Bread Pulao/Pulav recipe is an Easy and simple One Pot meal that can be prepared in 20-30 minutes. This Pulav is prepared with bread croutons /crispy bread pieces that are baked and not deep fried. Addition of bread enhances the flavor of the pulao and also tastes delicious. This bread pulao is my kids' favorite lunchbox recipe during their elementary & Middle school times.

After almost six months I cooked Non-Veg Recipes as today we had few friends visiting our place and V wanted me to cook Non-veg recipes as they love non-vegetarian more than veg recipes. So I made Mutton Biryani, Chicken Chukka Varuval, Chicken Gravy, Onion Raita, Plain Rice & Rasam for our Sunday Special Lunch. This recipe is also my Mom's special Mutton Biryani recipe that I wanted to share here for long time, Every time when she make this Mutton Biryani she used to tell me that the biryani turned out so good and flavorful and also she made it perfectly with separate grains using seeraga samba rice. She said the she will make it when we all visit India till that time she insisted me to try it by myself. But, I never tried it before as we don't prefer mutton recipes more and today when I made it for guest, I recollected those words she said and I missed/miss her badly.

Spinach pulao/ Palak Pulao can be prepared in less time with simple ingredients. Recently,I started to use my freezer more, yes.,I started following few of my friends' technique
and freeze beasn, greens, chopped vegetables, seasonal fruits, coconut etc., And it really help me to cook both breakfast and lunch in an hour. For this pulao i used my frozen chopped spinach, put them in microwave with couple of tsps of water and cook in high heat for 2 minutes then blend it with green chilli, ginger and garlic. If you are using fresh spinach, then cook or blanch or use as it is.

I have been using Foxtail Millet/Hulled Millet/Thinai in my cooking and have shared few recipes here too. With Barnyard millet I tried this tomato pulao and it turned good. Mildly flavored and easy to make one pot meal recipe perfect to pack for lunch box or makes a great weekend vegetarian meal along with some raita & vegetable stir fry. Biryani itself a treat and if it is Hyderabadi or Mughlai Biryani then it is a double treat with double richness, double flavor and double taste. When it comes to Non-Vegetarian recipes I also wanted to try different recipes and cuisine. For the first time tried Mughlai Cusine and loved this Mughlai Chicken Biryani. The tastes of Mughlai cuisine vary from extremely mild to spicy, and is often associated with a distinctive aroma and the taste of ground and whole spices.
Mughlai Chicken Biryani is an Exotic Biryani with the richness of nuts, butter and unique aroma of freshly ground spices. This is a layered Biryani type that, is chicken gravy and rice is cooked separately and then both combined as layers in a pot and cooked in low heat by Dhum method. I referred an easy recipe from a youtube video and slightly tweaked to my taste. Most of the recipe uses food color to differentiate the layers but, i used saffron milk that, added nice aroma and yellow color to the rice. Do not worry about the color, Biryani tasted awesome. For a change, to impress your family just give it a try and share your feedback. The list and preparation may look bit lengthy and confusing but it is simple and easy to follow with the step wise pictures.

Today's recipe is a healthy, flavorful and delicious one pot meal Soya Chunks Biryani using Brown Rice. For more than 2 years i am using brown rice for my meals. I have tried more recipes with brown rice before but biryani, this is the first time. For May month's Shh secretly cooking challenge i was paired with Manjula of Desi Fiesta and she gave Brown Rice and Cilantro as the secret ingredients and in turn i gave her wheat flour and Pepper. Thinai Arisi Sambar Sadham / Millet Sambar Bhat / Foxtail Millet Lentil Bhat
Fox Tail Millet / Thinai is one of my recent favorite grain and i am including it in my diet weekly twice or thrice. I replace white rice with brown rice, oats, millet, cracked wheat and completely skip white rice. Generally Millets(Kambu, Ragi, Solam, Thinai, Samai) are a natural source of protein and iron. Millet is very easy to digest, it contains a high amount of lecithin and is excellent for strengthening the nervous system. Millets are also rich in B vitamins, especially niacin, B6 and folic acid, as well as the minerals calcium, iron, potassium, magnesium and zinc. Millets contain no gluten, they are good for people who are gluten-intolerant. And the most important factor, regular consumption of Millets reduce the risk of type 2 diabetes because millets are rich in magnesium, which regulates secretion of glucose and insulin.
I am trying to include these millets in our diet in all possible forms. So experimenting few recipes and this Millet Sambar Bhat/Thinai Sambar Sadham is one such experiment turned out good. Just like the regular white rice sambar sadham tried it and the millet sambar bhat turned out good. Even my husband liked this Thinai Arisi Sambar Sadham. Today's Recipe is one easy & quick one pot meal with more satisfying taste & flavor - Vegetable Rava Biryani. Rava Upma is one such recipe which is not liked by most of the people, particularly men. Mr.V also hate Rava upma and never allow to me to cook it for him, i make it only for me and my kids. Upma is one of my fav breakfast/dinner menu.
