This Palak Khichdi is little different from my previous one, here I have used Moong dal & Masoor Dal Combo. Make sure to add water as mentioned in the recipe for perfect consistency. • Turn on saute mode in 6 qt Instant Pot for 20 minutes. When its hot add oil and add 1/2 tsp Jeera, Clove & Bay leaf. Fry for few seconds then add green chilli, curry leaves and finely chopped onions.
  • Stir fry the onions until soft and golden brown, and then add chopped tomato, sprinkle little salt and cook covered for 2 minutes or until the tomatoes turns soft and mushy.
  • Now add turmeric powder, chilli powder, jeera powder and stir fry everything nicely. After that add soaked rice and dal, mix everything well and add 6 cups of water, enough salt, lemon juice, 1 tbsp ghee. Stir everything well and close the Instant pot lid.
  • Then turn on Pressure Cook Mode and choose timer for 14 minutes, and cancel the Warm mode before starting cooking process. After pressure cook process done, leave it for 10 minutes and then manually release the pressure and once done open the lid carefully.
  • Now stir Dal Khichdi nicely and add chopped spinach mix everything well and turn on saute mode for 5 minutes and let it cook for a while.
  • Lastly heat tadka pan, add ghee when its hot add jeera and let it splutter then switch off the stove and now add dry red chilli and kashmiri chilli powder fry well and add it to the Khichdi and mix well.
  • That's it, Tasty and Healthy Palak Dal Khichdi ready. Serve hot with extra ghee on top with spicy pickle and papad.

Notes:

I used Basmati Rice & 160 ml measurement cup. You can use any tumbler or cup size and measure everything using the same cup or tumbler.                                                          The same recipe can be done in Regular Pressure Cooker and cook for 1-2 whistle and follow rest of the method.
Adding palak/spinach leaves after pressure cooking prevents over cooking of spinach and losing its nice green color and taste. Khichdi tends to thicken upon cooling so add enough water, this khichdi will be soft and tasty even after cooling. Just microwave for 30-40 seconds for reheating and serve.
This can also served as plain Dal Khichdi too without Palak/Spinach.
