Carrot Halwa - My 100th Post

Celebrating my 100th post with The Traditional Indian sweet and My Hubby's favorite Carrot Halwa.Today My Blog is 60days old With 100 recipes . I cant believe, really i m very happy. It wouldn't happen without my Friend's support and encouragement. My Very Special Thanks to Anitha, Asha, Balaaji, Vasuki, Prabha, Priya Sendil. Thank you Guys for your encouragement and appreciation. Last but not the least I Thank My Hubby and my two teddy boys (who will help me more in taking photos...hahahaaaaaaaaa...) ok ..Let's check the recipe...
Ingredients
  1. Milk    3 cups
  2. Carrot   2 cups or 3no.s(shredded)
  3. Cardamom powder    1/2 tsp or crush 4 no.s
  4. Sugar    1/2 cup
  5. Nuts & Raisins   as needed
  6. Ghee    2-3 tbsp
I didn't use butter or ghee in  my halwa, because V don't like ghee or butter. Instead I use neutral oil to fry cashews and raisins.
that's y  My Halwa looks dry and not glossy but taste wise its very gud and also healthy !

Method
  • Take a heavy bottomed vessel, add milk and allow to boil the milk in high flame with occasional stirring. The quantity of the milk should be reduced to half and get little thick and keep aside.
  • Heat oil or butter in a non-stick pan, then add the shredded carrots and stir fry for 3-4 minutes.
  • Then pour the boiled milk to the stir fried carrots and cook in medium flame till all the milk absorbed and dried to a thick paste.
  • Once all the milk get absorbed ,add sugar and stir it well.
  • when sugar get completely dissolved add cardamom powder and few spoons of melted butter, mix everything well and keep stirring until halwa starts leave the sides of the pan.
  • Heat 1-2 tbsp butter and fry nuts and raisins and add to the halwa.
  • Now the Carrot Halwa is ready and garnish with nuts and serve warm or cold.
