Akki Roti Recipe
Akki Roti is a popular Breakfast recipe in Kannadiga Cuisine, Akki Roti is made out of rice flour, a flavor rich tasty rotis just like Ragi Adai/Roti. This recipe was introduced to me by my neighbor sister in India from whom I learnt to make Restaurant Style Aloo Gobi, Channa Masala, Potato Curry etc. She did graduation in Home Science and very much interested in cooking multi cuisine recipes. I make this Akki Roti often at home and thought I have shared this recipe during my initial blogging days but I didn't. So, Few months back when I cooked this for our weekend breakfast quickly took some pictures and finally today writing this post :)

Thattai is a popular south Indian snack that is prepared using rice flour. I have already shared the regular version of Thattai & Ragi Thattai recipe. Today's thattai recipe is little different and I used more roasted gram dal flour/Pottukadalai maavu which gives perfect crunchy and crispy thattai. I also added ginger and onion for flavor.

Then end of may summer vacation started and thought to start once kids back to school. Crispy & Crunchy Instant Rice Flour Thattai Recipe with step by step photos. Thattai is one of favorite savory snack but I rarely make thattai, since every time my thattai will end in soft and not a crispy and crunchy thattai. I have tried many recipes and none have come out good. Finally after attempting so many failure experience I got to know the proper trick and recipe for making crispy and yummy thattai. I have already shared a easy thattai using Ragi Flour, Ragi Thattai and today I am sharing the best and no fail Rice Flour Thattai Recipe. This recipe uses instant/readymade/store bought rice flour.  No need to use processed raw rice flour.  Simple isn't ?! Do give it a try for this Diwali and let me know how it turned out to you. The only trick is always use cotton cloth or paper towel to flatten the dough, by this way the excess moisture from the dough is absorbed and when fried in oil you get a nice crispy and crunchy thattai. I also made some mini thattais to enjoy my hometown special snack, Salem Thattuvadai Set. But my kids finished most of the thattais as such, may be will make it some other time to enjoy my favorite thattai set. Now off to the recipe...

Eid Mubarak to all who celebrate Eid. May The Almighty shower all his Mercy and blessing on you and your family. Have a Blessed Ramadan. Every year I miss to share Ramadan special recipes, hope at least next year i will share some best recipes.

During my school days, my best friend never fail to share the Ramadan feast with us. Auntie prepares elaborate meal on this special occasion, minimum of 7 or 8 varieties of sweets. I really miss those golden days. I still remember the taste of her sweets and the best Ramadan Biryani. As it is all prepared with lots of love it tastes the best. I will try to share some of her recipes here soon. Not only during Ramadan, whenever I visit my friend's place she treat us with feast and lots of love. She is one of the best Mom, my friend and her family are lucky and blessed to have her.
Lemon Idiyappam
Now coming to the recipe, Idiyappam is our family's favorite recipe. We love both sweet and savory version. But Idiyappan with Thengai Paal/Sweetened Coconut Milk is me and my kids' favorite of all. V love Jaggery Idiyappam. Sometimes I feel lazy to make jaggery syrup for him and that time he ask me to make savory version with lemon. This Lemon Sevai is one of the easiest breakfast recipe for me on weekends. You can use either lemon or lime juice to make this savory version.

Vella Sevai | Sweetened Idiyappam With Jaggery & Coconut Recipe with step by step photos. Idiyappam and Thengai Paal is my most favorite Idiyappam combo recipe. But V do not like Idiyappam with sweetenend Coconut milk instead he loves it with Jaggery Syrup. So whenever I make Idiyappam, I make a thin jaggery syrup and peanut sesame powder for him. But this time for a change, I prepared a thick sauce and stirred with idiyappam and served. He liked it but said the sweetness was less. So I added more jaggery sauce for him and we three have it with mild sweet.
This Vella Sevai is delicious and equally healthy breakfast or after school snack for kids. My kids loved it a lot. Steamed foods are generally healthy and instead of rice flour, you can use Red rice flour or Ragi Flour or Wheat Flour or Millet Flour to make Idiyappam. Next time I am planning to try with wheat flour/Atta.

Idiyappam Recipe | Idiyappam Thengai Paal Recipe

Idiyappam & Thengai Paal recipe with step by step pictures, steamed soft delicate Idiyappam dunked in sweetened coconut milk is my favorite dish. Its been long time I had Idiyappam with Thengai Paal, and last week for our weekend breakfast I prepared it and had it to my heart. Idiyappam is a popular South Indian Breakfast recipe, a steamed rice noodles that is prepared using rice flour. You can use homemade rice flour or store bought rice flour or Idiyappam flour for making Idiyappam. Idiyappam is served with vegetable stew or sweetened Coconut milk/Thengai Paal or any spicy Non-veg Curry.

I never had Idiyappam with stew or spicy gravy, Thengai paal or Sweetened Coconut Milk is my favorite combo. Here we rarely get good tender fresh coconut, so Whenever we get such fresh coconut I used to make Puttu and this time its Thengai Paal. Myself and my kids enjoyed it a lot and made Vella Sevai/Idiyappam in jaggery sauce for V. I have already shared Idiyappam recipe but with different method. This Idiyappam recipe is easy to make and anyone can make soft Idiyappam using this recipe. This is how My Mom & Grand Mom makes Idiyappam at home. You can make it in a jiffy, only thing is the dough should be at right consistency. Here, I have given tips to make soft Idiyappam with any kind of rice flour. I have tried with store bought rice flour, Pathiri Podi and Idiyappam flour too. You can use whichever is available to you.

Everyone is busy preparing for the Ganesh Chaturthi Festival. It is nothing but the Birthday of Lord Ganesh and we Celebrate this special day by offering  Modak/Modhagam, Sundal, Laddo, Sweet Pongal, Lots of fruits as Prasadham and adorn Ganesha Idol with Arugampul, Erukkam poo Mazhai. In India we Celebrate the day in grand manner but here i do with all the available things. In India the Chaturthi day started ie September 9, Monday. Here, we will do the Pooja tomorrow morning only. Wishing Everyone a Happy Ganesh Chaturthi Wishes and May Lord Ganesh Bring your home Prosperity, Happiness  & Fortune.

Paal Pidi / Sweet Rice Dumplings In Coconut milk Sauce - Guest Post By Julie !



I am so glad to share a Lovely Guest Post by my another dear friend, Julie of Erivum Puliyumm. First, thanks a ton Julie for all those kind words and wishes. Really i am gifted to get such good hearted people around me. Like Julie said, we almost started the blog same time and now i know her for more than a year. But our friendship turned so deep & strong like we know each other over decade. When I took break becoz of my leg injury, almost daily or the other day she messaged me and asked about my health and how i am managing my family this n that, she even said that she can get any medical help from her sister who is a Siddha Doctor, thanks Julie i will never forget it in my life...Not only Julie, my previous guest Sobha and the coming guests' were so supportive and their caring words were my only strength that time. Their sincere Prayers helped me to manage everything and come out of my pain soon. And also for all occasions, happy moments they never failed to Wish & Bless Me & my family!!!

Writing this blog makes my Mom happy more than me, since before this blogging i have none to share my feeling or no recreation for me except my kids...So she was worrying about me all the time that am alone here and she can't come and look after me or to take care of me when i need attentions. But after started blogging, there's lots of good changes, She seeing me engaged in one or the other work and now-a-days am with tension and free from other family stress also. Above all i used to tell her about my friends' mails/messages/calls with their kind n caring words. sometimes she even felt more emotional than me :) And told me to continue this blogging mainly for my friends.

Julie's Erivum Puliyumm has lots of Kerala Tradition dishes, and her Appetizer collections are my favorite. I tried her Chicken Tikka and its my kids favorite too. The chicken turned out so yummy n juicy. Planning to make a post of it soon. She is also an amazing baker, love her Perfectly baked cakes, cookies, muffins and her  Homemade Puff Pastry is notable one. I really love her Fondant cakes too. I know most of you aware of her space if not do drop by her space to enjoy all those lovely collections with all inviting pictures.
Today also she shared a traditional recipe from Kerala, Paal Pidi. Recipe sounds too delicious and looks very tempting. Ok without no further delay present U all Julie in her own words...

Sangee is one of the dearest friends gifted to me from the blogosphere. When she requested me to do a guest post for her, I was very very happy to be part of her blog anniversary celebrations. She has a very beautiful space with all great appetizing clicks. She has a vast versatile collection of more than 400 recipes in her space. I also admire her patience to capture all the step by step pictures of mostly all recipes. Our friendship started from the blogosphere but very soon we became very good friends as if we know each other for over a decade. We also share a few things in common like we almost started the blog at the same time & same year. Also she & me have two sons almost the similar age. She is one of the most dedicated bloggers in blogging, who kept her blog alive even during her illness, respect her devotion to her lovely space. I would like to thank her sincerely for all the inspiration and motivation through her detailed comments every time she visits my space and for this great opportunity to share my recipe at her space.

Coming back to today's recipe, its a very traditional recipe from Kerala (which looks similar to rasagullas) mainly originated from Kuttanad. The recipe is Paal Pidi. 'Pidi' refers to rice dumplings & 'paal ' refers to milk in malayalam. A simple healthy yet elegant sweet that can be prepared for any important occasions.  It has a aromatic flavor of coconut and we love it mildly sweet. Do try this out &enjoy,kids will surely love this !!!
Ingredients
  1. roasted rice flour 1 cup(refer notes)
  2. water 1 cup
  3. salt to taste
  4. medium thick coconut milk /2 nd milk 400 ml
  5. sugar as desired
  6. cardamom powder 1 tsp

Method
-Boil water in apan or kettle.take the rice flour in a bowl,add salt.Pour the boiled water in it and mix well using a wooden spoon or spatula,like for kozhukatta or idiyappam.When its warm enough to handle,make a smooth dough.make small marble sized balls and place it in a steamer,plate smeared with a little oil.Steam for about 10-15 minutes or till done.
-At the same time,heat the coconut milk with sugar in another wide pan.Add the cooked balls /pidi in it and let it cook for a few minutes until thickened.(takes about 7-10 minutes)Add cardamom powder and put off flame.
-Serve with some chopped nuts too if desired.
Servings ~ 2 adults
NOTES
* You can use boiled milk too instead of coconut milk but let the milk thicken before adding the pidi(reduce milk to half the quantity u started boiling)
* Use store brought pathiri podi or roast the plain rice flour before use.
* I used store brought coconut milk diluted the thick milk in 1 cup water to make medium thick coconut milk. Don't boil the thick coconut milk or else it will curdle. Keep on low medium flame.

Thenkuzhal / Diwali Murukku

Another easy, yummy and crunchy murukku to try this Diwali, Thenkuzhal / Diwali Murukku. Yes, we call it as Diwali murukku since this murukku is must and it Mom and Grandma makes it mainly during this festival only. Both my Ma used to make this murukku with freshly ground rice and dal flour but here i used all store bought and its easy and quick to make all authentic recipes with store bought n handy powders. Though the freshness and flavor was not much like the homemade still it tasted crunchy and flavorful :)

Ribbon Pakoda / Ola Pakoda / O'ttu Pakoda

Another Easy and quick Diwali snack, Ribbon Pakoda / O'ttu Pakoda. We call it as O'ttu Pakoda or Oattu Pakoda and this is must in our Diwali snack list. I love my Mom's pakoda more than the store bought ones. She makes it spicy and also with the hint of garlic. But this time i didn't tried with garlic and made it as plain mild spicy pakodas. This is my Mom's version of Ribbon Pakoda and made it  with her help, i turned on my skype video and made this as per her instructions :) It come out perfectly and got good appreciation too. Ok now to the recipe...

Rice Murukku / Mullu Murukku ~ Easy Diwali Snack!!

Its just only a week for Diwali/Festival of Lights and this Blogosphere is raining with all Diwali Sweets & Snacks. I really enjoy visiting your space, very colorful and mouth watering dishes presented with festive mood. Great work by u all. This is the first Diwali savory/snack am posting here on my space. I planned to make few more snacks before Diwali to share it here on my space but dunno h far i can do it. Let me try my best and coming to today's recipe, Rice Murukku/Mullu Murukku is one of my favorite murukku but my Mom makes this very rarely and for Diwali Thenkuzhal, ribbon pakoda and omapodi was her constant Diwali snack.
As this is my favorite one i started with this crunchy mullu murukku. This is very easy to make and a non failure recipe. I don't have enough patience to make a perfect spirals, so for picture i made around 10 or 12 murukku and the remaining did like thool murukku. I don't bother about the shape or size, this crunchy murukku makes a perfect tea time snack and i even love to have it as a side dish for rasam and rice. Ammini Kozhukattai - Sweet n Savory


           Hi dear friends, hope you all had a great Ganesh chathurthi Celebration.I was little busy n tired with all work n pooja arrangements.The work was simple but with two naught boys everything made to be complex n tough for me to handle.Somehow i managed n had a pleasant pooja with delicious recipes offered to god n finally enjoyed by our family n friends :)
             Coming to this ammini Kozhukattai, this was introduced to us by our neighbor Maami.For about 12 years we lived in Agraharam only, so all our neighbors were maami aunties only.My mom learnt so many recipes , tips n tricks from her.And from my mom i learnt everything.During my higher secondary days i use to keep fasting for Karthigai Viratham, Friday Viratham...I followed these two virathams strictly. On fasting days, Morning no food , afternoon we use to do Padaiyal n offer food to Lord Murugan n then we will have just milk for  dinner. so evening time when I return from school my mom use to make this ammini kozhukattai with idly milagai podi . I like this mild n yummy steamed snack any time.
                Recently I happen to see the sweet version of ammini kozhukattai which was entirely new to me.As I love sweets, I tried n enjoyed this.I saw this sweet ammini kozhukattai recipe from Ammupatti's Thought. she posted this authentic recipe with an interesting story.I would request my friends n readers to visit her space to know the story behind it. Now to the recipes...

Ingredients
For Sweet Ammini Kozhukattai
  1. Rice Flour   1 cup
  2. Jaggery    3/4 cup
  3. Water 1 and 1/2 cup
  4. Coconut    1 tbsp(shredded)
  5. Cardamom   3 no.s(crushed)
  6. Salt    a pinch
Method
  • Heat a pan and dry roast the rice flour till flavor comes but do not burnt and transfer to a plate.
  • On the same pan add the stained jagerry syrup and bring to boil.
  • Once it starts boiling add the cardamom and shredded coconut mix well.
  • And then add roasted rice flour and keep stirring until it starts leaving the sides of the pan.(make sure there is no lumps)
  • Then switch off the stove and cover the dough n leave for few minutes.
  • Once it get lightly cooled but still warm, make small round or desired shape balls and arrange in idly plates.
  • Steam it for 10-12 minutes and then its ready to offer god or serve warm.

              Savory ammini Kozhukattai can be made easily with the left over Stuffed Kozhukattai dough.Tjis is so simple n easy to make.this is a guilt free n healthy steamed snack for tea time.

Ingredients
For Savory Ammini Kozhukattai
  1. Rice Flour   1 cup
  2. Water   1 cup + 3/4 Cup 
  3. Salt     1/4 tsp or less
  4. Oil    1 tsp
To temper
  1. Oil    1-2 tsp
  2. Mustard  seeds   1/4 tsp
  3. Urad  dal   2 tsp
  4. Curry leaves    few
  5. Dry red chillies   1 (broken)
  6. Hing   a pinch
  7. Idly milagai podi    to taste(optional)
Method
  • I used regular store bough rice flour for this ammini kozhukattai.
  • First using 1 cup of water mix the rice flour to a smooth paste n keep aside.
  • Bring 1 and 1/4 cup of water to boil  with adding salt n tsp of oil.
  • Once it starts boiling add the rice flour paste n keep stirring until it form a thick n smooth dough.
  • Allow the dough to set for for few minutes and when its warm make a small round balls of it.
  • Arrange it in a greased idly plate or any vessel and steam it for 15 minutes.
  • After that allow to cool the mini kozhukattai completely.
  • Then heat oil in a pan and add the tempering ingredients and fry lightly.
  • Now add the steamed kozhukattai and fry well n add idly milagai podi and toss it well.
  • Thats it ...ammini kozhukattai is ready to offer God or serve hot.

Khara Puttu


             Khara Puttu,my grandpa's favorite...this khara puttu is simple ...seasoning the rice flour and steaming like regular puttu .the recipe follows:

Ingredients
  1. Rice Flour/Idiyappam Flour      1 cup
  2. Salt    to taste
  3. Hot water    1/2 cup or more.
To temper
  1. Oil    1 tsp
  2. Mustard seeds    1/2 tsp
  3. Urad dal    1 and 1/2 tsp
  4. dry red chilli   1 no.(broken into small pieces)
  5. Curry leaves     few(cut into small pieces)
  6. Hing    a pinch
Method
  • Take a wide vessel,add rice flour and salt mix well.
  • Heat a pan,add oil and add tthe tempering ingredients one byone and fry till urad dal turns golden brown and add it to the rice flour and mix it well.
  • Now add water little by little and mix well and make it to a stiff dough.(don't add more water ..dough should be stiff n thick).
  • Then to the same seasoned pan ,add a tsp oil and fry the dough for 1 minute.(this will absorb the excess moisture from the dough).
  • After that,transfer to the vessel and crumble it with your hands .
  • Now take a wet cloth,keep the rice mixture on it and cover it lightly .
  • Plcae the cloth on the idly plate and steam it for 15 minutes.
  • Thats it...after 15 minutes gently open the cloth and transfer the puttu to serving bowl and serve immediately.

Rice Puttu/Rice Flour Puttu recipe is an easy and healthy snack or tiffin recipe. I learnt this recipe from my Grandmother. She makes this Puttu at least once in a week as evening tiffin during my childhood days.
