Simple Avocado Salad / Avocado Salad With Cilantro Lime Dressing

Today's recipe is simple and a healthy salad using Avocado. The avocado is an incredibly healthy food and loaded with important nutrients. It is often called “alligator pear,” which is very descriptive because it tends to be shaped like a pear and have green, bumpy skin… like an alligator. The yellow-green flesh inside the fruit is eaten, but the skin and seed are discarded. When compared to many other fruits, Avocados are high in healthy fat, fiber, anti oxidants and other nutrients and vitamins.
The regular intake of Avocado helps to lower the cholesterol and triglycerides. Also the fat in Avocados help you to absorb plant nutrients.

The avocado has become an incredibly popular food among health conscious individuals. It is often referred to as a super food/gold food. I am sharing one of the easiest and delicious salad recipe. I love avocado with lime, little salt and pepper. The tanginess from lime pairs well with the creamy avocados.

Serves 3-4
  1. Red Onion  1/2 medium(thinly sliced)
  2. Freshly Squeezed lime juice  1/4 cup + 2 tbsp
  3. Sugar 2 tsp
  4. Coarse salt   to taste
  5. Jalapeno chile  1 no.(seeds and ribs removed for less heat, if desired), chopped
  6. Cilantro leaves   1 cup(lightly packed)
  7. Olive Oil  1/4-1/2 cup
  8. Avocado  4 no.(thinly sliced)
  • In a small bowl, combine onion with 2 tablespoons lime juice, 1/2 teaspoon sugar, and 1/4 teaspoon coarse salt; toss to combine. 
  • Let lime-marinated onion sit at room temperature until it softens and brightens in color, about 1 hour (up to 1 day, covered and refrigerated).
  • For dressing, In a blender, combine remaining 1/4 cup lime juice, jalapeno, cilantro, and remaining 1 1/2 teaspoons sugar; season generously with salt. 
  • Blend until smooth. With the motor running, add oil in a steady stream through the feeder opening until incorporated.
  • Just before serving, slice avocados; arrange on a serving plate. Top with onion; drizzle with dressing.
