Masala Pav Recipe
Masala Pav is a popular roadside chaat of Mumbai. Like other chaats I have tasted Masala Pav in my Hometown, Tamil Nadu too. Masala Pav is nothing but a spicy onion-tomato masala curry stuffed between soft butter toasted Pav(Soft Buns/Dinner Rolls). This tastes so good and spicy and I love it more than Pav Bhaji.
I don't have any Idea about how they make the curry for Masala Pav until I saw Nalini's Post. Thanks to Nalini for sharing this easy peasy method, only thing I changed is I prepared the masala separately in a kadai and toasted the pav in griddle with butter and then added the masala and stuffed it. This is so yummy and addictive chaat, my kids loved it a lot and asked me for more but I didn't have enough masala. And Next day made it again for their lunch as Masala Pav Sandwich. So whenever, you plan to try this make sure you make enough masala, as it is addictive even kids will not stop with one masala pav :) Now off to the recipe

Serves  4
Ingredients
  1. Pav Buns   4 no.( I used Homemade Pav)
  2. Butter  2-3 tbsp
  3. Onion  1 big(finely chopped)
  4. Tomato  2 medium(finely chopped)
  5. Ginger Garlic paste 1-2 tsp
  6. Capsicum/Green Bell pepper   1/3 cup(finely diced)
  7. Carrot   1 no.(finely chopped)
  8. Red chilly powder  1/2 tsp(i used Kashmiri Chilli powder)
  9. Pav Bhaji Masala Powder 1 tsp
  10. Turmeric powder a generous pinch
  11. Cilantro / Coriander leaves   1-2 tbsp(chopped)
  12. Salt   to taste 
  13. Oil  1 tbsp
  14. Cumin seeds  1/2 tsp
Method
Chop onion tomato and other veggies and keep all the ingredients ready.
Then heat oil in a kadai/pan, when it is add cumin seeds and splutter. Then add onions saute the chopped onion with a pinch of salt till it becomes transparent.
Add in the ginger garlic paste and fry it till the raw smell disappears. Now add the finely diced capsicum, chopped carrot and fry it  for 3-4 minutes.
Once the capsicum becomes soft add in the chopped tomato and cook it till mushy. Now add in the spice powders and salt.Mix it well,add in around 1/4 cup of water and cook it in a low to medium flame for couple of minutes or till the raw smell goes off.
Add finely chopped cilantro and cook it for a minute and that's it the Masala Ready.
Now heat a griddle/tawa, smear with butter, slit the pav bun and keep it on top of it. Then to the other side add cooked masala, 1/2 tsp butter and also top the pav with butter.
Then place the toasted pav on the masala and cook for few seconds and carefully flip it to the other side and cook for another minute,make sure the masala coats well.
Fold the pav carefully and transfer to a plate.
That's it.. Masala Pav Ready. Serve it warm with a lemon wedge.
