Spicy Garlic Mozzarella Muffins ~ Breakfast Muffins!!

Today's recipe is simple and savory breakfast muffins made with chilli, garlic, parsley and mozzarella cheese. For the first time i baked a muffin from the scratch. Once i tried blueberry muffin with muffin mix. My kids love muffins a lot, their fav was Banana Nut/chocolate muffins(to be blogged soon). But i want to try some savory muffins and i got this recipe Here. I tweaked the recipe to suit my tastebuds and was really super Hit.This was so simple and you made them in few minutes.
These savory muffins are perfect for breakfast along with some milk n fruits. I just halved the recipe and later worried. Yes, these were so addictive and i couldn't stop with one :) Try this at home, these would definitely be a great start to your day :) Now to the recipe..

Ingredients
  1. All Purpose Flour   1 cup
  2. Garlic   2 cloves(finely chopped)
  3. Parsley    2 tbsp(i used flakes)
  4. Green chilli     3 no.s(finely chopped)
  5. Butter     2 tbsp
  6. Baking powder    1/2 tbsp
  7. Salt    1/2 tsp
  8. Milk    1/2 cup
  9. Egg   1 no.(break n pour it to a bowl mix well n keep aside)
  10. Mozzarella Cheese     1/2 cup(shredded)
Method
  • Preheat oven to 400 degree Fahrenheit.
  • Take a large mixing bowl, add flour, garlic, parsley, chilli, baking powder, salt and combine everything well.
  • Then add shredded cheese and mix well.
  • Now take a medium sized bowl, add milk, melted butter, half of the egg mixture, mix well.
  • Then add this milk-butter-egg mixture to the flour and gently mix everything well.
  • And now fill the lined muffin cups 2/3 with the mix.
  • Bake it for 17-20 minutes or until top turns light golden brown.

Notes:
Instead green chillies you can also use chilli flakes.
If u are using 2 cups of flour use one whole egg.

  6. Great idea to make savory muffins. Love the flavor combination! Curious is if they were very spicy...3 green chillies with seeds seems like it would be very spicy.
