Instant Banana Appam Recipe / Banana Appam With Wheat flour is a must have nivedyam recipe for Vinayagar Chaturthi at our home. This Banana Appam is an instant recipe no grinding, no roasting flours, very simple and easy to make healthy recipe. I often make this Appam to use over ripe bananas. Banana Appam can be easily made as after school snack or evening tiffin for kids, my kids love this cute Appams, These are Flavor rich soft and healthy banana fritters or like banana muffins in a much healthier way. Banana Wheat Flour Appam Recipe

Ingredients
Banana 1 big(if using small, use 2)
Wheat Flour 1cup
Rice Flour 1 Tbsp
Powdered Jaggery 1/2 cup
Water 1/2 cup + 1/4 cup
Shredded Coconut 1 Tbsp
Cardamom 3 no.
Baking Soda 1/4 tsp or less
Salt a generous pinch
Ghee & Coconut Oil as needed
Notes:
I used big banana if using small variety use 2 small for 1 cup wheat flour.
You can also make appam instantly right away after mixing the batter, but resting the batter for at least 15-20 minutes makes the appam soft even after few hours of cooking.
the sweetness from1/2 cup Jaggery for 1 cup flour with full ripe banana was perfect and right sweet for us. If you use mild ripe/sweet banana increase 1-2 Tbsp of Powdered Jaggery.
Use warm water to melt powdered jaggery, or keep jaggery & water in a microwave safe bowl & microwave in high for 30 seconds, leave it for few seconds and stir well. This is enough to melt the jaggery.
Check video for batter consistency, based on the jaggery type, flour quality the water measurement may vary. So adjust water consistency accordingly.
Left over batter can be stored in an air tight container in the refrigerator and use it the next day.
I used Ghee & Coconut Oil for cooking this Banana Appam, you can use ghee or oil alone to cook Banana Appam.
Method
Take 1/2 cup powdered jaggery in a bowl and add 1/2 cup warm water, mix well and keep aside for few minutes until it melts completely.
In a blender, take banana and cardamom, blend it to a smooth puree.
After that in a mixing bowl, add flour, pinch of salt, rice flour mix well and then add banana cardamom puree, melted jaggery water & water and mix well to a smooth little thick batter.
Let the batter to rest for minimum 15 -20 minutes and you can rest for 1-2 hours also or overnight in the fridge.
Heat Paniyaram/Appe pan, add few drops of oil in each hole, then pour batter 3/4 to each hole of the pan.
Cook in medium heat, cover the pan for 1 minute, after that open the lid and turn other and cook till done.
Once done remove from the pan and serve warm or ready for neivedyam.
