Eggless Banana Pancakes

Eggless Banana Pancakes Recipe is an easy and quick option for Breakfast and also another way to use off those over ripe bananas.  I make pancakes very rarely but Pancakes are my kids favorite recipe. Few weeks back kept some over ripe bananas in the freezer to make some Banana Muffins but When I prepared Homemade Nutella kids requested to make some Pancakes to enjoy the homemade Nutella spread.

So used those frozen Bananas to make these Eggless Banana Pancakes.  Banana Pancakes are so easy to make and also require basic ingredients, adding baking powder & baking soda is optional check notes for other alternatives. I have tried Eggless version without Baking Powder too and will share that recipe soon. Now off to the Easy Eggless Banana Pancakes Recipe..
Eggless Banana Pancake Recipe

Ingredients
  1. Banana 1 Large
  2. Milk  1 cup
  3. Oil   1 Tbsp
  4. Sugar   2 Tbsp
  5. Vanilla Extract   1 tsp
  6. All Purpose Flour      1 Cup
  7. Baking Powder  1 & 1/4 tsp
  8. Baking Soda  1/2 tsp
  9. Salt  1/4 tsp or a generous pinch
  10. Butter or oil   as needed to make pancakes
Notes:
I used Frozen Banana so pureed them using a blender along with sugar, if using fresh ripe banana just mash it using fork or spatula.
Adding salt is optional but it balance & enhance the sweetness.
You can skip Baking powder and add 1/2 banana  & 1 Tbsp oil extra for softness.
Depending on the banana the color of the pancake becomes dark to light. I used slightly over ripe bananas.
Oil can be replaced with Melted butter or ghee.
Instead of All Purpose Flour, you can also use Whole Wheat Flour or half APF & half Whole Wheat flour.

Method
  • In a small blender add banana & sugar and blend it for few seconds.
  • In a mixing bowl add pureed banana with sugar, then add milk, vanilla extract, oil mix well together.
  • In another bowl, add flour, baking powder, baking soda, salt and combine everything well using a whisk.
  • Now add the dry ingredients to the wet ingredients little by little and mix well to make a smooth and lump free batter.
  • Do not over mix the batter, just mix until everything is combined well and the batter is without lumps.
  • Now the Eggless Banana Pancake Batter is ready to make pancakes. 
  • Heat a griddle, when its hot smear it with butter then pour a medium ladle full of batter or 1/4 cup batter, no need to spread the batter it will spread by itself.
  • Now if needed drizzle some oil or melted butter and let it cook in a medium heat.
  • After a minute or less, flip the pancake and cook for a minute.
  • Once done remove the banana pancake from the griddle/tawa.
  • Repeat the same process for all the remaining batter and once done serve the Eggless Banana Pancakes with Maple Syrup or Chocolate sauce or any desired toppings.

In another bowl, add flour, baking powder, baking soda, salt and combine everything well using a whisk.


Then add the dry ingredients to the liquid ingredients and
