Ragda/Yellow Peas Masala Chaat is one of our family's favorite chaat. Ragda is a versatile dish, that you can serve it in number of way, you can serve it as such with some finely chopped onions, tomato and crispy fine sev on top. And also you use it for Masala Puri Chaat, Samosa Chaat, Ragda Patties, Aloo Tikki Chaat and Masala Papdi Chaat(Coming up Next). There are many recipes for Ragda/Yellow Peas Masala I have already shared 2 different recipes, a simple version of Ragda and Green Peas Masala Chaat.
This version of Ragda is slightly spicy, tangy and addictive recipe. I added a ladle of Tamarind Sweet Chutney to the boiling ragda and it added a special tangy mildly sweet to Ragda/Yellow Peas Masala. You can also replace the tamarind chutney with Amchur powder and some hint of sugar or jaggery. Now off to the recipe...

Ragda Chaat
Ragda(Yellow Peas Masala) Recipe

Serves 4

Ingredients
  1. Dried Yellow Peas   3/4 cup
  2. Onion   1 big (finely chopped or coarsely ground)
  3. Garlic   1 or 2 (grated or crushed)
  4. Red Chilli Powder   1 and 1/2 tsp
  5. Turmeric Powder   1/4 tsp
  6. Garam Masala Powder   3/4 tsp
  7. Tamarind Sweet Chutney    4 Tbsp
  8. Salt   to taste
  9. Cilantro   2-3 tbsp (finely Chopped)
  10. Oil  2-3 tsp
  11. Cumin seeds    1/4 tsp
  12. Hing   1/8 tsp
Method
Wash dried yellow peas and soak it with enough water for minimum 6-8 hours or overnight.
Then pressure cook for 3-4 whistles or cook until soft and slightly mushy.
Finely chop onions or pulse it in blender for few seconds like I did.
Heat oil in a pan, when it is hot add cumin seeds and allow to splutter and then add crushed garlic, hing and fry well.
And then add coarsely ground onion and saute till it is soft and turn golden brown.
After that add turmeric powder, chilli powder, garam masala stir fry well, if need add a tsp of water and fry the masala.
Then add the cooked peas, add enough water, salt and bring it to boil.
After one boil, add the tamarind chutney, mix well and allow the peas masala to simmer for 1-2 minutes and finally add some finely chopped cilantro and switch off the stove.
That's it...Ragda/Yellow Peas Masala for Chaat ready. Serve warm with some finely chopped onion, tomato and some crispy sev on top.
Notes:
If you want you can also add 1 finely chopped tomato to the above recipe.
Also, add some chaat masala for extra flavor and taste.
Instead of yellow peas you can also use dried white peas.
