Soya Chunks Pulao / Soya Chunks Pulao Using Yogurt(Curd) - Easy & Quick Lunch Box Recipe


Thanks Everyone for your hearty wishes on my Blog's Second Anniversary Post and u all made my day! Thank u so much and with the all your wishes started another New year of blogging with all your support and encouragement. And now coming to today's recipe, If you are looking for a quick, mild and healthy rice to pack for your kids lunch box, then this Soya chunks Pulao is one of the best choice and u can make this within 30 minutes. Soya chunks are rich in protein and its good to include in your diet once in every week. I usually make soya chunks recipes once in 10 days and i love to add it in all my Biraynis. Like me my kids too love soya chunks more so this time made this pulao mainly with soya chunks. To make it even more colorful and healthy added some chopped carrots and frozen peas. The combo turned out so good and we all loved it with Onion Raita. This pulao is so easy to make and very aromatic and tasty pulao.
For this pulao i used marinated soya chunks with curd, spices n herb, the result was so juicy n tasty soya chunks as the spices n herbs were well incorporated with it. I loved this juicy and yummy soya chunks. Do give it a try, the recipe as follows..



Ingredients
  1. Basmati Rice       2 cups(measured in 160 ml cup)
  2. Onion           2 medium thinly sliced
  3. Green chili      3 or 4
  4. Ginger garlic paste       1tbsp
  5. Cilantro                   2tbsp finely chopped
  6. Mint         1 tbsp finely chopped
To marinate
  1. Soya chunks         3/4cup(cooked)
  2. Curd/yogurt       1/4cup
  3. Chili powder       2tsp
  4. Turmeric powder       a pinch
  5. Garam masala          1tsp or less
  6. Mint & Cilantro leaves        1tbsp each
  7. Fennel seeds           1/4 tsp
To temper
  1. Oil         2tbsp
  2. Shahi jeera       1/2tsp or less
  3. Cinnamon      1" stick
  4. Clove      3 no. 
  5. Cardamom      3 no.
  6. Bay leaf       1 no(optional)

Method
  • In a sauce pan add 4 cups of water n bring to boil, then add soya chunks n cook for 2-3 minutes then drain the water n was soya chunks in cold water for 3 or 4 times.
  • After that drain completely and add it to a wide bowl, to that add other marinating ingredients , mix well and leave it for 15-20 minutes.
  • Meanwhile wash n soak basmati rice ,chop onions n chili and make ginger garlic paste n keep ready.
  • Now heat oil in a cooker or pan, add the tempering ingredients, Fry for few seconds then add onions n chili saute for few seconds.
  • Then add ginger garlic paste and sauté till the raw smell of gg paste leaves.
  • After that add carrot, peas and marinated soya chunks mixture and sauté for 2-3 minutes.
  • Then add enough water and salt, stir well and add cilantro n mint leaves n bring it to boil.
  • When it starts boiling add soaked n drained rice and pressure cook for 1-2 whistle or cook until rice done.
  • Once done, remove the lid and gently fluff the rice with fork.
  • That's it...flavorful n tasty healthy Pulao ready. Serve hot with raita.

Notes:
For more taste n flavor u can also make this pulao with ghee or u can add 1 tbsp ghee n 1 tbsp oil.
Increase or decrease chili powder n green chili to your taste, but the given amount will yield u a perfect spice or moderate spice level.
Use a day old or fresh yogurt.
If u want u can also add 1/2 chopped tomato.
Updated 2022 - In video recipe, I used only Mini Soya chunks and no other veggies. Also added extra turmeric powder that's why the pulao color in the video looks bright yellow. Adjust turmeric to your preference.
