One of my friend called me Yesterday and appreciated me about my come back and said she loved all my Diwali recipes. She also mentioned that though all recipes sounds tempting and easy she can't do deep fry or do paneer from scratch. As my friend is working and she don't get enough time and patience to make sweets or snacks from scratch. So she requested to post any quick or almost Instant sweets & snack recipe, so that she can try for her family & friends this Diwali Occasion and thus I end up with this Rose Coconut Ladoo Post.

Hotel Style Vegetable Kurma or Chapathi Kurma recipe with step by step pictures. Today's recipe is a popular south Indian vegetable curry using coconut and cashew. This kind of kurma is served with Chapathi in Hotels, very flavorful and delicious kurma. Here, in US, most of the Indian restaurants don't serve this kind of kurma for rotis but in one of the local restaurant near to my house, they had Chapathi Kurma in their menu, they served chapathi & vegetable Kurma exactly the same way how they serve in Vegetarian Hotels in Tamil Nadu for Chapathi. The kurma was so flavorful, spicy and brought the memories of my home town Lakshmi hotel.

Kathrikkai Mochai(Avarai) Kottai Kuzhambu | Kathrikkai Mochai Kara Kuzhambu | Brinjal Field Beans(Dry Beans) Curry Recipe
Today's recipe is a popular south Indian Kuzhambu using Mochai or Avarai kottai, it is called as Val Beans or Field Beans or Dry Lima Beans in English. Kathrikkai Mochai Kara Kuzhambu is similar to Puli Kuzhambu nothing but a tamarind based curry with coconut. We use Kuzhambu Milagai thool for this kuzhambu. The real flavor and taste is achieved only by using kuzhambu milagai thool and tempering with Nalla Ennai(Sesame Oil). This is my Mom's recipe and she always uses Poppy seeds along with coconut to make coconut paste which gives unique flavor and texture to the kuzhambu. But adding poppy seeds is optional but I used in this kuzhambu. Now off to the recipe..

Even though I love cooking and baking I am not doing anything creatively. Some days are really bad and affect my mind badly and some days are OK, On one such day I pushed myself to cook a new recipe that I haven't tried or tasted before. After a long search I finally decided to cook this Nawabi Paneer recipe, as this paneer gravy is loaded with full of flavor and rich. First time cooked Paneer in coconut based gravy and it turned out so good. We all liked it a lot. If you are bored with your regular Paneer Recipes just try this Nawabi Paneer for a change and I am sure you will not be disappointed.

As chicken does not take more time to cook,this whole cooking process takes 30 minutes or less time. A complete meal in 30 minutes or less. Here, I used 1 cup coconut milk but you can skip or replace it with yogurt or chicken stock or simply cook with water. Coconut milk enhances the taste and flavor also using chicken or meat stock/broth gives rich flavor to the dish. Kale or borecole (Brassica oleracea Acephala Group) is a vegetable with green or purple leaves, in which the central leaves do not form a head. It is considered to be closer to wild cabbage than most domesticated forms of vegetables, wiki says. Kale is rich in Vitamin K, Vitamin A, Vitamin C, Iron, Magnesium, anit oxidants etc.,Most important health benefits of consuming Kale regularly helps in blood glucose control in Diabetes and also lowers the blood pressure. Though I cook Kale dishes often, never get a chance to click and share here.
Like Broccoli, Kale also suits well with Indian spices and Indian recipes. The taste of Kale Poriyal is similar to that Drumstick leaves Poriyal. Though the fresh kale has different flavor from Drumstick leaves, the cooked one tastes like Drumtick leaves. I love drumstick leaves recipes a lot, but I do not see here often. So, started using Kale in place of Drumstick leaves. This Kale Poriyal is a simple recipe and makes a perfect accompaniment for Rice & Rasam or with Curd Rice, Lemon Rice & Sambar Sadham. Idiyappam & Thengai Paal recipe with step by step pictures, steamed soft delicate Idiyappam dunked in sweetened coconut milk is my favorite dish. Its been long time I had Idiyappam with Thengai Paal, and last week for our weekend breakfast I prepared it and had it to my heart. Idiyappam is a popular South Indian Breakfast recipe, a steamed rice noodles that is prepared using rice flour. You can use homemade rice flour or store bought rice flour or Idiyappam flour for making Idiyappam. Idiyappam is served with vegetable stew or sweetened Coconut milk/Thengai Paal or any spicy Non-veg Curry.
I never had Idiyappam with stew or spicy gravy, Thengai paal or Sweetened Coconut Milk is my favorite combo. Here we rarely get good tender fresh coconut, so Whenever we get such fresh coconut I used to make Puttu and this time its Thengai Paal. Myself and my kids enjoyed it a lot and made Vella Sevai/Idiyappam in jaggery sauce for V. I have already shared Idiyappam recipe but with different method. This Idiyappam recipe is easy to make and anyone can make soft Idiyappam using this recipe. This is how My Mom & Grand Mom makes Idiyappam at home. You can make it in a jiffy, only thing is the dough should be at right consistency. Here, I have given tips to make soft Idiyappam with any kind of rice flour. I have tried with store bought rice flour, Pathiri Podi and Idiyappam flour too. You can use whichever is available to you.

We completely stopped buying breads, cookies, crackers from store and rarely fresh breads from bakery. But my kids love breads and cookies a lot, they love bread in any form, simple toast to sandwich, upma anything. Breads are there most favorite food but because of the preservative ingredient we do not buy breads, cookies. So once in 10 days or 2 weeks once I bake it at home. Anything that is homemade is always fresh, good and free from preservatives. And that too our favorite cookies/cake or bread with some healthy ingredients means that is most welcome right? This Whole Wheat Coconut Cookies is one such recipe, delicious and melt in mouth flavorful cookies using whole wheat flour without eggs and less sugar when compared to other cookies. I bookmarked this recipe from Hari Chandana's blog, have tried this Wheat Coconut Cookies couple of times and now it is our family's favorite cookies. This wheat cookies does not involve more fancy ingredients, no egg and just the basic ingredients. It can be made without coconut also for a plain vanilla flavored cookies. This is sure a keeper recipe, do try this cookies for your kids. These are best to serve along with hot chai or coffee for tea time snack.

Mutton Kuzhambu Recipe | South Indian Style Mutton Curry(With Coconut)
Most Favorited and popular recipes of Spicy Treats' are Non-Vegetarian recipes and also I get more request for Chicken or Non-Vegetarian recipes. So mainly to share here, I cook Non-Veg recipes once or twice in a month. And this time it is Mutton Kuzhambu / South Indian Style Mutton Curry and it is my Mom's recipe. This is how My mom makes Mutton Kuzhambu at home, simple Pressure cooker method with Mutton Masala Powder. But My Grandma's recipe is different and she never used store bought Masala Powder, with freshly ground spices. Also My Grandma add few Potato pieces and Drumstick to the Mutton Kuzhambu. That gives different flavor and unique taste. Will share that recipe later.
This Mutton kuzhambu recipe is easy to make with less preparation process. We usually add few mint leaves to Non-Veg Kuzhambu that really gives lovely flavor and taste. Mutton kuzhambu pairs well with Idli/Dosa/Appam/Parotta and with Plain Rice & Biryani also. We had it with Idlis for breakfast and with rice for lunch.

Kumbakonam Kadappa Recipe | Kadappa Recipe for Idli/Dosa | Potato Lentil Stew
Kadappa is nothing but a stew or kurma prepared using potato and yellow moong dal and served as side dish for Idli/Dosa. Kadappa is popular in Kumbakonam and thus it is mentioned as Kumbakonam Kadappa. Kadappa is one the delicious accompaniment for Idli & Dosa. Moongdal, potato and coconut paired well and this is a less spicy, rich and flavorful curry. My mom never cooked this kadapa and I came to know about this name and recipe only from other cooking blogs. Long back, tried this Kadappa from Nalini's blog and loved it a lot. First time, I tried with whole moong and it turned out great with lovely flavor and taste. I even tried a similar version of Kadappa with Oven Roasted Cauliflower and Green Moong Dal Curry for Rotis and posted here.

Hope You had a fabulous weekend, mine too went well and looking forward to a pleasant and calm week ahead. Today's recipe is a spicy, flavorful and mouth watering Andhra chicken curry/Andhra Style Chicken Curry recipe. Chocolate Coconut Cake / Eggless Chocolate Coconut Cake / Chocolate Cake with Lindt Dark!
Early this month weather was too cold only 40 F or less but from this week weather is good and its Fall now here. The leaves turning golden yellow to orange red and in some plants i could able to see nice pink tinges. Its less colorful compared to Wisconsin but still looks pretty and pleasing. After a long time i turned on my oven this week and baked cakes and cookies for my family. Fall and winter are the right time to bake more, so that our house gets warm and also we could enjoy the yummy goodies at home.
For this month's Shh Secretly Cooking Challenge i was paired with Veena of Great secret of Life and she gave me Chocolate and Coconut as my secret ingredients. Both are my favorite ingredients and i couldn't prevent myself from baking. After a long thought i decided to bake a cake with the given ingredients. I already have baked a Vegan Muffins with this chocolate and coconut combo, Chocolate Coconut Muffins. This time baked a rich buttery and chocolatey cake. I slightly tweaked this recipe, also i used lindt 90% cocoa Dark Chocolate and the cake was so flavorful and mild sweet. The chocolate dominated more and there was no coconut flavor but I could taste the coconut in every bite. This chocolate coconut cake is perfect tea time or snack cake, the mild sweet and
rich chocolaty cake pairs well with a cup of coffee or milk.

Chicken Kuzhambu / Tamil Nadu Hotel Style Chicken Kuzhambu / Spicy Chicken Curry Recipe
I prepared this Chicken Kuzhambu quite long back, a week before Purattasi and due to other events and special days this Non Vegetarian Post didn't got any attention. Finally, today decided to post it here as it fits to the Event, Tamizhar Samayal Tuesday by Nalini. This is a spicy Chicken Kuzhambu with freshly ground spices and this is traditionally prepared with Country Chicken / Naatu Kozhi. This chicken Kuzhambu tastes exactly like the one which I have tasted in one of the famous hotel, Selvi Mess in my home town. I made this kuzhambu 3 times and every time it turned out awesome, so spicy and flavorful kuzhambu. This pairs well with hot fluffy idlis, crispy dosa or with flaky parottas, biryani and even with plain rice.

Chickpeas Curry Masala / Channa Curry Masala / Channa Masala with Coconut
I have planned few things to do this weekend, nothing special simply to Bake & Cook few recipes for blog. But all spoiled because of the bad weather, yes., it was too cloudy and rainy for the past two days. We did not go anywhere and simply watched online movies, TV shows & took complete rest. The weather gonna be like this for the next few months and I cannot cook & click any time. Here, after should keep watching the weather reports and have to cook on the Shiny Day alone :( I know many of my bloggers friends also depend on the Natural light and worrying like me.
Now Coming to the recipe, this is South Indian style Channa Masala / Chickpeas Masala with coconut-poppy paste and chicken masala powder. This is a very simple and quick channa masala and you do not need to pressure cook the chickpeas prior instead soaked chickpeas is enough. This chickpeas masala is done using a pressure cooker. Kalan Kuzhambu / Spicy Mushroom Gravy
Kalan Kuzhambu / Spicy Mushroom Gravy is one of the popular South Indian kuzhambu variety that too its popular in South Indian Wedding Dinner. In recent years, have seen in many wedding receptions in my hometown. Many people prefer this Kalan Kuzhambu and Parotta for dinner menu in Wedding Receptions. Even i tasted Mushroom first time in a wedding reception dinner only. I liked this spicy kuzhambu, its so flavorful and yummy with parotta & Ghee Rice. Then my mom got the recipe from a Cook and tried it few times. We all love this mushroom kuzhambu and i love it with hot idlis and with Jeera Rice or Ghee Rice.
If you haven't cooked Mushroom this way, please give it a try to feel the real flavor and taste of this kuzhambu. Kadamba Chutney / Quick & Easy Chutney for Idli / Dosa
Today's recipe is one quick and easy chutney recipe that goes well with most of the south Indian tiffin variety like Idly, Dosa, Pongal, Paniyaram, Adai, Upma etc., Kadamba Chutney is nothing but a combo of many ingredients like onion, tomato, ginger, chillies, garlic, mint leaves, cilantro, coconut, dal etc. This is one quick and yummy chutney and one of my favorite too. If u have all this veggies in hand but not enough to make a specific variety like Coconut Chutney or Mint Chutney or Tomato Chutney then you can make use of all those tiny bits in one recipe and make a delicious side dish for your tiffin.
