Thalicha Dosai Recipe | Left Over Dosa Batter Recipe


     This is village style My Grandma's Thalicha Dosai recipe, which she prepare with the 3rd day Idli batter. Because the third or fourth day batter will turn sour because of the weather. Those days we don't have refrigerators at home and most of the small & big appliances which we use at our day today life these days. Grandma makes this dosai in outdoor clay stove & the fire from the wood chunks adds lovely smoke flavor to the food. She prepares in that stove for the whole family(12 members) one by one patiently & with much love. Wish to go back to those golden days just for my Grandmom's love and care. Now coming to the Thalicha Dosai, I love this spicy seasoned dosai with lots of onions & tadka. Here due to the weather & refrigeration our dosa batter doesn't get that sour, still I try Thalicha Dosai with fresh batter. Sometimes the store bought dosa batter will be too sour, & this method helps to mask the sourness and able to eat tasty dosai😊
Ingredients
Dosa batter    2 cups

To temper
  1. Oil    1-2 tsp
  2. Mustard seeds    1/2 tsp
  3. chana dal    1 and 1/2 tsp
  4. Green chilli    2 no.(finely chopped)
  5. Ginger     1 tsp(finely chopped)
  6. Hing       1/4 tsp
  7. Onion   1 big(finely chopped)
  8. Curry leaves     few
  9. Coriander leaves     some 
Method
Heat oil in a seasoning pan, add all the tempering ingredients one by one and fry till onion turns color.

then add the seasoning to the batter and mix well.
Heat a griddle,pour a ladle of batter and spread in circular motion,make it little thick.
Add oil all around the dosa,after one minute flip the dosa and cook till done.
Thats it...now the thalicha dosai is ready to serve hot.
No side dish required, simply idly podi is enough or the best combo will be Coconut Chutney.
