Awards - Amazing Moments


       I am so happy n excited to post the following prestigious awards given to me by my sweet friends - Laxmi N Sobha.When today morning i visited Laxmi's space she shared some awards not only to me to some other blogger friends also.Note- these awards are designed by her, which shows her love n interest towards us n on our blogs.She took much effort n spend her precious time to Praise others.I salute her n am so honored to recieve "an enthusiastic blogger award" from her.Thank you so much Laxmi.Friends plz do visit her space for tasty n delicious recipes from Indian Cuisine.My favorites are her chicken recipes..yum..yum...

Vazhakkai Varuval - Chettinad Style


    Hello dear buddies, wishing y'all a happy friendship day. Its better to late than never..so here's my belated wishes to you all. Hope you had a very great weekend with your friends & family.
Coming to today's recipe -Vazhakkai varuval chettinad style, actually this is a chettinad chicken varuval recipe. I changed this to a vegetarian varuval with Vazhakkai. So spicy n flavorful varuval. Adjust the spices to your taste..All I can say that this is a must try recipe :) So good with any variety rice or Rice with just sambar/Rasam.

Thakkali Adai/Tomato Dal Dosa


For a change i tried our regular Adai with the addition of tomatoes. It come out well, so cripsy and tasty adai. Do give it a try, am sure u will love it.

Aloo Chole / Potato Chckpeas Curry


        This is one of my fav combo curry and i love to have them with hot poori/rotis.There are so many recipes and styles in making aloo chole ..this is my version so simple n quick recipe.Equally tasted like restaurant style aloo chole masala.Try this!!!

Ingredients
  1. Channa/Chick peas/Garbanzo beans   1 cup(cooked)
  2. Aloo/Potato    2 no.(boiled)
  3. Onion   1 large (finely chopped)
  4. Tomato   2 medium(finely chopped)
  5. Ginger garlic paste   1 tsp
  6. Chilli powder   1 and 1/2 tsp(adjust to your taste)
  7. coriander powder   2 tsp
  8. cumin powder  1 tsp
  9. water  2tbsp to fry the masala(chilli,coriander,cumin)
  10. Yoghurt/Curd    1 tbsp
  11. Garam masala powder    1 tsp
  12. Cilantro    2-3 tbsp(finely chopped)
  13. Salt   to taste
To temper
  1. oil    1-2 tbsp
  2. Cumin seeds   1/2 tsp
  3. clove  2 no.s
  4. cinnamon  1/2" stick
  5. Cardamom   1 no.
Method
  • Cook soaked channa/chick peas till tender but not mushy n keep aside.
  • Boil potato and cut them in to wedges and keep aside.
  • Heat a tsp of oil and fry the boiled potato wedges till light brown n crisp.,then drain them in paper towel n keep aside.
  • Heat oil in a kadai,add the tempering ingredients one by one and wait till splutter then add finely chopped onions and fry nicely till turns pink.
  • Then add ginger garlic paste and saute till raw smell leaves.
  • after that add,chilli,coriander n cumin powder and stir well,add 2 tbsp water and stir fry the masala in low heat for 1 -2 minutes.
  • Then add finely chopped tomatoes and saute till turns soft n mushy and add curd and stir well and fry for another 1 minute.
  • Now add cooked channa/chickpeas and mix well and stir fry for few minutes and add enough water n salt,mix everything well.
  • Then add fried potato wedges and mix gently ,bring the gravy to boil.
  • Once it starts boiling add garam masala powder and finely chopped cilantro mix well and cook till gravy thickens and oil show on top.
  • Thats it super yummy n delicious Aloo Chole is ready.Serve with any Indian breads.

Note:
Along with chole i used some black eyed peas to this curry.
If you want lastly you can also add 2-3 tbsp heavy cream to make the curry even more rich n tastee.
In the same way can also make simple chole masala,gobi peas masala,aloo peas curry or any thing to your choice.

Thiruvadirai Kali


        Today i am so excited to post this recipe because it's Wednesday - Blog Hop wednesday a very new event started by Radhika . I am so happy to participate in her great event with other blog hoppers.Thank you so much Radhika for giving us such an opportunity to get mingle with other bloggers n their recipes.As per the event,this wednesday i am paired with Shalini and i have to post a recipe from her space today.For the first time i am introduced to Shalini's space by Radhika. Sanctified spaces was a great and lovely blog,don't forget to visit her space.I choose Thiruvadirai Kali from her space.This is my first attempt and the result was too good.In her recipe she used tuvar dal but i dont have tuvar dal in hand,so i used moongdal.I never tried or tasted this authentic prasadham  and tried for the first time with her recipe.Kindly excuse me if i went wrong anywhere with the recipe.Here's the recipe..

Ingredients
  1. Rice     1 cup(i used sona masoori)
  2. Moongdal   2 tbsp
  3. Jaggery   1 and 1/2 cup
  4. Ghee    2-3 tbsp
  5. Cardamom   4no.s(crushed)
  6. Cashew nut    1 handful
  7. Raisins    1 tbsp
  8. Water  6 cups
Method
  • Heat a pan and dry roast rice till golden brown and rind it to a coarse powder and keep aside.
  • Roast moongdal and till light brown n keep aside.
  • in a small bowl add 1/4 cup water n jaggery,let it melt completely and then filter the jaggery syrup n keep aside.
  • Bring 6 cups of water to boil and add moongdal and cook till dal gets completely cooked and then add ground rice and keep stirring and cook in medium heat .
  • Once the ground rice mixture gets cooked add the filtered jaggery syrup and keep stirring .
  • Cook till raw smell of the jaggery leaves after that add 2 tbsp ghee and crushed cardamom mix everything well and keep stirring till the kali gets glossy texture and starts leaving the sides .
  • Lastly add some ghee roasted nuts n raisins to the kali.
  • Thats it delicious Thiruvadirai Kali is ready to offer God as a Neivedhiyam.

ABC Bonda - Aloo Brown Beans Carrot Bonda


      I made this healthy n filling snack long back for Sobha's protein icious event.But can't post n link to that event in time...All my recent posts were made long back n because of my break all my recipes were in draft with uploaded pictures alone.Recently i didn't cook any new or interesting recipe as am advised not to give much strain to my hands.But the new events n themes again pushing me to try some new recipes n alsogot some ideas...so plz stay connected for more interesting n yummy delights.. :-)
Coming to this ABC Bonda i.e. A for Aloo , B for Brown Beans and C for Carrot...h is it?? healthy stuffing ingredients and also i didnt deep fried them istead fried them in Paniyaram pan.After seeing Vardhini's low calorie broccoli tofu bonda i too wanted to try some bondas in paniyaram pan n adopted her method.Thanx Vardhini for sharing ..Low fat version was too good n guilt free munch...My H also liked this kind of fried snack n we all enjoyed with Hot n Sweet chilli sauce....

Ingredients
For ABC masala stuffing
  • Aloo   1 medium (boiled n mashed)
  • Brown beans   1/2 cup
  • Carrot       2 medium size(shredded)
  • Onion   1 medium(finely chopped)
  • Cumin seeds    1/2 tsp
  • Chilli powder    1 tsp
  • Turmeric powder   a pinch
  • Garam masala    1/2-1 tsp
  • Coriander leaves    2 tbsp(finely chopped)
  • Salt   to taste
  • Oil   2 tsp
Method
  • Soak brown beans for 6-8 hours ,then pressure cook it for 2-3 whistles n drain n mash it n keep aside.
  • Cook potato,peel the skin and mash it and keep aside.
  • Heat oil in pan,add cumin seeds let it splutter then add finely chopped onions and saute for 1 minute.
  •  Then add mashed potato n brown beans n mix well n stir fry for a minute.
  • After that add chilli,turmericn amchur powder n enough salt mix everything well and cook till raw smell leaves.
  • then add the garam masala powder and stir fry for a minute.
  • Lastly add shredded carrots n coriander leaves stir fry for a minute and turn off the stove.
  • Thats it aloo beans carrot masal stuffing is ready now..allow to cool for sometime n divide them in to lemon size balls.
  • This stuffing can be  used for dosa,chapathi n bread rollls also.
Ingredients 
For Bonda batter
  1. Besan flour    1/2 cup
  2. Rice flour   1/4 cup
  3. Chilli powder  1/2 tsp
  4. Hing powder   1/4 tsp
  5. Salt   to taste
  6. Cumin seeds    1/2 tsp
  7. Ajwain/omam   a pinch (crushed)
Method
  • Add all the ingredients to a mixing bowl and using water make it to a little thick batter and keep aside.
  • To make Bondas
  • Heat a paniyaram pan,add few drops of oil on each groove and wait till it gets hot.
  • Then take one ABC masala shaped balls and dip it in the batter and place gently in to the groove
  •  ook in low-medium heat and wait till the bottom side turns brown n crisp and using spoon or skewer turn other side and cook till all sides turn golden brown n crisp.
  • Once done transfer the low fat ABC bonda to serving plate and serve hot with any chutney or sauces.

Garlic Kuzhambu



        This is a spicy n mild tangy south Indian Kuzhambu...one of my mom's recipe. I like this kuzhambu with hot idlies more than with rice. I captured step wise clicks but while copying to picasa becoz of my kids I lost all the pictures of this kuzhambu n mushroom kurma photos :( only these two clicks were saved...So will try to update step wise pictures soon...Here we go
