Carrot Soup Recipe | Vegan Carrot Soup | Carrot Soup With Lime !

Carrot Soup|Vegan Carrot Soup Recipe with step by step pictures. Carrot and Tomato soup are my favorite soups and these are the soups that my Mom prepares at home once in a while.
As I do not like adding cream or milk based soups I prefer mostly vegan or simple soups with any veggies. This Carrot soup is one such recipe with great taste and flavor.  Any crispy bread pairs well with this soup and makes a perfect meal.

I followed the same Vegan Broccoli Soup recipe but instead of roasted broccoli I added carrots. And i have seen in many carrot soup recipes with lemon and ginger, here i used lime juice and it paired well. I have made it couple of times and this our family's favorite soup now.

Carrot Soup Recipe
Prep Time : 25 minutes | Cook Time : 5-8 minutes

Serves   3-4
Carrot SoupIngredients
  1. Oil    2-3 tsp
  2. Onion   1 medium(chopped)
  3. Garlic   1 fat clove(finely chopped)
  4. Potato  1/4 of a medium potota(peeled & diced)
  5. Carrot  3 or 4 no.(sliced)
  6. Cumin Powder  1/2 tsp
  7. Lime Juice  from 1/2 of a lime
  8. Vegetable Broth or stock   3 cups
  9. Sal & Pepper   to taste
Method
Heat oil or butter in a sauce pan, add onion saute nicely till light golden brown.
Then add garlic and fry well and add diced potato and saute for a minute.
Now add carrot, cumin powder and stir fry for a minute
Then add 3 cups of veg broth, lime juice and cook in medium heat for 25 minutes.
Once the potato & carrot turn soft and tender, turn off the stove and blend it using hand blender.
Or cool for a while and grind it in a blender/mixer to smooth puree.
Then transfer to the sauce pan and add salt and pepper to taste and simmer for 4-5 minutes or just one boil.
That's it...Delicious Carrot Soup ready. Serve warm with any crispy bread. We had it with crispy Olive Oil Bread.
Notes:
Adding lime or lemon juice is optional, but it give mild tangy taste that is perfect for this mildly sweet carrot soup.
You can also use butter to saute onions & carrot.
You can also use water instead of veg broth but adding broth or stock makes it even more tasty, flavorful and healthy.

    1. you can simply skip potato and follow the recipe...OR if interested you can add 3 or 4 cashew nuts or almonds along with onions and saute.
