Sev Puri Chaat
Easy Sev Puri Chat recipe with step by step pictures. "Chaats" the name itself enough to make anyone drool and I am not exceptional. I love to try all the chaats at home and except 1 or 2 recipes I tried almost all the chaats. My favorites are Pani Puri & Dahi Chaat but my kids and V love this Sev Puri Chaat more than other chaats.
I have tasted Sev Puri chaat in Devon Ave, they serve Sev Puri with crushed Puris, potato and chaat chutneys but  In some shop they serve the whole puris stuffed with potato, chaat chutneys and generous fine sev.  I followed the former method as have control with the puris quantity and also used the flat and non puffy puris.

Sev Puri Recipe
For this Sev Puri, along with green chutney and tamarind chutney they also use spicy garlic chutney and yogurt/curd but I skipped Yogurt. I asked my neighbor Aunt for Garlic Chutney recipe and tried it. I used this chutney for Bhel Puri Chaat, Vada Pav(coming soon) and used the left over chutney to make Garlic Murukku.
Garlic Chutney For Chaat
Garlic Chutney(Red Chutney) Recipe
Prep Time : 10 minutes | Cook Time : nil

Makes 1/4 cup

Ingredients
  1. Red Chilli  7 no.
  2. Kashmiri Red Chilli  5 or 6 no.
  3. Garlic  3 fat clove
  4. Salt  to taste
  5. Sugar 1/2 tsp
Method
In a Microwave safe bowl, take both red chillies add water till it immerse and microwave in high for 30 seconds.
And allow to soak for 10 minutes and after that grind it to a smooth paste along with garlic, salt and sugar.
If needed add couple of tsp of water and grind it but do not add more water.
Adding more water will lessen the shelf life.
That's it. Spicy Garlic Chutney ready. Store it in an air tight glass container in refrigerator.
This stays good in the fridge for 2 weeks.
Notes:
I used half kashmiri chilli and half regular chilli to control the spiciness and get nice red color.
You can use kashmiri chilli alone to make this chutney or the regular ones.
You can also add 1/2 tsp lemon juice to the chutney while griding.

Serves  2

Ingredients
  1. Puris      8-10(crushed) or as needed
  2. Potato     1 medium(Peeled and diced)
  3. Chaat Masala Powder    1/2 tsp or to taste
  4. Red onion      2 tbsp(finely chopped)
  5. Garlic Chutney    as needed
  6. Tamarind Chutney    2 tbsp or as needed
  7. Green Chutney     2 tbsp or needed
  8. Cilantro    1-2 tbsp(finely chopped)
  9. Fine Sev    1/4 cup or as needed
Method
Steam cook the diced or chopped potato for 10 minutes or until tender and soft.
Allow the potato to cool for a while and mix it with chaat masala powder and keep ready.
Now take a serving plate, first add some crushed puris then add potato and finely chopped onions(I also added some grated carrot).
Then top it with green chutney, tamarind sweet chutney and garlic chutney.
Finely add some generous sev and finely chopped cilantro and serve Immediately.
Notes:
Puris - You as you needed, whole or crushed
If desired, you can also add couple of tsps of beaten curd/yogurt.
You can also add some cooked whole moong or channa/chickpeas to the chaat.
If serving for kids, skip or add less garlic chutney and use more sweet chutney.
