Stuffed Brinjal Curry / Spices Stuffed Brinjal in Tamarind Curry


     Brinjal,favorite veg of my family.We all love it in any form. Last week i tried brinjal curry with spice powders stuffing which i already used for stuffed okra fry. This is entirely different from my Enaai Kathrikkai Kuzhambu. I added little tamarind juice to the curry and it was mild tangy and full flavor with the spices and was excellent with hot white rice n pappad.
And also it suits well as a side dish for Rotis/Stuffed Paratha/Parathas. Try this !!!



Ingredients
  1. Brinjal (small purple)   1 lb
  2. Onion   1 large (finely chopped)
  3. Tomato  2 medium(finely chopped)
  4. Curry leaves   1 sprig
  5. Coriander leaves   few finely chopped
  6. Tamarind paste   1/4 tsp(dissolved in 1/2 cup water)
  7. Salt   to taste
To temper
  1. Oil   2-3 tbsp
  2. Mustard seeds   1/2 tsp
  3. Cumin seeds   1/2 tsp
Masala for Stuffing
  1. Turmeric powder   1/4 tsp
  2. Chilli powder     1 tsp
  3. Coriander powder   1 and 1/2 tsp
  4. Garam masala         1/2 tsp
  5. Amchor Powder      1/2 tsp
  6. Cumin powder        1/2 tsp
  7. Salt        1/2 tsp
  8. Coconut powder    1 tbsp

Method
  • Wash the brinjals thoroughly and make 4-6 slits and keep aside. 
  • Take a bowl, and add all the dry powders for stuffing along with coconut powder , mix well. 
  • Now keep the masala filling in to the brinjal through the slits made and roll the brinjal in the masala powder and keep aside..do the same for all the brinjals and keep the remaining masala powder as such. 
  • Let the stuffed brinjal rest for few minutes...meanwhile chop the onions n tomatoes. 
  • Heat oil in a non stick vessel,add the tempering ingredients wait till splutter and add onions and curry leaves,saute lightly and add the stuffed brinjals and fry them nicely in low heat/flame till the brinjals get fried nicely n turns half tender. 
  • And add the finely chopped tomatoes and saute till the tomatoes get soft n mushy...take care not to break the brinjals.
  • Now add the remaining masala powder and stir well and add the tamarind juice, enough salt and mix everything well. 
  • Add about 1/2 cup water(or to desired consistency) and cook covered till the brinjals get nicely cooked . 
  • Lastly add some chopped cilantro and turn off the stove. 
  • Done!!! Stuffed brinjal curry is ready to relish.

Notes:
You can also make it to a dry sabzi without adding water.
Adding tamarind juice is also optional.
Adjust spices according to your taste.
