Stove Top Paneer Kulcha Recipe

Paneer Kulcha Recipe, an easy and super tasty stove top method. Last month from our local Indian Restaurant kids had Paneer Kulcha & Tandoori Roti. And they loved the Paneer Kulcha a lot, the paneer stuffing was so simple used fresh paneer with some chillies and spices and we liked it. Also the Kulcha was not super thick, just little thicker than Paratha and it was soft and buttered well. From that time they kept asking me to make Paneer Kulcha at home. And I myself wanted to recreate that recipe and followed my neighbor Aunt's Kulcha Recipe, which I posted few years back. And the Paneer Stuffing was also simple just like what we ate at our local restaurant. Paneer Kulcha turned out pretty good and it was so flavorful and delicious, my little one even said it was way better than the restaurant ones, and what else you need right?! Now off the recipe..
Paneer Kulcha Recipe

Paneer Kulcha Recipe

Makes 4 Kulcha
  1. All Purpose Flour/Maida 1 cup + 2 Tbsp
  2. Baking Powder   1/4 tsp
  3. Baking Soda/Cooking Soda 1/8 tsp
  4. Salt    to taste
  5. Sugar 1 and 1/2  tsp
  6. Yogurt/Curd   2.5 tbsp
  7. Water     as needed to make dough
  8. Oil    1-2 tsp  for kneading
For Paneer Stuffing
  1. Grated Paneer     1 cup(tightly packed)
  2. Green Chilli  3(finely chopped)
  3. Onion    1/4 cup(finely chopped)
  4. Cilantro   2 Tbsp(finely chopped)
  5. Jeera/Cumin seeds   1/2 tsp
  6. Chaat Masala    1/2 tsp
  7. Garam Masala    1/2 tsp
  8. Amchur Powder/Dry Mango Powder   1/4 tsp
  9. Salt   to taste
For Topping
  1. Nigella seeds/Kalonji seeds/Onion seeds  1 tsp
  2. Cilantro few finely chopped(optional)
  3. Ghee or Butter for brushing

Using Baking powder and baking soda is must for the recipe.

Resting dough for minimum 1 hour is required and you can rest 2-3 hours also or overnight in the refrigerator.

If you increase All Purpose Flour quantity, increase other ingredients quantity too.

Instead of green chili you can also use red chili powder for paneer stuffing.

Adding kalonji seeds and cilantro topping is optional you can skip also but it sure gives lovely flavor and taste. 

  • In a mixing bowl, add flour, salt, sugar, baking soda, baking powder and mix well.
  • Then add curd/yogurt and mix well and using water mix it to a soft dough.
  • Now add 1 tsp oil and knead the dough for 4-5 minutes until smooth, soft and elastic.
  • Then keep the knead dough in a bowl, smear the dough with little oil and let it rest for 1 to 1.30 hours.
  • You can even rest the dough(refrigerator) overnight and make it for next day breakfast.
  • Mean while make Paneer Stuffing
  • Take grated paneer in a bowl, and to it add the rest of the ingredients listed under the heading "For Stuffing" and mix well and divide the paneer mix into 4 equal portions.
  • After 1-1.30 hours of resting time, punch the dough and again knead for few seconds and divide into 4 equal portions.
  • Now take one portion of the dough, flatten it to 2-3' wide on a floured surface and keep one paneer filling.
  • Bring the edges together twist and roll it to a smooth ball.
  • Again roll this stuffed ball into a 1/8" thick disc and sprinkle some kalonji seeds, cilantro and using rolling pin gently roll/press it so that the topping sticks to the rolled kulcha, follow the same method for rest of the dough.
  • Then heat a tawa on medium high heat, once it is sprinkle water on one side(the side without kalonji/cilantro topping) of the stuffed paneer kulcha and place the water brushed side on the hot tawa and cook for 1-2 minute or till bubble appears on top.
  • And then flip other side and gently press the kulchas and cook till brown spots appear.
  • After that, remove the kulcha from tawa and show the side which has toppings on the flame directly to get nice charred spots and flavor. 
  • Once done, remove from the tawa and immediately brush the hot Paneer kulcha with butter or Ghee.
  • That's it...Serve Hot Paneer Kulchas with Chole Masala or simply with spiced Yogurt and pickle.
