Ragda Recipe | Ragda Chaat Recipe | How To Make Ragda(Yellow Peas Masala) Recipe

Ragda Recipe
Ragda/Yellow Peas Masala Chaat is one of our family's favorite chaat. Ragda is a versatile dish, that you can serve it in number of way, you can serve it as such with some finely chopped onions, tomato and crispy fine sev on top. And also you use it for Masala Puri Chaat, Samosa Chaat, Ragda Patties, Aloo Tikki Chaat and Masala Papdi Chaat(Coming up Next). There are many recipes for Ragda/Yellow Peas Masala I have already shared 2 different recipes, a simple version of Ragda and Green Peas Masala Chaat.
This version of Ragda is slightly spicy, tangy and addictive recipe. I added a ladle of Tamarind Sweet Chutney to the boiling ragda and it added a special tangy mildly sweet to Ragda/Yellow Peas Masala. You can also replace the tamarind chutney with Amchur powder and some hint of sugar or jaggery. Now off to the recipe...

Chaat is my favorite snack and I love all varieties of Chaats. In India we used to enjoy Chaats at Hotel & chaat Shops. Amma doesn't know to prepare any chaat, she only makes Masala Pori & Beach Style Sundal Masala. So, Once or twice a month we go out to eat Chaats. But after coming here after Marriage I missed eating chaats and after moving to New Jersey, we enjoyed some tasty Chaats at Hot Breads. Then with the help of my North Indian friends, You Tube videos  and food websites I learned to make different chaat recipes at home. As everyone at home loves chaat, I often make simple chaats like Channa Chaat, Bhel Puri, Peas Masala Chaat at home. I always have Chaat Chutneys in my fridge. I prefer Dates Tamarind Chutney instead of Tamarind Chutneys for chaat. So I make it bulk and also it stays good for a month. If you have chutneys in hand, then making chaat is so simple and quick.
Now coming to the Peas Masala Puri,  is nothing but a Peas Masala served with crushed puri, chaat chutneys, onion, tomato & finally topped with generous sev. You can make any desired Peas Masala gravy like Green Peas Masala or Yellow Peas Ragda. I used my Green Peas Masala recipe and the chaat turned out super flavorful and delicious.

Yellow Peas Masala/Sundal Masala is an interesting and healthy snack recipe that is similar to Chaat/Ragda Recipe. But this Sundal Masala is entirely different from North Indian Style chaats. More or less like a bean soup with simple spices. This kind of sundal masala is one of the popular street food of Tamil Nadu. In my home town, Salem, during evening time you could find lots of road side shop where they sell bhaji, bonda, pakora, thaatu vadai set, this Peas Masala & Chaats. And near to our house there was a small shop which was well known for all varieties of savory snacks. We have tasted almost all of their snack items and especially their Samosa Chaat & Cutlets are my favorite. It was a small shop with good hygienic environment.

Peas Paratha / Peas Stuffed Paratha

Peas is the one of the veg that my kids do not eat. They even like Bitter gourd but did not know the reason why they dislike Peas. I love peas and Mr.V also do not complain with peas recipes but the kids they will not even taste it. They do not eat peas in any dish, even in their favorite Mutter Paneer Masala. I have experimented in so many dishes but, they constantly say big NO to peas. The I stopped compelling them to eat peas and sometimes they like to eat Peas in mashed form. So I rarely make Paneer Peas Paratha for them and the Sprouted Peas Paratha is my favorite.

Ragda Patties / Aloo Tikki & Ragda Recipe

Happy Onam Wishes To All who Celebrate this grand Festival. Actually i planned to share few Onam Sadya recipes but couldn't do it may be next year will try to share. Now coming to today's recipe Ragda Patties / Ragda Pattice, Popular Indian chaat or one of the famous Mumbai's Street side food. But i have tasted this refreshing and yummy chaat in my hometown chaat shops. I still remember that shop which was near to my home in salem town area, they sell all kind of snacks/deep fried snacks, sweets, chaat recipes and I am a big fan of their Chaats - Ragda Pattice, Samosa Chaat, Cutlet Chaat, Pani Puir, Masala Puri, Kachoris, Dahi Puri & so on. A plate of this Ragda Pattice is just Rs.5 (13 yrs back) with so yummy taste and so many days this platter was my dinner meal. Really this is so filling, healthy and delicious snack/meal.

Peas Chaat / Peas Masala Chaat Recipe / Green Peas Masala Chaat ~ Healthy & Refreshing Snack !

Mr.V love sundals(kind of legume salad) and he mostly prefer it for evening snacks. Though I am not much fond of sundals very rarely prefer Chickpeas/Channa sundal and i love eating these protein packed & fiber rich legumes in chaat form. Peas Chaat / Channa Chaat or any legume simply cooked and sprinkled with chaat masala and few lemon drops would make my snack plate more happy and filling.

This Peas Chaat  / Peas Masala Chaat is one such healthy & refreshing snack, a pure vegan recipe. This recipe was shared to me by my sister long back, 2 yrs back. I cook this peas chaat often but couldn't get chance & time to blog it. But this time made it for blog and clicked happily :) This peas chaat doesn't involve chaat chutneys since we add fresh cilantro, mint, tamarind, jaggery gives spicy, sour & sweet taste. But serving with chaat chutneys makes it even more tasty and refreshing. Without any further delay will move on the recipe....

Broccoli Peas Pulao using Coconut Milk / Broccoli Peas Coconut Milk Pulao

Like Potato we love Broccoli and often make recipes with it. My kids like to munch Stir fried broccoli , baked broccoli, Roasted Broccoli or simply blanched n salted one as such. This is all because of my repetitive cooking recipes with Broccoli for the blog. So a big thanks to this blogging world. Now my friends named my family as " Broccoli Family" :)
Have tried/experimented more recipes with Broccoli & here's One more addition to my Broccoli Recipes, Broccoli Peas Pulao using Coconut Milk. This is very simple pulao with bursting flavors n taste. The combo of whole Garam Masala, coconut milk & Broccoli turned out so good and a very aromatic pulao I ever made. I also added a handful of methi leaves which is one more reason for the unique flavor n taste. If you are looking for some exotic recipe with simple preparations n ingredients this is one best recipe. Even people who do not like to eat broccoli will definitely love eating it this way. Mix Veg Paratha / Mixed Vegetable Paneer Paratha / Mixed Veg Stuffed Paratha - Kids Lunch Box Recipe!

During my Knee treatment i was not able to walk, cook or do any work by own, that time H managed to cook and took care of me n my kids. But sometimes he wasn't able to cook due to his work pressure and  that time we have managed with some bread, fruits & with some ready stuffs like frozen parathas n store bought idli/dosa batter etc. Once He bought two packets of Haldiram's Frozen parathas - Gobi Paratha & Mix Vef Paratha. Both Parathas tasted so good and i liked the mixed Veg Paratha. Its a combo of mixed vegetables - aloo,gobi,peas,carrots and with Paneer. I had already posted a similar recipe but without potato/aloo and cauliflower but with capsicum and cabbage. That;s also one of my kids' fav recipe, check out the link for Veg Paneer Chapathi Roll.

Aloo Methi Mutter Curry / Potato Peas Methi Curry

Today's recipe is rich and creamy curry made with Potato/Aloo-Peas-Methi leaves combo. This is one of my experiment which turned out super doper Hit with my family. A month back H bought one Instant curry mix(dry powder) like spice powder of Paneer Butter Masala, Methi Malai Mutter n one more pack. That spice mix powder gives really a restaurant style taste n it was more liked by my kids especially the Paneer Butter Masala. Its my long time wish to recreate that spice mix at home and wanted to try a curry in that style.

Onion Peas Kurma


For Day 2 of Blogging Marathon under the theme Cooking With Onions, i have chosen my Mom's favorite recipe, Onion Peas Kurma. My mom makes this kurma mainly for Puri. It doesn't require more ingredients n big preparation, just simple kurma with usual coconut grinding and veg sauteing.

I just tweaked my mom's recipe and made it with frozen peas. If u r out of veggies but at the same time u want to make some rich n delicious side dish for your rotis, this kurma is the best option. Since this kurma tastes excellent even without vegetables but for a whoelsome n healthy meal u can also add a cup of finely chopped mixed vegetables of your choice. But try this version without veggies, u will love this kurma for its unique flavor n taste. I like the onions to be bit crunchy, sure that adds a good taste to this kurma. Sprouted Peas Paratha / Peas Paratha / Stuffed Peas Paratha

Stuffed Parathas are always hit with my kids, so once in 10 days i make stuffed parathas n this time made with sprouted peas. I had already posted Paneer Peas Paratha with fresh peas n paneer. This time with dried peas. Actually i soaked to make it for Saturday Lunch n thought to click on the same day but this weekend was rainy, cloudy and i couldn't get sufficient light to take pics, so kept soaking for 2 days  i just washed n replaced the water for every 8 -10 hours. At the end of 2nd day the peas started sprouting beautifully and also it was a shiny day. Then without any second thought i proceeded and parathas tasted so yumm n overall its very nutritious n delicious with Carrot Raitha. U can't eat not more than 2 parathas, it was filling so its good choice for dieting and as its made with whole wheat flour its a fiber n protein rich, complex carb meal. Now to the recipe...

Thakkali Pattani Thokku / Tomato Peas Curry

         This is another recipe of my Mom, one of my favorite too,love it with hot rice n papad/Potato Fry. Very spicy and tangy curry cooked with peas. Garlic,Mint and whole garam masala gives you lots of flavor. We make this curry with dried peas, I used some left over soaked peas which i used after making Green Peas Cabbage Vada. The peas were sprouted and this curry turned out to be more nutritious and delicious. You can also try this with frozen/fresh peas. Plz Adjust the spice level according to your taste, mine was HOT...HOT...Now to the recipe..

Cumin Flavored Peas Rice ~ Lunch Box Special !

            Today's recipe is quick lunch box special recipe. I used the same spice masala which i used for my Aloo Paratha. To make this rice more healthy and tasty i added some finely chopped carrots and green capsicum. The end product was so yummy and flavorful, simple potato chips or papad goes best with this rice. Adjust spices to your taste and for kids serve this rice along with raitha/plain yogurt. I made this recipe for CWS- Peas event but because of my illness and holidays i couldn't able to post it in time. Any way i have some more event to share this recipe :) I think this is one of the best way to use Left Over Rice.Now to this simple and healthy recipe...

Green Peas Cabbage Vada

        Simply i tried vada/vadai with dried green peas and little chana dal. the flavor was bit different but the taste and crispness was similar to Masal Vadai/Dal Vada.Grinding part bit difficult to me, if u have processor or Indian mixie it works easy for you. I used more cabbage n less onion to this vada and was totally different and yummy. I made this for our tea time snack and enjoyed this chill evening with hot n spicy vada n coffee. Do try this enjoy.        Hope everyone enjoyed your festival holidays and back to routine. In my home we all are sick and couldn't able to enjoy our holidays simply took complete rest. But still having cold and ear pain, for kids also fever comes n goes :( Giving prescribed medicines but didn't recover :_( Dunno what to do, okk let's move to today's recipe is "Cauliflower Peas Kurma", simple and tasty kurma, i made this long back along with Spring Onion Carrot Paratha. Soya Methi Mutter Sabzi


            From my childhood days i love this soya/meal maker a lot. I love this in biryani, my mom makes yummilicious biryani with soya/meal maker.I just love the biryani...yum..yum.. Its texture appearance are similar to meat and the protein content of soya are richer than the meat. Recently started using soya chunks/granules in many forms,(soya granules) curry,(soya)cutlets and soya bread rolls and now with combination of methi n mutter. This is very quick sabzi and more tasty with rotis/puris.

Ingredients
  1. Soya Chunks   1 cup
  2. Methi leaves    from 1 bunch(cleaned n washed)
  3. Mutter/peas    1/4 cup or less
  4. Onion     1 large(sliced)
  5. Tomato   1 large(chopped)
  6. Wheat flour     1 tsp
  7. Chilli powder    1 tsp
  8. Turmeric powder     a pinch
  9. Cumin powder     1/4 tsp
  10. Garam Masala     1/2 tsp
  11. Amchur powder    a generous pinch
  12. Salt     to taste
  13. Oil     2 tsp
  14. Fennel seeds    1/4 tsp(optional)
  15. Cumin seeds    1/2 tsp
Method
  • Take a wide skillet, add 4-5 cups of water , bring to boil and add soya chunks and leave it for 3-4 minutes and drain completely, squeeze the soya chunks to remove excess water and chop them roughly and keep aside until use.
  • Heat oil in a pan, add fennel n cumin seeds allow to splutter then add curry leaves and sliced onions.
  • Saute till it turns translucent and add chopped tomatoes saute for another minute.
  • Now add 1 tsp of wheat flour and stir fry for a minute.
  • After that add, chilli, turmeric, cumin and garam masala powder and stir fry for a minute.
  • Then add chopped soya chunks and mix everything well and stir fry for 1-2 minutes.
  • And add peas , mix well and add methi leaves and stir well and cook with lid for 2 minutes.
  • Lastly add amchur powder and mix well and simmer for few minutes and turn off the stove.
  • That's it...Soya Methi Mutter Sabzi is ready to serve. Enjoy with Hot Rotis/Puris.

Gobi Mutter Masala / Cauliflowe Peas Curry (With Cashew nut N Poppy Seeds)


            Today's recipe is Gobi Mutter Masala, a rich and creamy curry cooked with cashew nuts and poppy seeds Paste. For a change, this time i steamed and baked the cauliflower florets and then added it to the curry. This method makes the cauliflower firm and much more tasty. And also i used Dry red chilli instead of chilli powder. The Gobi Mutter curry / masala was so creamy and yummy which suits well with Naan / Rotis / Pulav etc. I served with Rotis. Friday Dinner was a delightful dinner for us. This curry is perfect for Potluck Party or any get together to impress the guests with rich and flavorful recipe.Now to the recipe,

Ingredients
  1. Cauliflower florets   1 and 1/ 2 cups
  2. Peas     1/2 cup
  3. Onion    1 Medium(finely chopped)
  4. Tomato    2 no.s(medium) Diced
  5. Dry Red Chillies     4-5 no.s
  6. Cashew nut     8-10 no.s
  7. Poppy Seeds    1 tsp
  8. Garlic      4 big cloves or 7-8 small 
  9. Ginger     2" piece 
  10. Cumin seeds      1/2 tsp
  11. Garam Masala    1 tsp
  12. Kasoori Methi / Dried Methi leaves     1 and 1/2 tsp
  13. Salt    to taste
  14. Oil    2 tsp + 1 tbsp
  15. Olive Oil    2 tsp
  16. Cilantro     few finely chopped
Method
  • Preheat oven to 350 degree Fahrenheit'
  • Wash the cauliflower florets and steam it for 3-4 minutes or microwave for 2-3 minutes and drain completely and keep aside.
  • Take a oven safe dish, add the steamed cauliflower florets, drizzle olive oil, sprinkle little salt and any spices(i used cajun hot seasoning) mix well and Bake it for 12 - 15 minutes or till it turns crisp n moisture dried up.
  • Soak  Cashew nuts and poppy seeds in a hot water for 15 minutes .
  • Heat 2 tsp oil in a kadai/pan, add dry red chillies ginger and garlic and fry them lightly.
  • Then add finely chopped onions and saute till it turns translucent.
  • After that add, diced tomatoes and saute till the tomatoes turns soft n mushy.
  • Allow the onion - tomato mixture to cool completely and then grind it to a smooth paste along with soaked cashew n poppy seeds. (use very little water to grind them).
  • Now heat 1 tbsp oil in a non stick vessel, add cumin seeds and allow it to splutter then add the ground paste.
  • Turn the heat to medium and let the ground paste cook in medium heat for 5 minutes.
  • Then add garam masala powder and again cook for 3 minutes or till raw smell leaves.
  • After that add 1/2 cup of peas (fresh or frozen) and 1/2 cup of water and cook covered for 2 minutes.
  • Now add the baked cauliflower florets and kasoori methi , simmer for 2-3 minutes .
  • Lastly add some finely chopped cilantro and turn off the stove.
  • That's it...Creamy and Rich Gobi Mutter Masala is ready to serve. Serve Hot with any Indian Flat breads / Pulao.

Notes:
Instead of red chillies you can also add 1-2 tsp chilli powder or kashmiri red chilli powder and follow the same method.
Lastly you can also add 1-2 tbsp of heavy cream for more rich and creamy taste.
Instead of cauliflower you can also add paneer mutter , Aloo mutter , aloo gobi or any desired veg and Enjoy !!!
