I wanted to post this How To make blanched Almonds, Slivered Almonds and Sliced Almonds technique for long time. And finally decided to share it now since the festival season is ahead and the use of blanched Almonds & Slivered Almonds is must in Indian Sweets, Baking & for Desserts. These almonds gives nice crunch and taste to the dish and also makes the dish more attractive and pleasing. Not only for desserts & sweets general in take of almonds is good for health.
Almonds are packed with vitamins, minerals, protein and fiber, and are associated with a number of health benefits. Just a handful of almonds, approximately one ounce, contains one-eighth of our necessary daily protein. Almonds can be eaten raw, toasted, caramelized and are availbale in many form like sliced, slivered, almond flour, butter, almond milk. The good protein content of almonds aids in lowering cholestrol and reducing the risk of cancer and heart disease.
Slivered Almonds
Overnight soaked almonds/slightly sprouted almonds is so nutritious and good for growing kids, I give my kids 2 soaked almonds every other day in the morning. One night by mistake i soaked more than 1/2 cup of almonds instead of 10 count. Ok, next day i wanted to make Badam kheer but laziness in me prevented from cooking. I simply peeled the skin and while watching tv chopped all the almonds and spread it in the plate and left it aside and i totally forgot about the chopped almonds. The Next day the chopped nuts were all dried and i got nice slivered almonds. Its all dried, crisp and crunchy. I started following that method and store slivered & sliced almonds in an air tight container and using it in Kheer / Payasam / Kesari and other recipes. Today I am sharing the easiest and quickest method to make slivered almonds that uses oven to dry the almonds instantly.

How To Make Slivered Almonds
Preparation & Cooking Time : 20 minutes
Resting Time : 40-45 minute | Yields : 1 cup


Ingredients
  1. Raw Almonds   1 cup
  2. Boiling Water   2 and 1/2 cup
Method
How to Make Blanched Almonds:
Bring 2 and 1/2 cup water to boil, when its starts boiling add the almonds and switch off the stove.
Remove from the heat and leave it for 45 minutes.
If you want only sliced almonds or blanched almonds, then give 10-15 minutes resting time and peel the skin and Pat dry the peeled almonds in clean towel, Then slice it into 2 halves and dry it in 300 F preheated oven for 4-5 minutes and use it.(see below pic).

For Slivered Almonds, You need very soft blanched almonds, that makes chopping easier and even.So give 45 minutes resting time, after that peel the skin and pat it in a towel and using sharp knife chop each halved almonds into 3 or 4 slices.
To make thin sliced almonds, using a peeler or sharp knife scrap the whole almond.
Then spread all the slivered, sliced almonds in a baking tray, dry it in preheated oven for 4-5 minutes.
Once done, remove the tray from the oven and allow the nuts to cool down completely and store it in air tight container in cool and dry place.
You can use this slivered or sliced almonds in Burfis, Halwa, Kheer/Payasam, Laddoo, Cookies, Cakes, etc.,
Notes:
If soaking overnight, no need of hot water just add normal water to the almonds and soak it over night. The next day peel the skin and slice and dry it. Overnight soaked almonds is easy to chop and get neat slivered almonds.
Oven temperature may vary, so check almonds after 3-4 minutes if needed keep it for another 2-3 minutes.
If its moist even after 5 minutes then leave it in oven for another 2-3 minutes.
This slivered almonds stays good upto a month, it comes for me up to a month and i finish it before that.
To maintain freshness you can also store the almonds container in refrigerator.
