Potato Capsicum Stir Fry / Potato Fry / Varuval

After 10 days of sickness now getting better n hope to recover completely soon. Thanks a ton friends for all your Prayers n Wishes. As per my schedule i will be posting my Blogging Marathon posts this week. Last week for I am not able to do BM - Indian Basic theme,as i didn't prepare rough draft n also it requires more writing n a elaborate recipe since i was struggling lot with my headache n dizziness. So i quit that week from Blogging Marathon. But This week I will be posting under the "Theme - Dry Vegetable Saute". Potato is my Family Favorite vegetable n i often do this Sliced Potato Fry. But for a change this time added 1/2 cup of chopped capsicum n masala powder to my fry. It was so flavorful n yummy, we had this potato capsicum fry with Mixed Beans Dhal Bhat. Very Simple Recipe, even kids will love this stir fry if it made less spicy. So please adjust spices to your taste. For this fry i used Yukon Gold Potatoes n Red Potatoes. Both tastes good for stir fry/curry/roasting. Now to the recipe...

Ingredients
  1. Potatoes    1lb / 500kg or 5 medium sized potatoes
  2. Capsicum   1 medium (thinly chopped)
  3. Onion    1 large (sliced)
  4. Ginger Garlic Paste    1 tbsp
  5. Turmeric Powder    1/4 tsp
  6. Chili Powder    1 and 1/2 tsp
  7. Curry Masala Powder   1-2 tsp
  8. Salt      to taste
  9. Cilantro    2tbsp (finely chopped)
To Temper
  1. Oil    1 tbsp
  2. Mustard seeds    1/2 tsp
  3. Urad dal   1/2 tsp
  4. Cumin Seeds   1/4 tsp
  5. Fennel seeds    1/2 tsp
  6. Curry leaves    1 sprig (optional)
Method
  • First Wash the potatoes thoroughly using veggie brush and wipe with kitchen towel.
  • Then cut them to your desired shape n sizes or small bite sized pieces.
  • After that transfer it to a microwave safe bowl, sprinkle little water (1tbsp) and microwave in high for 60-80 seconds. 
  • Then remove from the microwave n keep aside.
  • Now Heat oil in a kadai/skillet, then add the tempering ingredients one by one and wait till it splutter.
  • And then add onions n ginger garlic paste saute till the raw smell of the gg paste leaves.
  • Then add chopped capsicum and stir fry for a minute and add potatoes, turmeric powder enough salt and stir fry for a minute.
  • Now add chili n curry powder and stir fry for 2-3 minutes or until the masala get coated well n the potatoes turn crisp n cooked.
  • Lastly add some chopped cilantro n turn off the stove.
  • That's it... Crispy n Yummy Potato Capsicum Stir Fry Ready. Serve as a side dish with any meal.

Notes:
To microwave potatoes before cooking is optional but it quicken the process, stir fry takes less than 10 minutes to done.
Instead of curry powder you can also add garam masala powder or chicken masala powder or u can skip the masala powder completely.
Do not omit fennel seeds n curry leaves, both gives nice flavor like chicken fry.
