Garlic Buns / Chili Garlic Buns

I love any kind of savory bakes and i never got failed working with yeast :) Last week i baked this soft, delicious buttery garlicky buns for our tea time munch and used the same for dinner with pav bhaji masala. This was so soft n flavorful buns, got the recipe from USMasala. Sure a keeper recipe and i tweaked it slightly, the result was awesome. Cut the buns, spread some green chutney add any veg dry saute close it n enjoy...so yummy n satisfying. But i couldn't click such way :( Now to the recipe...

Ingredients
  1. Whole Wheat Flour   2 cups
  2. All Purpose Flour    1 cup
  3. Rapid Rise Yeast   1 tbsp
  4. Olive Oil   2 and 1/2 tbsp
  5. Salt      1/2 tsp
  6. Baking Powder    1/2 tsp
  7. Garlic powder    1/2 tsp
  8. Dry Oregano    1/4 tsp
  9. Sugar    2 tbsp
  10. Warm Milk    1 1/2 cup + 1/4 cup for brushing
For Garlic Herb Mixture
  1. Butter    2-3 tbsp
  2. Oregano   1/4 tsp
  3. Red chili flakes    1 tbsp
  4. Garlic    4 cloves (minced)
  5. Salt   a pinch
  6. Dry Parsley    1/4 tsp
  7. Black Pepper    4-5 corns(crushed finely)


Method
  • Take a small mixing bowl, add sugar,yeast n warm milk and mix it and leave it aside for 10 minutes to become frothy.
  • Once it done, add 1 tbspolive oil and mix well,
  • In a large mixing bowl, add sifted flour,baking powder,garlic powder,oregano,salt and mix everything well and then make a dent in the center and pour the yeast-milk mixture little by little and using hands start mixing the dough.
  • The dough will be too sticky, don't add flour just grease your hands(with remaining 1 and 1/2 tbsp olive oil) and start kneading the dough for 5-6 minutes.
  • After that apply oil all around the dough and cover the dough with damp cloth or cling wrap the bowl and  keep it in warm place for 1 hour.
  • Mean while make the garlic herb, heat a pan melt butter, add garlic and other ingredients and cook for 1-2 minutes and keep ready.
  • After one hour, the dough will be doubled in size, deflate the dough and knead it for few seconds and divide the dough in to 12 equal parts.
  • Line the baking tray with foil paper or parchment paper.
  • Now take one part, roll it and make it to a round shaped balls and place it in the lined tray. do the same for remaining balls and place few inches apart.
  • Cover this again with damp cloth or cling wrap and set aside for 30 minutes.
  • Preheat oven to 400 degree Fahrenheit.
  • Brush the dough with milk or egg wash and Bake it for 10 minutes.
  • Then remove the tray from oven and brush each buns with the garlic herb mixture and bake it for another 3-5 minutes or until light golden brown.
  • That't it...Buttery Garlic Buns ready. Allow to cool in a wire rack and serve Warm.


Notes:
the dough will be sticky while kneading, so don't add flour, can add 1-2 tsp if feel too sticky and use oil to knead it.
Instead of whole wheat flour-all purpose flour combo u can use only All purpose flour or only whole wheat flour alone to make these buns.
If u don't want your buns to be garlic flavored, simply omit the garlic herb procedure and bake it as a plain buns.
These are so soft n delicious and more fresh than the store bought ones.

    1. I use Flieschmann's Rapid Rise Yeast. Yes, Rapid rise n Instant yeast or same, they can be used instantly no need that yeast proofing procedure.
