Curd rice / Yogurt rice / Thayir Sadham - Easy Lunch Box Recipe !


Ingredients
  1. Cooked rice      2 cups
  2. Curd/Yoghurt     3/4 cup
  3. Milk       1 and 1/4 cup
  4. Coriander leaves     1/4 cup
  5. salt        as  needed
To temper
  1. Oil   1-2 tsp
  2. Mustard seeds    1/2 tsp
  3. Chana dal    1 and 1/2 tbsp
  4. Urad dal    1 tbsp
  5. Green chilli    3-4 no(finely chopped)
  6. Ginger    1" piece(finely chopped)
  7. Curry leaves    1 twig

Method
  • Heat oil in pan, add the tempering ingredients one by one and fry them .
  • Then transfer the contents to the curd/yogurt and add coriander leaves and mix everything well.
  • For curd rice...rice should be cooked mushy and soft.
  • To the cooked rice add 1/4 cup water, mix and smash it well.
  • Now to the rice, add tempered curd and salt.
  • Mix well and add milk and again mix well.
  • At this stage, curd rice will be more liquidy thats not a problem, it will taste more good and if u serve for lunch it will remain fresh and in perfect consistency.
  • Serve curd rice with any Pickle or Potato Curry.

Notes:
Adding more milk than curd gives more taste and less sourness.
For lunch box ,also it will remain more fresh without sour taste.
Instead of green chili u can also use dry red chilies.
Tempering the curd/yogurt is optional, u can skip it and simply add yogurt n milk to the smashed rice and add finely chopped cilantro, ginger,shredded carrots, fresh grapes n pom seeds.
Based on the season, u can add fruits like Pom seeds, grapes to the curd rice.
1/4 up Freshly grated carrots also be added to the curd rice.
