Double Chocolate Sandwich Cookies/Eggless Chocolate Sandwich Cookies Recipe is my 1000th Post on the blog. And also sharing this easy Chocolaty Treat as a special recipe for my Blog's 12th Anniversary. Yeah, 12 years of blogging even though I took 4 years of break, My Blog is always special to me with lovely memories and lots of hard work behind each recipes. Sometimes I even think of discontinue blogging but couldn't do so and I was so determined to have 1000+ recipes as per my Mom's wish and so happy to share my 1000th recipe here with a simple chocolate dessert on the Valentine's Day Occasion. Before getting into the recipe I thank my fellow bloggers without their support and friendship this will not be possible, so happy that I am still in contact with a handful of friends. 

I started this blog in Jan 2011, within 3 months I posted my almost 100+ recipes, this is a non profit personal blog started just because of the love and enthusiasm I have in cooking and baking. My Mom was my biggest support and strength. When I shared my 800th post- Nutella Mousse in Mar 2015, She wanted me to post at least 1000 recipes. And it took almost 8 years for me to share my 1000th recipe. I am so glad that finally I am writing my 1000th recipe here and am sure My Mom in the heaven will be so happy and proud that I fulfilled her wish. 

Double Chocolate Cookies - Eggless

Now coming to the recipe, I was stuck with the 1000th recipe and had so many choice of recipes in mind for 1000th post. And finally, baked this easy and simple Double Chocolate Sandwich Cookies.  Tried this recipe of Chocolate Sandwich cookies. As its a Valentine's Day made Heart Shaped Chocolate Sandwich Cookies. This chocolate cookie is a simple Chocolate Shortbread version with mildly sweet melt in mouth butter flavored cookies. To enhance the sweetness and chocolate flavor I decided to make a sandwich cookies with some Chocolate Ganache Filling. 

Chocolate Sandwich Cookies Recipe



                                         Double Chocolate Sandwich Cookies
Prep Time : 30 minutes | Bake Time : 8-10 minutes
Makes  20 Individual Cookies/10 Sandwich cookies


For Chocolate Cookies
Ingredients
  1. All Purpose Flour  1 cup
  2. Butter, room temperature   1/2 cup
  3. Icing Sugar   1/2 cup
  4. Cocoa Powder    1/4 cup
  5. Salt    a pinch
Ingredients For Chocolate Ganache
  1. Heavy Cream    100gm
  2. Semi Sweet Chocolate  150gm
  3. Butter  1/2 Tbsp
Notes: Do not add milk, butter and sugar itself enough to make dough. Almost like a shortbread dough, so don't add milk. If desired can add 1/2 tsp Vanilla extract for flavor. Refrigerating(minimum 30 minutes)the cookie dough is must or freeze for 15-20 minutes.

Method
  • In a medium mixing bowl, add butter using a hand mixer beat the butter for few seconds.
  • Then add icing sugar, first mix the sugar with creamed butter then using hand mixer beat well to a smooth cream.
  • To that, now add flour, cocoa powder, salt and combine well to a soft smooth dough.
  • Transfer the dough to a silicone baking mat or parchment lined cookie sheet, place 
  • roll the dough and Using a rolling pin, flatten the dough to 1/4 inch thick rectangle. 
  • Place dough in the refrigerator and chill for at least 30 minutes. 
  • After 30 minutes, Preheat oven to 350 degrees.
  • Line baking sheets with parchment paper or silicone baking mat.
  • Cut out cookie dough using a 2 inch cookie cutter, I used heart shaped Cookie cutter or cut into equal squares or rectangle or round shaped cookies. Place the shaped cookie dough on prepared baking sheets. 
  • Bake for 10 minutes or until the edges begin to crisp. The cookies will look soft in the center but after cooling it will be normal and crisp. Do not over bake. 
  • Once done remove from oven and allow to cool for 2 minutes on baking sheet. Move cookies to wire rack to cool completely.
Chocolate Ganache
  • While the Cookies are cooling, prepare chocolate ganache and keep in the fridge until ready to use.
  • In a small sauce pan, add heavy cream and warm the cream in medium heat for 2 minutes.
  • No need to boil, just warm the cream and transfer it to a mixing bowl.
  • To it add semi sweet chocolate(I used semi sweet chocolate chips) let it sit for few seconds.
  • Then using a spatula or whisk, gently stir and keep stirring until the chocolate melts and dissolves completely to a smooth texture.
  • Now add butter and mix well, creamy chocolate ganache is ready.
Double Chocolate Sandwich Cookies
  • Once the cookies are cooled down completely, spread the chocolate ganache on bottom side of the heart shaped chocolate cookie, You can use spatula to spread the ganache or Transfer the ganache to a piping bag and fill it.
  • Cover the ganache filled cookie with another chocolate cookie to make a sandwich.
  • Repeat the same process for the remaining cookies.
  • Serve right away or store the cookies in an airtight container.
