Plain Paratha Recipe
Today's recipe is a Basic/How To's recipe, How To Make Plain Paratha. Plain Paratha is nothing but a Indian flat bread made with loads of ghee or butter for layering. I am planning to post this Basic Recipe for way long time and finally made it today. I make this Plain Paratha for kids breakfast and lunch box along with some sabzi. Paratha/Parante are so flavorful and tasty by itself and a simple raita or pickle or whipped butter is more than enough.

How To Make Ghee At Home
Homemade Ghee recipe with step by step recipe. Making ghee at home is a very simple process and all you need is a good quality butter or homemade butter. Ghee or clarified butter Ghee is prepared by simmering butter, which is churned from cream or cultured cream and removing the liquid residue. The texture, color and taste of ghee depend on the quality of the butter, I prefer to use cultured butter than the regular sweet cream unsalted butter.

Traditional way of making ghee at home is from cultured butter and the process includes 3 stages- Milk is boiled well and after cooling to warm temperature then yogurt/curd(culture) is added to make curd(8 hours). Then the curd is churned well to obtain cultured butter then that butter is melted/simmered to make ghee. Spices or herbs are added to make ghee more flavorful and healthy.
I remember my mom and aunt churn a big pot of fresh homemade curd to obtain butter then that butter is used to make ghee. But in recent days, we do not have time and patience to make ghee the traditional way and rely on quick fix method by buying store bought unsalted butter for instant process. The store bought unsalted butter is not cultured and they are made using centrifugal force. It is then pasteurized by heating it rapidly to a high temperature to eliminate potential disease-causing bacteria and help the butter stay fresh longer.

Wheat Flour Laddu / Atta Laddu - Easy & Quick Diwali Sweet Recipe

Today's recipe is another simple and easy to make Sweet that you can try this for Diwali, Wheat Flour Laddus / Atta Ladoo. A healthy snack for growing kids. I bookmarked this Atta Ladoo in Raks Kitchen and tried it this week and the laddus tasted so so good and it just melt in mouth like Soan papdi. I felt so, the sweetness and flour texture was similar to the taste of soan papdi. I slightly tweaked the recipe by mixing the ground pistachios with Atta. And also here i used only 1/4 cup ghee and 1/4 cup oil. To me the flavor of ghee and taste of Atta ladoo was fine but you can use which ever is fine to you. One more Easy Diwali Sweet and its a must try, thank You Raji for this wonderful recipe and sure a keeper. Now off to the recipe..

Mysore Pak Recipe / Soft Ghee Mysore Pak - Easy Diwali Sweet

Hope everyone is busy preparing Sweets & Savories for Diwali. And all my fellow bloggers are rushing to post their Diwali recipes and after a short break i am here with one of the Easy Diwali Sweet - Mysore Pak / Soft Ghee Mysore Pak. Never thought that cooking Mysore Pak is so much easy and i can make it successfully in my first attempt itself. Yep.,this is the first time am trying this popular Diwali snack, since i do not like Mysore Pak and very rarely take one piece if its from Sree Krishna Sweets :)

Ghee Rice

Ingredients

  1. Basmati rice    1 cup(soaked in water for 30-40minutes)
  2. Ghee     2-3 tbsp
  3. Onion    1medium(sliced)
  4. Green chilli    2-3 no.(slit open)
  5. Cashew nut      10no.s
  6. Cinnamon   1" stick
  7. Clove    3 no.s
  8. Cardamom   2-3 no.s
  9. Ginger Garlic paste    2 tsp
  10. Mint & coriander leaves    1/4 cup or less.

Method

  • Heat ghee in a vessel or pressure cooker,add cinnamon,clove and cardamom let them pop.
  • Then add cashew nuts and fry lightly.
  • Add sliced onions fry till onion turns golden brown,and add ginger-garlic paste and fry till raw smell leaves.
  • Then add green chillies and min-coriander leaves stir well and fry for a minute.
  • Add 2and 1/2 cup water and enough salt stir well and allow to boil.
  • Mean while heat a tsp of ghee in a pan and add the soaked and drained rice and fry well.
  • When the water starts boiling add the fried rice and stir well and cook till rice is done.
  • Now the ghee rice is ready to serve hot with any veg curry or aloo kurma.


This is a kids special recipe...mild or less spice..more flavor .
Pack for their lunch box with potato fry or their desired veg ..they luv to eat this ghee rice.
U can make this rice for party and any other occasion  also and serve with spicy curry or kurma.
