Chocolate Cola Cake - For The Gourmet Seven

    Here comes my first recipe for The Gourmet Seven - Chocolate Cola Cake. For this Valentine Special  Month-February Theme was "Chocolate" and we landed on BBC Food for the gourmet style recipes. I was  much impressed on some recipes and bookmarked to try later. Now I chosen "Chocolate Cola Cake" as we love chocolate cakes a lot. This cake was really different from usual chocolate cake, addition of cola drink makes it more soft and moist and this cake was absolutely a sinful delight loaded with lots of butter and sugar.
I thoroughly enjoyed baking it but at the same time i did few mistakes also and learned a lot from this single recipe. Preparation of chocolate glaze was bit challenging task. And also i used dark brown sugar(powdered) instead of golden caster sugar. I don't have 4" deep pan so i poured half of the cake batter and remaining i baked as 6 cup cakes. Now to the recipe...


Ingredients
  1. Self rising flour   2 and 1/4 cup
  2. Dark brown sugar(powdered)or golden caster sugar   1 and 1/2 cup
  3. Cocoa Powder(unsweetened)    3 tbsp(heaped)
  4. Baking soda   a generous pinch
  5. Butter   1 cup and 1/8 cup
  6. Cola drink   8 oz
  7. Milk    125 ml
  8. Eggs   2 
  9. Vanilla extract   5 ml/1 tsp
For Chocolate Glaze topping
  1. Butter    1/2 cup
  2. Cola drink    2 tbsp
  3. Cocoa Powder   2 tbsp
  4. Icing sugar/Confectioner's sugar   1 and 1/2 cup
Method
  • Preheat oven to 350 F/180 C.
  • Spray Baking spray or line 9 1/2" /24cm cake pan with parchment paper.
  • Sift flour,baking powder,cocoa powder,sugar in  a mixing bowl and combine well.
  • In a small mixing bowl, light beat 2 eggs, and then add milk and vanilla...stir well and keep ready.
  • In a sauce pan, melt butter and cola drink and bring it to boil. Then add this melted butter cola drink to the flour.
  • And immediately add egg-milk-vanilla mixture and mix everything well . Now pour this cake batter to the prepared cake pan and bake it for 25-30 minutes. Check toothpick test, inserted tooth pick should come out clean.
  •  Once done remove from the oven and allow it cool for 20-30 minutes.
  • Meanwhile prepare the topping.
  • Melt butter,cola and cocoa in a sauce pan and add it to the icing sugar in the bowl, beat until smooth and pour it over the cake.
  • That's it....chocolate cola cake with chocolate glaze topping is ready. Enjoy with or without ice cream.
Notes:
Chocolate glaze thickens after few minutes, so pour it over soon after you prepared for smooth and glossy touch.
Allow the cake to cool for 15-20 minutes, then pour the topping in the cake pan itself and allow to cool completely n set. Then slice it n Njoy!!
Allow the cake to cool ,do not handle the cake when its hot or light warm it leads to bring cracks on the cake and also if u cut it becomes crumble n not a smooth slice.
This piece was sliced next day !
