If you love South Indian Style Chicken Chukka Fry then this recipe is a must try. One of the best chicken chukka fry that can be served as an appetizer or as an accompaniment with Mild Pulao or Plain Biryani or with simple Rasam and Rice combo. After Purattasi Month, last month prepared this chicken fry and plain biryani for Sunday Lunch. This is similar to my Mil's chicken fry. She makes very spicy chicken fry using kuzhambu chicken(chicken pieces cooked from the kuzhambu/Chicken Gravy). At in laws place no one likes chicken served in gravy or curry, they prefer to eat deep fried chicken or chicken chukka roast. So My Mil makes chicken fry from the gravy chicken(without Coconut) and serve the plain gravy with Idli/Dosa. I like my mil's chicken varuval and it is different from my Mom's recipe. Later came to know the method and secret ingredients are homemade spice powders. I have tried this chicken fry few times and last time clicked some pictures to share here.
As I planned to make Plain Biryani / Kuska Biryani, I needed broth, so instead of preparing kuzhambu or gravy I simply boiled chicken with enough water and used boiled chicken to make this easy and spicy roast. For this chicken Roast I recommend to use Homemade Chilli Powder(with lentils &spices) or Kuzhambu Milagai Thool for authentic taste and flavor. Also use Sesame Oil or Peanut Oil. Andhra style Chicken 65 / Hyderabadi chicken 65 recipe with step by step photos. Chicken 65 is an popular appetizer chicken recipe, that is prepared using boneless chicken with nice spices blend. Hyderabadi Chicken 65 is little different from the regular version, where the deep fried chicken is sauteed with spicy yogurt sauce. Few weeks ago I happened to watch this recipe video on you tube in telugu language by a popular restaurant's chef and impressed with it. Then I remember about the chicken 65 which we had in one of the restaurant near my place, it was really different from regular chicken 65 and the chicken pieces were nicely coated with spice powders. I thought they used to saute in spices after deep frying the chicken and tried it that way as per my guess. But the result was not good and chicken pieces turned dry and the masala did not coated with the chicken. Then after seeing that video I came to know that they use yogurt. At first I hesitated to try with yogurt, then first time tried with small amount for chicken and to my surprise it turned out good and it tasted almost same like the one we had in restaurant. Then decided to share it on my blog too. If you haven't tried chicken 65 this way, please give it a try this weekend, I am sure you will love this spicy, juicy and flavorful chicken 65.

Hope you all had a wonderful Christmas celebration and enjoying your holidays. We too had a good one. V is off this week, so its going to be a busy week, elaborate cooking, shopping and outing. Now coming to the recipe, Mutton Chukka Varuval/Mutton Fry, after a very long time I cooked mutton few weeks back. This is again my mom's recipe, very simple and easy to cook mutton recipe. Here I used little coconut paste for the varuval but you can skip coconut if you don't like but I recommend adding coconut paste, sure it give rich flavor and unique taste to the fry. Mom makes similar fry with chicken also.  Mutton Chukka is a spicy and delicious side dish that goes well with Biryani, plain rice and rasam and even with soft dosa. We had it with Chicken Biryani and raita. It was a filling and delicious weekend meal.

Chettinad Fish Fry / Chettinad Meen Varuval / Masala Fish Fry - Chettinad Style

Today's recipe is a spicy n yummy Fish Fry from the popular south Indian Chettinad Cuisine. My kids love Salmon Fry but recently tried Fry with other fishes - king fish, Rohu fish. And also For a change tried Chettinad style fish fry. Me n H love Chettinad recipes and i cook often both vegetarian & non vegetarian recipes. This Chettinad Style Fish Fry is a spicy and tasty fry using freshly ground masala with pearl onions/shallots, ginger, garlic & other spices. This is a very simple and easy to make fish fry with ground masla and only one thing is necessary for this simple fry, that is marination duration, the more the resting time more the taste and flavor. I always marinate the fish by morning around 8-9 and make the fry around 2 or 3 pm. I shallow fried the fish but you can also deep fry or toast in tawa for healthier option.
This recipe was lying in my draft for more than 2 months and i completely forgot about it. Today while cleaning my disk i came across these pictures and decided to post it without any further delay. Now to the recipe..

Chicken 65 / Indian Style Fried Chicken ~ Spicy n Juicy!

After a very long time I am posting a non-vegetarian recipe, and this is V's favorite chicken recipe. I started cooking/eating non-veg recipes only after my marriage and mostly I make Chicken Biryani or Chicken Curry and sometimes this chicken 65 for him. Initially I was not good at making chicken 65 & later learned myself to make a perfect crispy, spicy n juicy fried chicken from my faults.

Salmon Fish Fry ~ Indian Style !

      I hesitate to share any non-veg recipe since most of my blogger friends were pure veg :) That's y you don't see any non veg recipes now-a-days. And also i don't make them often and every time i use to try my bookmarked recipes from other blogs n sites. I learned and tried some recipes from my dear friend Malar's Kitchen Tantra. And also we do not eat any non-veg items except chicken, but my kids n Mr.V like this Fish fry. I make it monthly once or once in two months. This time i managed to take some pictures to share it in my blog. Couldn't present you well as kids were in hurry n hungry to taste this yummy fry :) Mr.V  buy only Salmon fillets, its easy to clean and it doesn't have any thorns...so easy to feed and my kids really love this Salmon Fillets Fry a lot. You can use this fish fry recipe to make any fish fry. Its very simple and quick except the marination time. I always prefer homemade masala i don't use store bought chilli fish fry.  I add some corn flour to the masala for extra crispy and tasty fry.   Now to the recipe...
