Honey Cheese Corn Muffins / Honey & Cheese Corn Muffins



I really missed by space and blogging for the past few days. One or the other things kept me away from blogging and its almost a week i posted any recipe here. Blogging is one of the best stress reliever to me and i felt relaxed after posting a recipe by reading all my fellow bloggers lovely comments  :)
So today i wanted to share a recipe which i made few weeks back, easy and delicious Corn Muffins with the goodness of honey and cheese. This is the first time i tried muffins with corn meal and i loved it. I had some mozzarella cheese left after using it in my Pinwheels Pizza and Onion Cheese Pull Apart bread and wanted to use it and searched for a recipe and i found this recipe interesting. But i halved the recipe and slightly modified it to my taste. Added some chili flakes to it and loved the spicy, sweet n bland flavor of corn meal. Do give it a try!!


Ingredients
  1. All Purpose Flour       1 cup
  2. Corn Meal        3/4 cup
  3. Baking Powder          1 tsp
  4. Salt       1/2 tsp
  5. Honey      1/2 tbsp
  6. Butter       1 and 1/2 tbsp
  7. Egg   1 no.
  8. Milk         1 cup
  9. Mozzarella cheese         1/2 cup grated
  10. Corn Kernels         1/4 cup
  11. Bell Pepper    1/4 cup diced(red or green color)

Method
  • Line muffins tray with paper liners and keep aside.
  • In a mixing bowl, combine flour,corn meal,salt and baking powder and keep aside.
  • In another bowl, add milk, egg, honey and whip lightly and add this mixture to the dry ingredients.
  • combine well along with melted butter and lastly stir with cheese, corn kernels and diced bell pepper.
  • And now fill the lined muffin cups 2/3 with the mix.
  • Bake at 375 degree Fahrenheit for 20-25 minutes or until top turns light golden brown.
