Hello Folks, hope you all had a great weekend. Here was not as good as previous, windy and cold weather not willing to go out :( and also not feeling well. Suffering with severe neck pain n took medicines n feeling better now. As i was advised not to do any work n do not blog any post today by my H but i couldn't stay way, yes i am addicted more and impressed and boosted by all your lovely words at my space for all my recipes :) Once again Thanking you all ....
Today's recipe was Coconut Poha, simple and my fav breakfast. I made this long back and was in my draft for long time, And today when i saw Indian Cuisine's post ,came to remember about this and now presented to you along with my grand mom's Peanut Thuvaiyal...I like this tangy spicy peanut thuvaiyal for my lemon rice / Tamarind rice / curd rice.
Ingredients
- For Coconut Poha
- Thick Poha/ Flattened rice 1 cup
- Fresh shredded coconut 1/2 cup or less.
- Dry red chillies 3 no.s
- Ginger 1 tsp(finely chopped)
- Curry leaves 1 sprig
- Cilantro few finely chopped
- salt to taste
- Oil 1-2 tsp
- Mustard seeds 1/2 tsp
- Chana dal 1 tbsp
- Urad dal 1/2 tbsp
- Cashew nut 1 tbsp or more
- Wash and soak poha for 2-3 minutes and then drain completely and keep aside.
- Heat oil in a kadai, add the tempering ingredients one by one and fry lightly till the dal n nuts get fried golden brown.
- Then add ginger,red chilli and curry leaves n fry lightly.
- Now add shredded coconut, enough salt and fry the coconut for a minute.
- After that add, drained poha and mix well and stir fry for a minute and alstly add some cilantro and turn off the stove.
- That's it Simple and Tasty Coconut Poha is ready to serve.
- To suit this i made Peanut thuvaiyal, which is mild spicy and best for all kinds of variety rice like Lemon rice, Tamarind rice, Tomato Rice, Coconut rice/poha. and also you can make it to peanut chutney with tempering for Idly/Dosa/Pongal.
Ingredients
For Peanut Thuvaiyal/Chutney
- Peanut 1 cup
- Dry Red chilli 6-7 no.s
- Tamarind small gooseberry size.
- Coconut 2 tbsp(shredded)
- Salt to taste
- oil 1/2 tsp
- Oil 1 tsp
- Mustard seeds 1/2 tsp
- Urad n Chana dal 1/4 tsp each
- Curry leaves few
- Heat 1/2 tsp oil in a pan, roast peanuts till it tunrs light golden brown n flavor comes.
- Then add dry red chillies n tamarind and fry for a minute.
- Then allow to cool it for a while and grind to a coarse paste with salt using very little water.
- In case of chutney, grind with enough water like we do for coconut chutney and transfer it to a bowl.
- Heat oil in a tempering pan, add all the tempering ingrdients fry well and add it to the chutney.
- Serve with hot Idly/Dosa.
