Beet Root Usili With Mung Bean/Green Gram Dal


           Generally for usili, we use combo of tuvar dal and chana dal or tuvar dal alone. For a change i tried with Mung bean/Green gram dal. I love this usili with rasam sadham. I made Thattai Payir Rasam and beet root usili for lunch and that was so healthy n filling . I saved some 5 steamed mung bean dumplings which i made for Mor Kuzhambu and tried this yummy n healthy beets usili. Now to the recipe,


Ingredients
  1. Mung Bean Dumplings    5-6 no.s
  2. Beet root    1 and 1/4 cup(finely chopped)
  3. Onion   1 small (finely chopped)
  4. Salt    to taste
To Roast and grind
  1. Dry Red chilli    3 no.s)whole)
  2. Coriander seeds   1 tsp
  3. Chana dal   1 tbsp
  4. Dry Coconut powder    1 and 1/2 tbsp
To Temper
  1. Oil    1 tsp
  2. Mustard seeds   1/2 tsp
  3. Urad dal    1 tsp
  4. Chana dal   1 tsp
Method
  • After steaming the mung bean dumplings, crumble them in to fine mixture and keep aside until use.
  • Heat few drops of oil in a pan, roast all the ingredients separately until flavor comes and remove from the stove, allow to cool completely and then grind it to a fine powder and keep aside.
  • Wash beet root thoroughly and peel the skin and finely chop and steam it for 5 minutes or until tender not mushy and then keep ready.
  • Heat oil in a pan, add the tempering ingredients and fry till golden brown.
  • Then add onion and saute for a minute.
  • After that add steamed beetroots,enough salt and stir for a minute.
  • Now add the roasted ground powder and stir fry for 1-2 minutes.
  • Lastly add the crumbled mung bean mixture and saute everything for a minute and then turn off the stove.
  • That's all healthy n yummy Beetroot Usili with Mung bean is ready. Serve as an accompaniment of your choice.


Notes:
In the same way, instead beetroot you can also add carrot,beans,cabbage,guvar beans, or any other veg of your choice.
The spice powder suits well with potatoes, plantain, yam, taro root etc.
