Chettinad Pakoda Kuzhambu / Pakoda Kuzhambu Recipe


Chettinad Pakoda Kuzhambu / Pakoda Kuzhambu is one of the authentic south Indian Kuzhambu of Chettinad Cuisine. Pakoda kuzhambu is nothing but a spicy and flavorful Masala Kuzhambu in which deep fried dal pakodas are added. I wanted to try this kuzhambu since long time and recently saw this in Nalinis space and bookmarked. As today Nalini is celebrating her birthday we friends decided to give her a virtual treat by trying recipes from her space under the theme "Tamizhar Samyal". She is running the same event "Tamizhar Tuesday Event" in which we share Tamil Nadu recipes 2nd and 4th Tuesday of Every Month.

Chettinad Fish Fry / Chettinad Meen Varuval / Masala Fish Fry - Chettinad Style

Today's recipe is a spicy n yummy Fish Fry from the popular south Indian Chettinad Cuisine. My kids love Salmon Fry but recently tried Fry with other fishes - king fish, Rohu fish. And also For a change tried Chettinad style fish fry. Me n H love Chettinad recipes and i cook often both vegetarian & non vegetarian recipes. This Chettinad Style Fish Fry is a spicy and tasty fry using freshly ground masala with pearl onions/shallots, ginger, garlic & other spices. This is a very simple and easy to make fish fry with ground masla and only one thing is necessary for this simple fry, that is marination duration, the more the resting time more the taste and flavor. I always marinate the fish by morning around 8-9 and make the fry around 2 or 3 pm. I shallow fried the fish but you can also deep fry or toast in tawa for healthier option.
This recipe was lying in my draft for more than 2 months and i completely forgot about it. Today while cleaning my disk i came across these pictures and decided to post it without any further delay. Now to the recipe..

Chettinad Chicken / Chettinad Chicken Masala

Chettinad Paruppu Paniyaram N Thakkali Chutney


               Paniyaram is one of my favorite breakfast. And now its became favorite of my kids too. They love this small ball shapes...and will enjoy eating these balls without troubling me :)
Chettinad recipes are not familiar to me...but i tried some chettinad veg n non veg recipes from other blogs and websites. And this Paruppu paniyaram , I watched in TV cookery show by chef Jacob...He added only the cooked n mashed tuvar dal and seasoned with thalippu vadagam. But i tried with my own creativity and changed the recipe entirely to my taste. Result was awesome and it was a very delicious n filling breakfast. Paniyaram on outside it turns super crispy and inner it was so soft n moist.(like idly).Addition of tuvar dal to the batter gives protein rich paniyaram and i used ghee to cook paniyaram.So both protein and fat rich food. you can use oil also but ghee/butter gives nice flavor n rich taste to the dal/Paruppu paniyaram.

Masala Cheeyam - Chettinad Snack


             Another interesting snack recipe from Chettinad Cuisine.Some of you may not be knowing about chettinad n its famous cuisine..so to know more about the term Chettinad..just click here  :-)This snack is so easy to prepare n very yummy crispy snack perfect with khara chutney or any spicy sauces.This is a deep fried snack once a while can enjoy such yummy snacks which suits perfect for this monsoon weather along with a cup of hot tea/coffee.I am not so familiar of chettinad recipes but like some of those hot hot delcious chicken recipes tried from other blogs n websites.The actual recipe of masala cheeyam involves seasoning of onion n other ingredients but i tried without seasoning like we do for other vada recipes.it came out good n we enjoyed with chilli garlic tomato sauce.So, here u go..

Ingredients
  1. Raw rice   1 cup
  2. Par boiled rice   3 tbsp
  3. Urad dal   1/2 cup
  4. Sago/Javarisi    1 tbsp
  5. Onion    1 medium(finely chopped)
  6. Ginger   2" piece(finely chopped)
  7. green chillies   3-4 no.s(finely chopped)
  8. Coconut    2 tbsp(small pieces or shredded)
  9. Curry leaves    few(finely chopped)
  10. coriander leaves    3 tbsp(finely chopped)
  11. Salt     to taste
  12. Oil    for deep frying.
Method


  • Soak rice ,dal n sago together for 1-2 hours and grind to little thick batter(like idly batter).
  • Then transfer the batter to a bowl and add all other finely chopped ingredients,salt n mix all together.
  • Heat oil in a kadai for deep frying,when it gets hot just drop lil' batter using hand or spoon and fry till turns crisp n golden brown.
  • Once done remove from the oil ,drain it in paper towel and serve hot with any spicy chutney/sauce. Enjoy hot :)

Note:
If you don't have par boiled rice just add 3/4 cup urad dal n other ingredients as such n try .
You can also add mustard,urad dal seasoning to the batter n deep fry them.

Vazhakkai Varuval - Chettinad Style


    Hello dear buddies, wishing y'all a happy friendship day. Its better to late than never..so here's my belated wishes to you all. Hope you had a very great weekend with your friends & family.
Coming to today's recipe -Vazhakkai varuval chettinad style, actually this is a chettinad chicken varuval recipe. I changed this to a vegetarian varuval with Vazhakkai. So spicy n flavorful varuval. Adjust the spices to your taste..All I can say that this is a must try recipe :) So good with any variety rice or Rice with just sambar/Rasam.
