Rava Coconut Laddu

Rava Coconut Laddu/Ladoo Recipe

Ingredients

  1. Rava/Sooji    1 cup
  2. Sugar   1 cup 
  3. Dry or Fresh Coconut, grated   1/4 cup
  4. Cashew nuts    1 small fistful (roughly chopped)
  5. Raisins    1 tbsp
  6. Ghee/Clarified butter    4 tbsp
  7. Hot milk     2-3 tbsp
  8. Cardamom powder     5 no.
Notes:
Adding milk makes the laddu little soft but tasty & delicious and at the same time it reduces its shelf life. It remains good only for few days at room temperature.
Use hot or warm ghee to shape the laddu for 1 cup u will need about 1/4 cup ghee without milk. This way you can store the rava laddu for a month, if handled n prepared properly.

Method
  • First heat 1tbsp ghee in a pan, and roast cashew nuts till golden brown and keep aside.
  • To the same pan, add another tbsp ghee and add rava and roast the rava in medium heat to light golden brown n till aroma comes.
  • After that add grated coconut(if using dry or dessicated) and stir well for a minute and turn off the stove.
  • If using fresh coconut, transfer the roasted rava to a plate and roast the coconut separately.
  • Then allow this to cool for a while and then blend it in a blender for few seconds and transfer to a wide bowl.
  • Then to the blender add sugar, cardamom powder and blend it to a fine smooth powder and add it to the rava-coconut mix.
  • After that add roasted cashew nuts, dry raisins & some chopped pistachios(optional)
  • Now add melted ghee mix well and grease hands with ghee and start shaping the ladoo.
  • If you find hard to shape the ladoo add warm ghee or milk and shape all the remaining rava-coconut-nuts mix to ladoos.
  • Leave the Laddu for 15-20 minutes to hold the shape and after that ready to relish or offer to God as Nevediyams.
