Mushroom Sandwich Recipe

Mushroom Sandwich Recipe is an Instant Breakfast recipe if you have some breads in hand. Mushrooms are healthy alternative for meat/Eggs. As Purattasi(Tamil Month Name)started we don't eat eggs & meat this whole month. So Mushroom, Soya Chunks, Paneer & Tofu are our most preferred recipes for our breakfast & weekend Biryanis. Last weekend made this super quick Mushroom Masala for Sandwich and had for our breakfast along with whipped coffee. For the Mushroom Filling, I used Kitchen King Masala powder, it surely adds lovely flavor and taste to the simple mushroom dish. The below measurements will be able to make 4 (2 bread) sandwiches. I also used Maggi Hot Sauce as spread you can use ketchup, Mayo or any desired spread or even without spread just butter alone is enough for this Mushroom Sandwich. These mushroom Sandwich are perfect to serve as an after school tiffin for kids who like mushrooms. My boys loved this masala mushroom sandwich and said the masala tasted just like maggi masala noodles :) Now off to the recipe.

Mushroom Sandwich Recipe

Masala Mushroom Sandwich Recipe
Prep Time : 5-8 Minutes | Cook Time : 15-20 Minutes

Ingredients
  1. Mushroom    150 gm(sliced)
  2. Bread Slices  8(I used Honey Wheat Bread)
  3. Onion   150 gm(sliced)
  4. Ginger Garlic Paste    1 tsp
  5. Turmeric Powder   1/4 tsp
  6. Chilli Powder   3/4 - 1 tsp
  7. Kitchen King Masala    1 tsp
  8. Pepper Powder  1/4 tsp or to taste
  9. Cilantro   2 Tbsp(finely chopped)
  10. Salt    to taste
  11. Oil   1 Tbsp
  12. Fennel Seeds   1/2 tsp
  13. Cumin Seeds/Jeera   1/2 tsp
  14. Butter    1-2 Tbsp or as need to toast sandwich
  15. Hot Sauce   2 tsp(optional)
Notes:
No need to add water to cook mushroom, after adding salt the mushroom will automatically release moisture which is more than enough to cook.
Adding Kitchen King Masala gives lovely flavor and taste(almost similar to maggi magic masala powder) but you can very well replace it with Curry Masala Or Garam Masala Powder.
Add some grated cheese to the sandwich for extra taste and flavor.
Add more or equal amount of onions to the mushroom quantity makes the filling tasty and gives more quantity.
I did not use tomato but feel free to use 1/2 or 1 small tomato saute well with onions.
This Mushroom Masala can be served as a filling for Roti Roll or as a side for Chapatis.

Method
  • Wash and slice mushroom to desired size, we like it thin and also it cooks fast and easy to fill for sandwiches.
  • Crush Ginger & Garlic or make a paste and keep ready.
  • Heat oil in a pan, add fennel and cumin seeds let it splutter and then add sliced onions and saute for 2 minutes no need to saute until golden brown, just saute until the onions are soft and light pink.
  • Then add sliced mushroom and stir fry for few seconds.
  • After that add turmeric powder, chilli powder, salt and mix everything well and stir fry for 2 minutes.
  • And then add kitchen king masala, mix well and stir fry for 1-2 minutes.
  • Once the moisture from the mushroom dries and masalas cooked well lastly add finely chopped cilantro, mix well and switch off the stove.
  • Let the mushroom masala cool for a while.
  • Meanwhile, apply butter and hot sauce to the bread slices.
  • Then fill the bread with 1 ladle full of mushroom masala, if needed add some cheese then cover the masala with another bread slice. Apply some butter on top layer of the bread too.
  • Heat a dosa tawa or sandwich maker, once it is hot keep the mushroom stuffed bread slices and toast in medium heat until both sides turn crisp and golden brown.
  • Once done remove the Prepared Mushroom Sandwich from the tawa, slice into 2 halves and serve immediately.
  • That's it..Tasty Mushroom Sandwich ready.
