Avocado Hummus Sandwich
Avocado Hummus Sandwich is a healthy protein rich vegetarian Breakfast Sandwich Recipe. Avocado & Hummus are great and healthy options for sandwich spread. Here I used just sliced Avocado but you can also use mashed avocado or Guacamole. Avocado & Hummus are not only healthy but tasty when combined to eat it with bread along with roasted veggies. To make the sandwich even more filling and tasty I used Roasted Bell Peppers and Onions. You can also use any roasted vegetables for this sandwich.This sandwich recipe is suitable for Diabetic people too. You can use any bread for this sandwich, I used Sourdough Bread, I sliced the bread myself and it it didn't come out as neat slices. You can also use regular sliced wheat or any whole grain bread.

Avocado Hummus Sandwich

Prep Time : 5 Minutes | Cook Time : 5 Minutes
Recipe Course : Breakfast | Makes 2 Sandwich

  1. Toasted Bread slices    4
  2. Avocado   1 medium size(mashed or sliced)
  3. Hummus   1/4 cup(used store bought)
  4. Lettuce   as needed
  5. Lime juice    few drops
  6. Salt  a pinch
  7. Chilli Flakes  as needed
For Grilled/Roasted veggies
  1. Oil    1 Tbsp
  2. Onion, sliced    1/2 cup
  3. Red Bell Pepper, sliced     1/4 cup
  4. Orange Bell Pepper, sliced    1/4 cup
  5. Salt to taste
  6. Black Pepper Powder   1/8-1/4 tsp
  • First roast veggies for the sandwich. Heat oil in a cast iron pan when its hot add sliced onion roast for 1-2 minutes then add sliced bell peppers, sprinkle salt and black pepper powder and stir well and roast for a minute. Do not cook the veggies for long time, slightly roasted peppers has nice flavor and taste, so roast them lightly. Using cast iron pan is recommended or you can grill them or roast it in oven also.
  • After roasting the veggies transfer to a plate and keep aside.
  • Toast the bread in toaster oven or stove top.
  • Slice or Mash avocado, chop lettuce and keep ready.
  • For Sandwich, on one side of the toasted bread keep sliced or mashed avocado, add few drops of lime juice, chilli flakes.
  • One the other bread slice, spread 2 Tbsp of hummus and add roasted veggies, some lettuce. Top with other slice of the bread, cut the sandwich in half and enjoy.

Keep all the ingredients ready for the sandwich, place sliced avocado on one slice of the bread, sprinkle some lime juice, chilli flakes if desired.

On the other bread, spread hummus top it with roasted veggies & lettuce. Cover it with the avocado bread and enjoy the tasty Avocado Hummus Sandwich.
