Janmashtami Wishes to Everyone, Hope you had a wonderful celebration with your family and friends. We too had a good day with simple celebration at home. I couldn't post this Ragi Thattai Recipe on time. Anyway, this Ragi Thattai is a crispy, crunchy and yummy savory snack to enjoy with hot tea for evening snack or as Janmashtami Bakshanam  to offer Lord Krishna.
Actually, I wanted to post Rice Flour Thattai yesterday, but I don't have enough rice flour to make thattai and I was worried on seeing my Thattai Pictures on Instagram. And one of my Insta friend, Rekha who blogs at Resh Kitchen, suggested me to try Ragi Thattai. I was also interested with that idea and tried it immediately and planned to post this Yesterday. But somehow I lost the enthu by end of the day. This Ragi Thattais makes a great snack to enjoy with a cup of hot chai. These are super easy to make and the recipe as follows..

Ragi Malt(Sweet) Recipe | Dates Ragi Malt | Sweet Ragi Porridge Recipe | Ragi Malt With Dates & Nuts

Ragi Malt Recipe
Today's recipe is a healthy and equally delicious sweet porridge prepared using Ragi flour, Palm Jaggery, Dates & Nuts. I cook Ragi/Finger Millet once or twice in a week and mostly a savory dish like Ragi Adai or Ragi Idli for dinner or breakfast. Rarely make Ragi Puttu for kids and this time instead of Puttu I made Sweet Porridge/Ragi Malt. Instead of plain version with milk and sugar I made it extra healthy using dates puree and Palm Jaggery. Palm Jaggery and dates are natural sweetener and the porridge turned out super delicious and also the color of the porridge was so dark like chocolate malt. My kids loved it a lot.
Ragi/Finger Millet porridge are super healthy and delicious recipes for growing kids, so try to include at least once in a week in their diet. If you don't have dates in hand you can skip dates and make it as a plain ragi malt. Here I used store bought Organic Ragi Flour and Organic Palm Jaggery, for vegan option use Coconut milk or Almond milk. I have tried with coconut milk too. Theres not much difference in the taste of ragi malt using dairy milk and coconut milk. Cardamom powder enhances the taste and flavor but it is optional.

Whole Wheat Ragi chocolate Cupcakes ~ Coffee Flavor !!

          Final day of Blogging Marathon under the theme, "whole grain dishes" and today i wanted to end the session with a healthy delight, Whole wheat Ragi Chocolate Cupcakes with coffee flavor and a eggless version too. Before entering in to the recipe, i would like to thank you all my dearies you showered your love and concern Yesterday via your comments. Really i felt relaxed after reading all your encouraging words. Today last of BM and i don't want to miss that as i have already made the recipe 2 days before but couldn't click well as i was so much disturbed with my knee pain.
         Today i didn't even cook anything, idle watching some cartoons :) Sure no cooking n blogging but i have some recipes in hand will use that once in 10days or whenever i feel lonely n depressed will come Here n meet u all. Since blogging is the only relaxation,recreation and u My Fellow bloggers are the only friends for me now to share ...so i don't want to miss u all...Once AGain my Heartfelt thanks to everyone for your love,support n wishes...Don't forget me n my little space :) !!
        Ok now coming to the recipe, i came across this Ragi Chocolate Cake in Lite Bite when i was googling for Ragi bakes. I tried this recipe with whole wheat flour and the result was super and tasted so good. But becuase ot whole wheat flour,the liquid ingredients which mentioned was not enough then i added 1 cup of hot water to the cake mix and baked them bravely. To my surprise it turned out so soft n delicious. And also instead of cinnamon i added Instant coffee powder that was also a Hit. Later i thought,if we add the coffee powder to the hot water n then pour the black coffee to the cake mix to get real n more coffee flavor. So next time will try n update the result. Ragi Keerai Pakoda/Ragi Spinach Pakoda


      Yesterday i tried keerai pakoda with ragi flour...my grand ma use to make keerai bonda with wheat flour,godhumai bonda,Instead of wheat i substituted with ragi and it turned out a great snack...crispy too.Its quite satisfying and guilt free snack :) And also i tried some in oven-baking.that was also good like patties and enjoyed with ketchup.

Ragi Puttu


       Puttu, favorite snack from my childhood days.my grandma use to make this often.very healthy and delicious snacks.you also try this healthy munch.
Nutritional Benefits of Ragi:The interesting feature of this food is that it provides calcium, phosphorus, iron. vitamin B1 and B2 in abundance, thereby preventing malnutrition in spite of restricted food.If constipation is your major health concern, then this Raagi meal best suits you as it contains plenty of cellulose.Weight conscious individuals can use it. By eating raagi preparations, the constant desire to eat will be limited, reducing the daily calorie intake.Excessive use of raagi increases oxalic acid, hence, it is not advised in persons suffering from urinary calculi.


Ingredients
  1. Ragi Flour   1 cup
  2. Brown sugar   2 tbsp
  3. Shredded coconut    3 tbsp or more 
  4. Cardamom   1-2 no.(crushed finely)
  5. salt   a small pinch
Method
  • Take ragi flour in a wide vessel and mix it with salt.
  • Using hot water(bearable) sprinkle on the ragi flour and  mix well.
  • Again sprinkle some water mix well,use your hand to sprinkle water and to mix.
  • Mix the entire ragi flour with water just little by little and make it like crumbled texture.(you can make a ball shape with the mixed flour but when u broke the ball , it should be able to crumble back again..thats the perfect consistency)
  • Once everything is done,transfer the ragi puttu flour to a damp cloth and then tie the cloth and keep it in idly plate for steaming.
  • Steam it for 20 minutes.after steaming carefully take the cloth out ,untie and transfer the steamed ragi puttu to a bowl and add brown sugar,coconut and cardamom powder.
  • Mix everything well with a spoon and the ragi puttu is ready now.
  • Serve hot....
Instead of brown sugar you can also granulated sugar.For kids,serve the ragi puttu with a few drops of ghee and ghee roasted cashew nuts.

Ragi Vegetable Dosa/Finger Millet Vegetable Dosa


        This is Instant dosa...no grinding n no fermenting...You can have this instantly..My usual ragi dosa is with simple seasoning..but this time i added drumstick leaves(murunga keerai),3 colors bell peppers,cabbage,carrot n onion...i bought murungai keerai this week so wanna to make ragi dosa  n murunga keerai sambar, my favorite.This dosa was so flavored with onion ,keerai n capsicum...really this was so excellent taste..and really a wholesome n healthy.we enjoyed with curd.Coconut chutney suits well for this ragi dosa.
     Nutritional Benefits of Ragi: Ragi, an excellent source of calcium, contributes towards bone health. The cereal is beneficial for growing children and older people who need a constant supply of calcium for healthy growth and maintenance of bones. Ragi shows antioxidant properties, and its phytochemicals contribute towards a slow digestion process. Hence it helps to control blood glucose levels in a diabetic.Ragi, being a good source of iron, can be considered as a useful cereal for anemic patients.

Ingredients

  1. Ragi flour  2 cups
  2. Rice Flour   4 Tbsp
  3. Rava/Sooji   6 tbsp
  4. Salt    as needed
  5. Cabbage    1 handful(thinly striped)
  6. Carrot    1/2 (shredded)
  7. Drumstick leaves    1 handful or more
  8. Red,yellow,green Bell peppers    finely chopped each 1/4 cup
  9. Onion     1 medium (finely chopped)
  10. Ginger   2 tsp(finely chopped)
  11. Green chillies    2-3 (finely chopped) adjust to your taste.
  12. Chana dal      1 tbsp
  13. Mustard seeds    1/2 tsp
  14. Cumin seeds    1 tsp
  15. Curry leaves    1 sprig
  16. Oil   2 tsp + to make dosa.
Method
  • Take a mixing bowl add ragi ,rice flour ,rava n enough salt mix well and using water make it to a thin dosa batter consistency.(sorry forgot to measure water level) and keep aside for 30 minutes.
  • Mean while wash the vegetables and chop to the desired sizes and separate drumstick leaves from its stalk and keep everything ready for seasoning.

  • Heat oil in a pan,add mustard seeds when it pop add cumin seeds and chana dal and fry till chana turn light brown and add ginger,green chillies,curry leaves and onions saute for few seconds.
  • Then add drumstick leaves,cabbage and saute for 30 seconds and add bell peppers and fry for a minute and lastly add the shredded carrot and stir for few seconds and remove from the stove.
  • And it to the prepared ragi batter and mix well.Now the ragi batter is ready to make dosa.
  • Heat a tawa/griddle, pour a ladleful of batter and spread gently in circular motion..make it thick like adai.
  • add oil in and around the dosa,cook in low medium flame (to ensure proper n complete cooking).
  • After 2 minutes flip the dosa and cook till it get cooked and turned little crisp on both sides.
  • Thats it...Yummy ragi vegetable dosa is ready to serve hot .Serve with coconut chutney or any accompaniment of your choice. 
Note: If drumstick leaves is not available then try with any available vegetables or simple seasoning with onion , ginger ,green chillies.Rava n rice flour gives extra crispness.You can also try with adding mushrooms.

Ragi Adai / Finger Millet Crepes - Diabetic Friendly Recipe!

  
This is Instant Adai, no need for fermentation. my grandma used to make this Ragi Adai for evening tiffin and my favorite too. It can be served with coconut or tomato chutney...i like to eat as such since this adai is made with more onions, chilli, cilantro. So i do not prefer any side dish or a simple pickle is enough for me. This is a very useful and apt recipe for Diabetic Patients, and even good for diet people and pregnant women.
