well.
  • Now add the sambar,chilli and coriander powders,stir well and fry lightly.
  • Then add the mashed dal with water stir well and allow to boil .
  • When it starts boiling pour the tamarind juice mix well and again allow to boil for sometime.
  • Then add the fried okra/vendakkai, shredded coconut and mix well.
  • Cook for 2 minutes lastly add some coriander leaves and close the vessel with lid and leave it for sometime.
  • Now the vendakkai sambar is ready to serve.
  • Serve with hot plain rice with ghee on top.

Notes:
Adding sambar powder is optional. the updated pic Sambar is without sambar powder.
After adding okra do not cook sambar for long time.

Idly Sambar / Idly Batter Sambar


        My Grandma often make this sambar for idly. We really love this sambar with soft idlis.This Sambar is different from usual tiffin sambar, this invvolves the addition of idly batter to the sambar which gives unique taste to the dish. This is one of the best combo for idly/dosa. This tastes good if u make it bit spicy. Addition of more green chilli n cilantro gives nice flavor and taste to the sambar.
