Mushroom Biryani Recipe | Easy Mushroom Biryani Recipe

For the first time I tasted Mushroom in the form of Mushroom Biryani in one of my friend's wedding party. After tasting that biryani I started liking it but hesitate to cook. So we mostly eat it in the restaurants only either as biryani nor Mushroom Masal Roast. Then after coming to US,  started cooking it and I mostly prefer the sliced mushrooms box which is easy to handle and also quick to prepare. Just requires a gentle wash...

Now after started blogging, have tried more mushroom recipes and now it became one of our fav vegetable. Sometimes my kids eat this biryani as chicken biryani :) Mushrooms are rich in proteins and its the only vegetarian source of Vitamin D. And also mushrooms are low in calories and rich in fiber, so its good for people who looking for weight management.

Ingredients
  1. Basmati rice   2 cups (soak for at least 20-30 minutes)
  2. Mushroom    8 oz. used sliced mushrooms)
  3. Onion    2 no.s(sliced)
  4. Tomato   1 no.(chopped)
  5. Green chillies    5-6 no.s(slit open)
  6. Ginger -Garlic Paste    1-2 tbsp
  7. Mint leaves    1/4 cup
  8. Coriander leaves   1/4 cup
  9. Thick curd/yogurt   2-3 tbsp
To Temper
  1. Oil     3 tbsp
  2. Ghee or butter   1 tbsp
  3. Shahi Jeera/Black Cumin    1/4 tsp
  4. Bay leaf    2 leaves
  5. Clove    5 no.s
  6. Cinnamon    2" stick
  7. Cardamom   2 or 3 no.s

Method
  • Heat oil and ghee in a non-stick vessel or pressure cooker,add all the tempering ingredients one by one and allow to splutter. 
  • Then add the sliced onions and green chillies,sprinkle some salt and saute well. 
  • Fry the onions till it get half transparent and add ginger garlic paste. 
  • Saute well till the raw smell leaves. 
  1. Then add the mint leaves(spare some leaves) and fry a minute. 
  2. Then add the chopped tomatoes and coriander leaves and fry until tomatoes get soft . 
  3. Now add the mushroom pieces and stir well. 
  • Add 2-3 tbsp of fresh curd and stir well,fry everything for 2 minutes. 
  • Now add the soaked and drained basmati rice and mix well. 
  • Fry the rice nicely for 2-3 minutes ,stir gently don't broke it. 
  • Then add necessary water to cook rice, also add enough salt and mix well. 
  • Check salt and add the spared mint leaves and some coriander leaves and proceed cooking till rice is done. 
  • OR 
  • Transfer the entire content to a microwave safe vessel and cook for 20 minutes (or based on ur microwave power and the quantity of rice u cook) or to an electric rice cooker and cook till done.
  • That's it Yummy Mushroom Biryani ready.

Notes:
For colorful biryani you can add turmeric powder or any food color.
Replace green chillies with dry red chilli powder(1or 2 tsp)
