Bread Pulao Recipe
Bread Pulao/Pulav recipe is an Easy and simple One Pot meal that can be prepared in 20-30 minutes. This Pulav is prepared with bread croutons /crispy bread pieces that are baked and not deep fried. Addition of bread enhances the flavor of the pulao and also tastes delicious. This bread pulao is my kids' favorite lunchbox recipe during their elementary & Middle school times. For school lunchbox I prefer to pack one pot Meal at least once a week and Pulao is my first option. Pulao recipes are easy to make, very mildly spiced and hardly takes 20 minutes to cook just 1 cup rice, which is perfect to pack for 2 kids lunchboxes. I added 1/2 cup frozen peas for additional taste and texture, if your kids do not like peas you can skip them or replace with carrots & beans too. 

Toasting bread with butter enhances the flavor, you can also use ghee or oil. I used Toaster Oven to bake the bread slices, you can also toast it in tawa on stove top too.

Ingredients

  1. Basmati rice   1 cup
  2. White Bread   3
  3. Butter  2 -3 tsp(to toast Bread)
  4. Fresh or Frozen Peas  1/2 cup( used frozen peas)
  5. Onion   1 Big size or 1 Cup - thinly sliced)
  6. Ginger garlic paste   1 tbsp
  7. Green chilli    6-8 no.s (slit)
  8. Cilantro   2 tbsp(finely chopped)
  9. Mint leaves    2 tbsp(finely chopped)
  10. Turmeric Powder   1/4 tsp
  11. Garam Masala   1 tsp
  12. Yogurt/Plain Curd    1/4 cup or less
  13. Salt   to taste

To Temper

  1. Oil  2 Tbsp
  2. Ghee/Clarified Butter    1 Tbsp
  3. Shahi Jeera/black cumin seeds   1/4 tsp
  4. Cumin Seeds/Jeera  1/2 tsp
  5. Fennel seeds/Sombu   1/2 tsp
  6. Bay leaf   2
  7. Cloves   4-5 no.s
  8. Cinnamon/ Pattai   2" piece
  9. Cardamom   4 no.s
Notes:
Using white bread gives rich flavor and taste but you can also use whole grain or any bread.
If you want you can also deep fry or shallow fry the bread slices and use it in the recipe.
Adding Shahi Jeera is must, it increases the flavor and taste of the pulao. 
Fennel seeds are optional, I like in my dishes but you can skip it if you doesn't like 'em.
After adding each ingredients - onion, chilli, mint/cilantro, peas saute it nicely for 2 minutes, this enhances the taste and flavor of pulao. For pulao & biryani I use 1:2 Rice & Water Ratio. That works for me with any rice varieties. If you prefer 1:1.5 you can cook accordingly.
You can also cook the pulao in pressure cooker or in Instant Pot.

Method

  • Then take bread slices apply butter to it, toast in the toaster oven for 7-8 minutes or until the all sides turn light brown and crisp. Once done, let it cool for a while then cut into small pieces as shown in the video.
  • Wash Basmati rice for 3-4 times and then Soak it for at least 15-20 minutes.
  • Heat oil & ghee in a pan, add all the tempering ingredients one by one and let it splutter & fry well.
  • Then add sliced onions and sprinkle some salt, fry lightly then add green chilli give a stir and then add ginger garlic paste and saute well till the raw smell goes.
  • Cook in medium flame and stir it for every 1-2 minutes to avoid burning at the bottom.
  • Then add chopped mint & cilantro mix well and sauce for a minute and then add 1/2 cup fresh or frozen peas stir fry the peas for a minute so that the peas gets mixed with the chilli/ginger garlic flavor. 
  • Then add salt, yogurt, turmeric powder and saute until the yogurt gets blended with the masala.
  •  After that add drained basmati rice stir fry for 2 minutes.
  • After that add enough water and cook in medium high heat for 5-6 minutes, then reduce the heat to medium and cook covered until rice is cooked 80%
  • Once done, add bread croutons mix it gently with rice and close the lid tightly( I used kitchen towel and then cover the towel with lid) and cook in low heat for 7-8 Minutes. 
  • That's it flavorful and tasty Bread Pulao ready.

Apply butter to bread, toast in oven for 7-8 minutes in 350 F. Once done cut into small pieces

Wash rice couple of times, add enough water and let it soak for 15-20 minutes. Heat oil in a pan, add the tempering ingredients and fry well.

Add sliced onion, green chilli, saute until onion turns golden brown, then add ginger garlic paste

Then add chopped mint & cilantro mix well and sauce for a minute and then add 1/2 cup fresh or frozen peas stir fry the peas for a minute

Then add enough salt, yogurt and stir fry for 2-3 minutes, then cook covered until peas cooked half way.
After that add drained basmati rice stir fry for 2 minutes. Add 2 cups of water, garam masala gently mix everything well.

then cook covered until rice is cooked 80%. Once done, add bread croutons mix it gently with rice and close the lid tightly( I used kitchen towel and then cover the towel with lid) and cook in low heat for 7-8 Minutes.
