     Bajji, Bonda, Pakora Mix
Bajji, Bonda(potato masala Bonda) & Onion Pakora all in One Recipe. One Batter Mix and you can make any varieties of Bajjis - Vazhakka Bajji, Potato Bajji, Mirchi Bajji, Onion Bajji, Eggplant, Paneer, Egg, Cauliflower, Appalam Bajji anything and also Potato Bonda & Crispy Onion Pakora. Yes., with this one batter you can prepare 8-10 varieties of snack in just 30 minutes and wow your family & guests. I am not a fan of Bajjis so whenever I make Bajjis for my kids & V, I spare little batter and add some sliced onions, green chillies and make instant crispy onion pakoras. These Onion Pakoras are so good, very addictive you can't stop with just 1or 2. The ratio of Besan to Rice flour makes the difference and do try this method and am sure you will love this recipe. You can also make this as an Instant Mix and store it in an air tight container and use it to make Bajiis or Bonda or Onion Pakora instantly. Now off to the recipe..

Bajji, Bonda, Pakora Mix



Bajji, Bonda, Pakora Mix Recipe/5 In One Recipe
Prep Time : 20-25 Minutes | Cook Time : 25-30 Minutes
Category : Snacks | Makes 25 Bajjis, 12 Bonda & 8 Pakora

Ingredients
  1. Besan/Gram flour/Kadalamaavu  1 cup(250 ml cup size)
  2. Rice Flour/Arisismaavu     1/2 cup
  3. Kashmiri Chilli Powder   3/4 tsp
  4. Red Chilli Powder   1 tsp
  5. Turmeric Powder  1/8 tsp
  6. Baking Soda  1/4 tsp
  7. Salt    to taste
  8. Hing/Perungayam     1/4 tsp
  9. Jeera/Cumin Seeds   1/4 tsp or less
  10. Oil    to Deep fry 
For Bajjis
  1. Vazhakkai/Raw Banana 1 small
  2. Onion  1 med size
  3. Potato  1 medium size
For Potato Bonda

For Onion Pakora
  1. Gram Flour Batter  1/2 cup(from the above recipe)
  2. Thinly sliced Onions    1/2 cup
  3. Green chilli  1 finely chopped
  4. Cilantro  1 tbsp(finely chopped)
Notes:
Adding Baking Soda is must, at least add a generous pinch instead of 1/4 tsp.
Kashmiri chilli Powder gives nice color to the Bajji, just like the Tea Kadai Bajjis.
After Peeling Vazhakka/Raw Banana wash them in cold water, pat dry then slice it.
You can use any desired vegetables for making Bajji, even Eggs too. 
Replace Jeera/Cumin seeds with ajwain/omam too or add both. I like Jeera than ajwain to added it.
Drop bajjis/Bonda/Pakora in hot oil, and fry them in medium high heat. If the oil is not in right temperature then the bajji/pakora will absorb more oil. After frying each batch of bajjis/bonda/pakora wait for 30-40 seconds to get oil heated well. 
You can also make this as an Instant Mix- by combining all the dry ingredients together and store it in an air tight container. Whenever You want to make bajjis, take 1/2 cup and mix it with water and make bajjis with any vegetables you want.

Method
For Making Bajji/Potato Bonda/Pakora Batter
  • In a mixing bowl, add gram flour, rice flour, kashmiri chilli, red chilli powder, turmeric powder, salt, hing, jeera, salt and using water mix it to a loose free flowing batter but at the same time it should be little thick to coat spoon. Refer video for right consistency.
  • That's it..Batter is ready, you can make any Bajji Variety, Potato Masala Bonda & Onion Pakora.

For Onion Pakora 
  • Take 1/2 cup measurement of the prepared batter, add 1/2 cup sliced onions, green chilli, cilantro and mix everything well without any water. That's it the pakora mix is ready and you can deep fry them in hot oil. After dropping the pakora in oil, do not disturb them for 1-2 minutes, and then flip to other side and cook until crisp and golden brown.
