Inippu Godhumai Dosai/Sweet Wheat Dosa (kids Spl)



Ingredients
  1. Wheat flour  1cup
  2. Jaggery     1/2cup
  3. Coconut     1 and 1/2 tbsp(shredded)
  4. Cardamom powder  1/4tsp (or powder 2-3 cardamoms)
  5. Salt   1/4 tsp
  6. Ghee or Oil   as needed.
Method
  • First prepare jaggery syrup,in a vessel add jaggery with little water .
  • Cook in medium heat ,let it dissolve completely and boil for few minutes.
  • No need of string consistency,"Paaghu patham thevai illai" just boiling is enough.
  • Cool the syrup for sometime.
  • Now take medium size bowl add wheat flour,salt,cardamom powder mix well.
  • Add  enough water to make thick batter,and add the jaggery syrup and shredded coconut.
  • Mix well let it stand for few minutes.
  • Now heat a non-stick tawa ,spread ghee or oil or butter,pour a ladle of batter and spread gently.
  • Pour little oil.Cook in Medium flame .it wont come easily to flip like normal dosa
  • Gently turn the dosa and for 2minutes .
  • Now remove from the tawa and serve hot with finely chopped banana and few shredded coconut on the top.
  • Kids will definitely enjoy it.

Note: You can also add some dried ginger powder to the batter.Be patience to cook this dosa,use non-stick tawa,i m struggled with iron tawa.the batter should be little thick not too thin.i forgot to measure water,i added just like that to mix thats y i didn't mention the water measurement. will try to update it soon.

Dates Juice


Ingredients
  • Seedless Dates/Pitted Dates     6-7no.s
  • Low Fat milk    6oz
  • Sugar   1/2 tsp
  • Water   2 oz
  This is a simple and healthy  juice,no need to add sugar but its depend on individual taste.For kids u can add whole milk and no water .1cup milk and 8-10 no.s dates.Serve with sliced almonds on top.With the above ingredients u will get about 8oz  juice.

Method
  • Boil the milk and put the dates and soak it for about 10 minutes.
  • In US we get pasteurized milk, so no need to boil ,simply take a microwave safe container add dates and milk to it.
  • Heat them for about 3minutes high(based on ur microwave power settings).
  • Doing so, is to get soft and mushy dates.Allow to cool for sometime and,
  • Remove the dates and put in a blender along with sugar.
  • When it is blended well add milk and run for few seconds .
  • Dates juice is ready to serve with ice cubes or as such.
Note:Dates are good for health,paricularly for women.Eat alteast 1piece daily.Who eat Dates on regular basis,show an extremely low incidence rate of cancer and heart disease.Eat Dates and Stay Healthy  :)

Kothu Parotta / Tamil Nadu Style Kothu Parotta

Kothu Parotta is a popular South Indian recipe particulary in Tamil Nadu. This is a nothing but a minced parotta/layered flat breads sauted with onions, tomato, spices, eggs and with Veg or Non Veg Curry/Chalna. This is one of my favorite recipe which i really miss here. But am happy that i recreated it at home and the taste was so good and almost same to that of hotel kothu parotta. This is so flavorful, delicious and filling recipe. Addition of Veg chalna or chicken curry gives more taste and i love it so much. Here I used Veg chalna and it tasted so good with onion raita. Very simple & easy to make recipe. Give it a try definitely you will love it. I will share kothu parotta with chicken chalna in my future post.

Lemon rice / Easy Lunch Box recipe

This is one of the simple & easy lunch box recipe, the color n flavor of the rice definitely attracts everyone. Perfect rice to pack for your picnic, this rice stays good for 2 days if prepared and handled properly. So my Maternal mom prefer this lemon rice for our vacation trip. The taste of this lemon rice will be same to that what we get in Temples as Prasadham. To make it healthy & colorful you can also add some shredded carrots to the lemon thokku to make, Carrot Lemon Rice.(for recipe click on the link)I use limes(green color one) not the lemon (yellow color),which is available in both Indian store and in local grocery stores.

Cauliflower Caspsicum Stir Fry


Cauliflower is one of my favorite vegetable and i love it any form, this stir fry, Gobi Mutter Gravy, Aloo Gobi Masala Rice or in fusion cooking like Tandoori Gobi Calzone. Cauliflower pairs well with potatoes, peas and also with capsicum. My family love these combo veggies. The below is the simple and easy to make stir fry with cauliflower & capsicum combo.

Chicken Curry Recipe | Chicken Drumsticks Curry | Mom's Chicken Curry Recipe


 This chicken curry is my Mom's recipe and its my most favorite chicken recipe. My mom usually make this curry using chicken legs(not drumsticks) but here i used Chicken Drumsticks and the curry n chicken tasted so good n spicy. This is a spicy curry and we love it that way. When i fist time tried this curry i couldn't get the perfect texture n taste n it turned out as gravy/kuzhambu. And also i used pressure cooker but this time cooked in pan and sauteed everything nicely and the curry came out really good. No special masala required only chili powder is enough and the magic ingredient is ground cinnamon n clove powder. Do give this a try you will love it!

Onion-Tomato-Coriander Chutney

  This is not exactly coriander chutney or onion chutney or tomato chutney ...all in one chutney,very aromatic and tastee chutney...always i m lazy to temper the chutneys..so i add mustard seeds while frying other ingredients and grind n use as such ...today also i did the same thing...no separate tempering...with or without temper won't make any change in the taste...its additional only.Ok..lets c the recipe...

Ingredients
  1. Onion    1no. medium size(roughly chopped)
  2. Tomato    half  is enough (roughly chopped)
  3. coriander leaves    1/2 medium size bunch(use leaves only)
  4. Mint leaves      5-7 twigs
  5. Ginger     1/2'piece
  6. Garlic     1small clove
  7. Green chillies     5no.s
  8. Curry leaves    1twig
  9. Coconut      1 tbsp or few sliced pieces
  10. Mustard seeds      1/2 tsp
  11. Chana dal     2tsp
  12. Urad dal     2 tsp
  13. Moong dal       2tsp
  14. Oil    3tsp
  15. Salt     as needed.
Method
  • Heat oil in a pan and add mustard seeds when pop add channa dal,urad dal,moong dal fry till golden brown.
  • Add ginger,green chillies ,garlic, curry leaves saute lightly and add onions and mint leaves.
  • Fry till onion get transparent.
  • Add chopped tomatoes fry for a minute and add coriander leaves.
  • Saute well and fry for 2-3 minutes.
  • After adding coriander leaves don't fry for long time ,bcoz it will give bitterness to the chutney.
  • Cool the ingredients and put it in blender.
  • First put coconut in the blender and run for few seconds ,after that add other ingredients along with salt.
  • With little water grind well but not too smooth fine paste,it should be little coarsely.
  • This chutney goes well with Idly,Dosa,Plain rice,Curd rice,Chappathi,Idiyappam also.
